The wines are aged in large oak barrels before bottling and the cellar ageing period. At Fallet-Prévostat, the wine blend consists of 2 vintages, the oldest (the reserve) accounting for 1/3 and the most recent for 2/3. Until the early 2010s, the disgorgement was carried out by hand by Monsieur Fallet himself (approximately 30,000 bt/year — admirable given the thankless nature of the task!). Once disgorged and the dosage liqueur added, the wine is then ready to be shipped. The wines of the Fallet Prévostat estate are marketed under the Fallet Crouzet label, and there are only 3 different versions of the same cuvée (non-dosé, extra brut dosed at 4 grams, or Brut dosed at 6 grams). The combination of old vines on a fine terroir, the ripeness of the grapes, and the extended ageing on lees over many years make for a blanc Champagne of great complexity, where some non-dosés are sometimes characterised by a sharp bite and a shorter finish. In the Extra Brut version, the minerality provided by the chalky soil gives the freshness needed to balance the wine. The colour is a fairly deep golden hue, and the effervescence elegant; the nose is complex, marked by toasty aromas of brioche bread over notes of very ripe yellow fruits (pear, tarte tatin apple), and florals. On the palate, the mousse is creamy, fine and dense, with an unctuous and flavourful attack. The body is surprisingly broad and full while remaining fresh and lively. The finish on hazelnut is of superb length. Fallet Prévostat (Fallet Gourron label) is a Champagne to be recommended without restraint for enthusiasts seeking a certain vinosity combined with the fineness of the bubbles.
