The Fallet Prevostat estate cultivates 5 ha of vines classified as Grand Cru in Avize, at the heart of the Côte des Blancs. The Chardonnay vines average around 50 years of age, with the oldest reaching up to 80 years, planted on well south-east-facing slopes on calcareous clay soil. Harvesting is done by hand and generally begins later than at other estates; it can extend over nearly 2 weeks, resulting in high maturity for the last grapes brought in. The estate's history began in 1960, with the first wines being commercialised in bottle at the domaine. Mme Fallet handled sales while M. Fallet was responsible for winemaking. After a few years and with the estate established, it was decided to age the champagnes on laths for a minimum of 7 to 8 years (far longer than the standard minimum ageing of 15 months required for non-vintage Brut champagnes, or 36 months for vintage champagnes, as required by the regulations in Champagne).

The aging of the wines is carried out in large oak casks before bottling and the cellar aging period. At Fallet-Prévostat, the wine blend is made up of 2 vintages, the oldest (the reserve) for 1/3, and the most recent for 2/3. Until the early 2010s, disgorgement was carried out by hand by Monsieur Fallet himself (around 30,000 bottles/year, admirable given the thankless nature of the task!). Once disgorged and the expedition liqueur added, the wine is then ready to be shipped. The wines of the Fallet Prévostat estate are marketed under the Fallet Crouzet label, and there are only 3 different versions of the same cuvée (non-dosé, extra brut dosed at 4 grams, or Brut dosed at 6 grams). The combination of old vines on a fine terroir, the ripeness of the grapes, and the extended aging on lees for many years make this a Champagne blanc of great complexity, where some non-dosé wines are sometimes characterized by a sharp edge and a shorter finish. In the Extra Brut version, the minerality brought by the chalky soil provides the freshness needed to balance the wine. The color is a fairly deep golden hue, with elegant effervescence; the nose is complex, marked by toasted notes of brioche bread alongside very ripe yellow fruit (pear, tarte tatin apple), and floral aromas. On the palate, the mousse is creamy, fine and dense, with a smooth and flavorful attack. The body is surprisingly broad and full while remaining fresh and lively. The finish on hazelnut is of superb length. Fallet Prévostat (Fallet Gourron label) is a Champagne to be recommended unreservedly for enthusiasts seeking a certain vinosity combined with the finesse of the bubbles.
