Champagne Blanc de Blancs is made exclusively from white grapes, principally Chardonnay, the king grape of the Côte des Blancs. It is distinguished by great finesse, aromas of citrus and white flowers, and a sharp minerality. Blanc de Noirs, by contrast, is vinified from dark-skinned grapes with white flesh — Pinot Noir and Pinot Meunier — yielding fuller-bodied wines with notes of red fruit and a generous texture. These two styles embody two very different faces of Champagne, and the choice between them depends above all on your personal taste preferences and the dishes you wish to accompany.

A non-vintage Champagne (or NV) is a blend of wines from several harvest years. This practice, unique to Champagne, allows producers to maintain a consistent and recognisable style from one year to the next, regardless of climatic variations. A vintage Champagne, on the other hand, is produced only in years deemed sufficiently remarkable to express the character of a single, unique vintage. It is generally more complex, rarer, and requires longer ageing in the cellar before release. These two categories reflect different tasting philosophies — one valuing consistency, the other the expression of a terroir at a precise moment in time.

The large Champagne houses, such as those found on the grand avenues of Reims and Épernay, purchase a large portion of their grapes from partner growers in order to produce significant volumes while maintaining a consistent house style that is recognisable internationally. Independent growers, on the other hand, cultivate their own plots and vinify exclusively their own grapes. Their cuvées, often produced in small quantities, more closely reflect the expression of a specific terroir, a village, or even a single plot. These so-called "récoltant" Champagnes are increasingly appealing to enthusiasts in search of authenticity, singularity, and a direct connection between the producer and their wine.

The Champagne appellation officially allows seven grape varieties, but three dominate production: Chardonnay, Pinot Noir, and Pinot Meunier. Chardonnay brings elegance, tension, and aging potential. Pinot Noir offers structure, power, and red fruit notes. Pinot Meunier, long underestimated, is now being reappraised for its fruity aromas and roundness. Some producers also work with rarer grape varieties such as Arbane, Petit Meslier, and Pinot Blanc, which allow them to create limited-production cuvées with singular characters.

The méthode champenoise, or traditional method, is the process that gives Champagne its natural effervescence and fine bubbles. After an initial classic alcoholic fermentation, the still wine is bottled with a liqueur de tirage (a mixture of sugar and yeasts). A second fermentation then takes place directly in the bottle, generating CO₂ that dissolves into the wine. The bottles are subsequently stored on laths for a minimum of fifteen months (thirty-six months for vintage wines), then subjected to progressive riddling to gather the yeast deposits in the neck. Finally comes disgorgement, which removes this deposit, before the addition of the dosage liqueur (liqueur d'expédition), which determines the final dosage level, and therefore the style — Brut, Extra-Brut, or Demi-Sec — of the cuvée.

Serving temperature is a factor that is often overlooked but is crucial to fully appreciating a Champagne. A Champagne served too cold, below 6°C, will have its aromas muted and its effervescence heightened. Too warm, and it will lose its freshness and tension. The ideal temperature is between 8°C and 10°C for non-vintage Champagnes and Blancs de Blancs, in order to preserve their vivacity. For vintage Champagnes, prestige cuvées or more structured Blancs de Noirs, one can go up to 10°C-12°C to allow the aromas to express themselves fully. The best way to reach this temperature is to place the bottle in the refrigerator two hours before serving, or in an ice bucket mixed with cold water for twenty minutes.

The History of the Champagne Vineyard 

The history of Champagne dates back to Antiquity, when the Romans introduced vine cultivation to the region. During the Middle Ages, the vineyards developed, but it was not until the 17th century that the region discovered the method for producing sparkling wines, which would go on to become iconic. 

In the 18th century, Champagne consolidated its reputation and iconic Champagne houses were born. Champagne conquered the international market, becoming a symbol of celebration and luxury. In the 20th century, strict regulations were introduced to preserve the authenticity of Champagne, defining the authorized regions, grape varieties, and production methods. 

Today, Champagne is globally recognized as one of the most prestigious wine regions. Champagne wines are associated with elegance and celebration, and producers continue to maintain high standards, thus preserving the region's exceptional winemaking heritage. 

Traditional Method and Champagne Styles

Made from the main grape varieties Chardonnay, Pinot Noir, and Pinot Meunier, Champagne can sometimes be Blanc de Blancs (a white wine made from white grapes only, for example 100% Chardonnay giving an elegant and mineral Champagne), or Blanc de Noirs (a white wine made from black grapes only, for example 100% Pinot Noir, giving a fruitier, fuller-bodied, and more vinous Champagne). 

Champagne is produced using a technique called the Traditional Method (or Méthode Champenoise), which involves producing a still base wine followed by a second fermentation in the bottle through the addition of a liqueur de tirage, which creates the natural bubbles characteristic of Champagne. The bottles then undergo an aging process on lees, which contributes to the complexity and richness of the aromas. Finally, after disgorgement, the addition of a dosage liqueur will, among other things, allow the sugar level of the Champagne to be adjusted, ranging from brut (dry) to doux (sweet) Champagnes. Below is the classification of Champagne mentions from least sweet to sweetest in grams of sugar per litre. 

  • Non-Dosé or Brut Nature: No dosage added. 
  • Extra Brut: Even drier than Brut, less than 3g/L.
  • Brut: with a minimal amount of residual sugar, between 4g/L and 12g/L
  • Extra Dry: Very slightly sweet. Between 12 and 17g/L
  • Sec: Slightly sweet. Between 17 and 32g/L
  • Demi-Sec: Sweet. Between 32 and 50g/L
  • Doux: Very sweet, and rarely produced nowadays. More than 50g/L

If a Champagne is a vintage Champagne, the production method is even more stringent.

Champagne: Its Sub-Regions and Appellations

The Champagne region is divided into several appellations from different sub-regions, the most famous of which are Champagne, Champagne Premier Cru, and Champagne Grand Cru. The sub-regions of Champagne each have their own distinct characteristics in terms of terroir and Champagne style. These include:

  • Montagne de Reims: This sub-region is renowned for its Pinot Noir vineyards. It produces powerful and structured Champagnes, often used in vintage cuvées and prestige Champagnes.
  • Vallée de la Marne: This sub-region produces Champagnes based primarily on Pinot Meunier. The wines from this area are fruitier and more approachable, bringing freshness and roundness to blends.
  • Côte des Blancs: Renowned for its chalky soils and sunny exposure, this sub-region specializes in Chardonnay. It produces elegant and refined Champagnes, often used in Blanc de Blancs cuvées.
  • Côte des Bar (Aube): Located in the south of Champagne, this sub-region is influenced by warmer climates. It produces mainly Pinot Noir, and its Champagnes can be rich and full-bodied.
  • Côte de Sézanne: This sub-region is located south of the Côte des Blancs and also produces mainly Chardonnay
  • Aube en Champagne: This sub-region is known for producing the Rosé des Riceys, a rosé wine made primarily from Pinot Noir.

  • Moët & Chandon : Founded in 1743, Moët & Chandon is one of the most iconic Champagne houses. It is based in Épernay and is renowned for its prestige cuvée Dom Pérignon and its elegant style.
  • Veuve Clicquot : Founded in 1772, the Veuve Clicquot house is famous for having been led by the widow Barbe-Nicole Clicquot, an influential figure in the history of Champagne. Their cuvées, notably the "Yellow Label", are widely recognized.
  • Louis Roederer : Founded in 1776, the Louis Roederer house is particularly known for producing the Champagne Cristal Roederer, created especially for the Tsar of Russia.
