The TOP appellation of Bordeaux

The Left Bank of Bordeaux produces balanced and tannic red wines, composed of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot across the finest appellations of the Médoc (cf. Margaux, Saint Julien, Saint Estèphe and Pauillac) and the Graves (cf. Pessac Léognan). The finest red wines from these great Bordeaux appellations benefit from the grand classification of Bordeaux wines of 1855 (ranging from the 1er cru classé to the 5th cru classé) and deserve long ageing to express their full complexity. The price of the finest red Bordeaux wines (1er crus classés) is often high, but these great red Bordeaux wines are rare and unique, and their quality seems to justify it. Close to the south of the city of Bordeaux lies the Graves appellation, whose Pessac Léognan wines are the finest (Château Haut Brion holds the exceptional status of 1er cru Classé in 1855). The grape varieties are identical but Cabernet Franc and Petit Verdot are more limited here. The finest red Pessac Léognan wines are characterised by smoky, cold tobacco and mineral notes. Thanks to their well-drained soils, this red Bordeaux appellation excels in lesser vintages such as 1967, 1972, 1974, 1987, 1993, 1994, 1997, 2002 or 2007...

The Right Bank of Bordeaux offers softer red wines with vibrant fruit, composed primarily of Merlot, Cabernet Franc and a lesser proportion of Cabernet Sauvignon (cf. Saint Emilion or Pomerol), yet they can be enjoyed more readily, even though they also possess great ageing potential. The finest St Emilion wines benefit from a 1er Grands Crus Classés classification (4 classified A and 14 classified B in the last 2012 classification). The Crus Classés A operate on a more powerful register. Vintage quality is an important factor in Bordeaux, but improvements in vineyard care and modern winemaking methods manage to smooth out the differences (no more truly poor vintages nowadays).

The great red Bordeaux vintages remain of course the most sought-after (1961, 1982, 1990, 2000, 2005, 2009 and 2010). The finest red Bordeaux wines are capable of ageing for several decades (storage temperature of 12/13°) and patience is recommended to fully enjoy their ageing potential. The simplest food and wine pairings with the finest red Bordeaux are often recommended (roast lamb, braised rack of veal, grilled red meat). With age, small feathered game and truffle make excellent companions. Red Bordeaux wines can be paired with certain hard cheeses (Gouda and Tomme). The recommended serving temperature for Bordeaux bottles is 16 to 18°.
