From the clay-limestone hillsides of Saint-Émilion, Château Pavie 1979 (Premier Grand Cru Classé A) blends Merlot, Cabernet Franc, and Cabernet Sauvignon. Notes of blackberry, prune, and coffee, aged in oak. Silky, fresh, and mineral palate. Pairing: roasted wild boar. To enjoy now or cellar.
Nestled on the limestone plateau of Saint-Émilion, this estate embodies Bordeaux excellence, combining viticultural heritage with family expertise.
- Terroir: A 37-hectare vineyard on clay-limestone and clay-sandy soils, shaping wines of rare minerality and depth.
- Vinification: A rigorous selection of grape varieties and carefully controlled aging, producing cuvées that are both powerful and silkily elegant.
Tasting notes for Château Pavie 1979
To the eye – A garnet-red robe with tawny highlights, dense and slightly viscous, revealing a fully accomplished maturity.
On the nose – First notes of black cherry and fresh blueberry, followed by aromas of candied prune, roasted coffee, and a hint of vanilla, all lifted by a subtle chalky salinity.
On the palate – A velvety, almost silky texture, where a lively acidity, stony minerality, and a long finish come together, carried by gentle spices and a hint of cocoa.
Serve at 16–18°C in a Bordeaux glass to reveal its full complexity.
