All wines from the Saint-Estèphe appellation in Bordeaux

The Saint-Estèphe appellation is a controlled designation of origin (AOC) located 45 km from Bordeaux north of the Pauillac, St Julien and Margaux appellations (left bank). It is probably the least prestigious of these four appellations, as it comprises only 5 Grands Crus Classés from 1855 (classification of Médoc wines), and no 1st Grand Cru Classé. The Saint-Estèphe AOC extends over approximately 1,230 ha of terroir that is distinguished by a fairly wide geological variety of soils and subsoils. Like many Bordeaux appellations, the wines produced there are blended wines predominantly made from Cabernet Sauvignon (typical of the left bank of the Gironde). This grape is complemented by Merlot, as well as Cabernet Franc and Petit Verdot. In great vintages (and particularly warm ones), the Saint-Estèphe appellation produces wines unanimously recognized and praised by international critics as being among the finest wines of the Médoc.

Where is the Saint-Estèphe appellation located?

The Saint-Estèphe appellation is located in the Médoc, on the left bank of the Gironde estuary, about sixty kilometres north of Bordeaux. It covers the single commune of Saint-Estèphe and is the most northerly of the communal appellations of the Médoc vineyard. The vineyard is bordered to the east by the estuary, to the south by the jalle du Breuil which separates it from Pauillac, to the west by Cissac and Vertheuil, and to the north by Saint-Seurin-de-Cadourne. It extends over approximately 1,250 hectares, or nearly 7.5% of the Médoc vineyard, spread around the village and the hamlets of Cos, Marbuzet and Pez. Its immediate neighbours are Pauillac to the south and the Haut-Médoc, which surrounds it to the west and north.

History of the Saint-Estèphe appellation

The history of this vineyard is intertwined with that of the Médoc, whose clearing and development dates from the 16th and 17th centuries, when the draining of the marshes made the gravel ridges cultivable. The parish, long called Saint-Estèphe de Calon, was home to already ancient estates, including Calon and Pez, the latter founded in 1452 and passed into the hands of the de Pontac family, creators of Haut-Brion. The 19th century marked the commercial rise of the appellation: Louis Gaspard d'Estournel founded Cos in 1811 and exported as far as the Indies, Montrose was born in 1815, and the 1855 classification distinguished five growths from the commune. The appellation d'origine contrôlée was recognised by the decree of 14 November 1936, its specifications having been revised several times since. Since the 2000s, the acquisition of numerous properties by major investors has triggered a wave of modernisation (gravity-fed wineries, plot-by-plot selection, organic conversions) that has raised the overall standard of production.

What are the terroirs of the Saint-Estèphe appellation?

The terroirs rest on gravel ridges deposited during the Quaternary, but are distinguished from the rest of the Médoc by a significantly higher proportion of clay. Two thirds of the surface area is occupied by gravelly alluvions, pebbles and gravel coated in clayey sands, with the lower terrace being more stony and the upper terrace more sandy-gravelly. Beneath these gravels, the so-called Saint-Estèphe limestone appears in places, and deep clay layers offer the vine a precious water reserve, which explains the appellation's success in summers of severe drought. The oceanic climate is moderated by the estuary, which tempers spring frosts and excessive heat. The most sought-after exposures are found on the ridges overlooking the Gironde, around Montrose and Meyney, and on the gravel hill of Cos, to the south, facing Pauillac.

What grape varieties are permitted in the Saint-Estèphe appellation?

The permitted grape varieties are those of the Médoc: cabernet sauvignon, merlot, cabernet franc, petit verdot, cot and carmenère, the latter two surviving only in trace quantities. The specifications impose no set proportions, but the actual encépagement is around 50% cabernet sauvignon and 40% merlot, complemented by approximately 7% cabernet franc and 3% petit verdot. Cabernet sauvignon, planted on the warm and well-drained gravels, provides the tannic structure, aromas of blackcurrant, cedar and graphite, and the capacity to age. Merlot, at home on the clay-limestone soils that are plentiful here, gives body, roundness and red fruit. Cabernet franc adds floral finesse and freshness, while petit verdot contributes deep colour, a touch of acidity and a violet perfume. This freedom of blending explains the diversity of styles from one estate to another.

What are the different wine styles of Saint-Estèphe?

These wines are exclusively red, as the appellation recognises neither white nor rosé (the rare whites produced in the commune are sold as Bordeaux blanc). Two families of styles coexist: a Médoc classicism, straight and taut, dominated by cabernet sauvignon, with blackcurrant, cedar and graphite, and firm tannins that require time; and a more generous register, rich in merlot, harvested ripe and aged in new wood, seductive much earlier. Vinification takes place in temperature-controlled tanks, with optical sorting and plot-by-plot vinifications at the best estates, followed by ageing of twelve to eighteen months in French oak barriques, the proportion of new barrels varying considerably from one growth to another.

When it comes to food and wine pairing, tasting calls for characterful dishes: lamb, entrecôte à la bordelaise, côte de bœuf, duck, game birds or furred game, braised meats and stews, as well as aged pressed-rind cheeses. Serve between 16 and 18 °C.

What are the best vintages of Saint-Estèphe?

The reference vintages of the last thirty years are 1995, 1996, 2000, 2005, 2009, 2010, 2015, 2016, 2018, 2019, 2020 and 2022, to which 2003 is added, a sweltering year in which the local clays performed superbly while other terroirs suffered from the drought. 1996 and 2010 produced cabernets of rare rigour, 2009 and 2018 more generous and full-bodied wines, 2016 and 2022 a remarkable balance between concentration and freshness. The more modest or uneven years (1997, 1999, 2002, 2004, 2007, 2011, 2013, 2017, 2021) remain interesting from serious producers, at gentle prices and for prompt consumption. Today, the vintages from 1995 to 2010 are entering their full drinking window, as are the intermediate years 2008, 2012 and 2014. On the other hand, 2015, 2016, 2018, 2019, 2020 and 2022 still deserve a few more years in the cellar.

