The Etienne Sauzet estate now covers nine hectares of Cote de Beaune dedicated to white Burgundy (Chardonnay grape variety) mainly in Puligny Montrachet. Formerly more important, it was cut off from part of its surface when one of the three heirs took back the land which was due to it. It was then that the Etienne Sauzet estate decided to open up to trading and buying grapes in particular.
In terms of viticulture, the Etienne Sauzet estate first went into organic farming in 2006 and then into biodynamics in 2010. The aging lasts 12 months in barrels then 6 months in tanks. The Premier Cru are aged in 20 to 30% new wood and 40% for the Grand Crus. The Etienne Sauzet estate has prestigious parcel of Bienvenues Batard Montrachet, Batard Montrachet, Chevalier Montrachet et Montrachet Grands Crus. Nonetheless even their Puligny Montrachet 1er Crus are extremely appealing with parcel such as Perrières, Combettes and Folatières.
