The Patrick Piuze estate, based in Chablis, Burgundy, is the creation of Patrick Piuze, a Quebec native turned winemaker in 2008 after training with luminaries like Leflaive and Verget. Owning no vineyards, he excels in the Chablis appellation by sourcing grapes from Kimmeridgian terroirs. The Terroir de Courgis 2023 cuvée, a still white wine, is crafted entirely from Chardonnay from the Courgis village, on fossil-rich limestone soils, vinified in stainless steel tanks without oak ageing for a pure expression.

On tasting, this wine displays a crystalline pale gold hue and a lively nose of lime, green apple, and oyster shell, with a saline hint. On the palate, it offers a taut texture, crisp acidity, and a mineral finish, marked by flint and citrus notes.
