Fallet Prevostat

The Fallet Prevostat estate operates 5 ha of vines classified as Grand Cru in Avize, in the heart of the Côte des Blancs. The Chardonnay vines are around 50 years old on average and up to 80 years old for the oldest, on hillsides well exposed to the south-east, on clay and limestone soil. The harvest is manual and generally starts after the other Champagne Houses; they can be spread over almost 2 weeks, which results in a high maturity for the last harvested grapes. The history of the estate began in 1960, with the marketing of the first bottled wines at the estate. Ms. Fallet was responsible for marketing and Mr. Fallet for winemaking. After a few years from the launch of the Domaine, it was decided to let the champagnes age for a minimum of 7 to 8 years (much more than the standard aging of 15 months minimum compulsory for standard champagnes Brut or 36 months for vintage champagnes, as required by Champagne regulations).

The wines are aged in barrels before bottling and let rest in the cellar. At Fallet-Prévostat, the blend of wines is made up of 2 vintages, the oldest (the reserve) for 1/3, and the most recent for 2/3. Until the early 2010s, disgorgement was done by hand by Mr. Fallet himself (around 30,000 bt / year, admirable considering the magnitude of the task!). Once disgorged  and the dosage liqueur added, the wine is ready. The wines of the Fallet Prévostat estate are marketed under the Fallet Crouzet label and there are only 3 different versions of the same vintage (not dosed, extra brut dosed at 4 grams or Brut dosed at 6 grams).

The combination of old vines on a beautiful terroir, the maturity of the grapes as well as the prolonged aging on the lees for many years make it a Champagne of great complexity, where some non-dosed are sometimes characterized by a great sharpness and a shorter finish.

In the Extra Brut version, the minerality provided by the limestone soil gives the freshness necessary for the balance of the wine. The color is a fairly strong gold with a very elegant effervescence; the nose is complex, and marked by toasted scents of brioche bread on notes of very ripe yellow fruits (pear, apple tatin) and floral. On the palate, the foam is creamy, fine and dense, with a smooth and tasty attack. The body is surprisingly full and full while remaining fresh and lively. The finish on the hazelnut is a superb length. Fallet Prévostat (Fallet Gourron label) is a Champagne to be recommended without moderation for amateurs who are looking for a certain vinosity associated with the finesse of the bubbles.