What are the best estates of the Saint-Estèphe appellation?

The best estates are divided between the five great classified growths of 1855 and a handful of unclassified properties whose reputation rivals that of the classified growths. Château Cos d'Estournel, a second classified growth, dominates the appellation from the gravel hill of Cos, facing Lafite Rothschild. Founded in 1811 by Louis Gaspard d'Estournel, nicknamed the Maharajah of Saint-Estèphe for his exports to the Indies, it owes its oriental pagodas to the fancy of its creator. The property of Michel Reybier since 2000 and equipped in 2008 with a fully gravity-fed winery, it produces a polished, spiced and distinguished wine, highly sought after by collectors, with Les Pagodes de Cos as its entry point.

Château Montrose, also a second classified growth, occupies a gravel ridge on the immediate edge of the Gironde, one of the finest terroirs in the Médoc. Created in 1815, it built its reputation in the 20th century under the Charmolüe family thanks to exemplary consistency, including in difficult vintages. Bought in 2006 by Martin and Olivier Bouygues, entirely renovated and committed to biodynamics, it produces a dense and mineral wine built for three decades, with the 1990, 2009 and 2010 standing as benchmarks. La Dame de Montrose, with a greater emphasis on merlot, ranks among the best second wines of Bordeaux.

Château Calon-Ségur, a third classified growth, is the most northerly of the classified growths of the Médoc and one of the oldest estates in the commune. The heart drawn on its label recalls the phrase attributed to Marquis Nicolas Alexandre de Ségur, owner of Lafite and Latour, who said he made his wine elsewhere but his heart was at Calon. Ceded in 2012 to Suravenir Assurances, the estate restructured its vineyard and refined its style, very cabernet, floral and graphite-tinged, of remarkable precision, with Le Marquis de Calon as its second wine.

Château Lafon-Rochet, a fourth classified growth, is recognisable by its golden-yellow chartreuse, in the south of the appellation facing Lafite Rothschild. Reconstituted from 1960 by the Tesseron family, who brought it to the top of its rank, it was acquired in 2021 by Jacky Lorenzetti, also the owner of Pédesclaux and Lilian Ladouys. Its 41 hectares in a single block produce a tight, graphite-tinged wine, often described as the most Pauillac-like of the Saint-Estèphes, and one of the most affordable classified growths on the left bank.

Château Phélan Ségur, absent from the 1855 classification, nevertheless plays in the league of the classified growths. Founded in the early 19th century by Irish merchant Bernard O'Phelan, it lines up 70 hectares in four large blocks adjoining the vines of Montrose and Calon-Ségur. Sold in 2017 to Belgian shipowner Philippe Van de Vyvere for a record sum, it cultivates a straight, pure and unoverworked style, one of the finest value-for-money propositions in the appellation, complemented by the second wine Frank Phélan.

Château Haut-Marbuzet embodies the other face of this vineyard, hedonistic and generous. The adventure begins in 1952, when Hervé Duboscq purchased seven hectares before patiently building an estate of 75 hectares now run by his descendants. Very ripe harvests, a high proportion of merlot and ageing in new wood produce a fleshy, smoky and beguiling wine, seductive young but capable of ageing very well, which has built a rare community of loyal enthusiasts for an unclassified growth.

Château Cos Labory, a fifth classified growth, shares the hill of Cos with its illustrious neighbour, from which it was detached after the Revolution. Its 18 hectares, long managed by the Audoy family, were taken over in March 2023 by Michel Reybier, who chose to preserve the independence of the growth. The wine, classic and spiced, remains one of the most accessible classified growths of the Médoc to purchase.

Château Meyney possesses one of the most singular terroirs in the appellation, around fifty hectares in a single block on the edge of the estuary, neighbouring Montrose, whose subsoil contains a seam of blue clay comparable to that of the great terroirs of Pomerol. A former monastic estate, it has long been recognised as a reliable value in the Médoc. The wine, deeply coloured, ferrous and solidly structured, requires a few years of cellaring and ranks among the finest bargains in the commune.

Château de Pez, founded in 1452, is along with Calon-Ségur the oldest vineyard in Saint-Estèphe and once belonged to the de Pontac family, creators of Haut-Brion. Property of the champagne house Louis Roederer since 1995, it has been restructured plot by plot and offers a more velvety and elegant style than the local average. Its neighbour Les Ormes de Pez, run by the Cazes family (Lynch-Bages), upholds a more tannic register and ideally complements this duo for discovering the appellation without breaking the bank.

How long should a wine from Saint-Estèphe be kept?

A wine from Saint-Estèphe keeps for a long time, as the appellation produces only age-worthy reds. Allow 15 to 30 years, sometimes more, for the classified growths in great vintages, 10 to 20 years for the best unclassified properties, 8 to 15 years for the second wines and more modest growths, and 5 to 10 years in lighter years. The ideal cellar is kept between 11 and 14 °C, with humidity close to 70%, away from light and vibrations, bottles lying on their sides. For young or powerful vintages, decanting for one to two hours usefully softens the tannins. Beyond twenty years of ageing, it is better to open the bottle an hour before serving or to carry out a careful decantation, solely to separate the sediment.
