The Brut Sous Bois by Billecart-Salmon, born from the terroirs of the Montagne de Reims and the Côte des Blancs, blends Chardonnay, Pinot Noir, and Pinot Meunier. Vinified in oak barrels, it reveals aromas of dried fruits and citrus, enhanced by toasted notes. Its palate, silky and mineral, elegantly complements white meats and seafood. To be served at 10°C, it can be cellared for up to 12 years.
An independent family house since 1818, rooted in Mareuil-sur-Aÿ, Billecart-Salmon perpetuates a heritage of excellence and finesse across seven generations.

Tasting notes for Champagne Billecart-Salmon Brut Sous Bois
In the eye: A golden yellow robe with copper highlights, of a silky texture and crystalline brilliance that heralds its complexity.
On the nose: Aromas of candied citrus and ripe white fruits intertwine with notes of toasted brioche, soft vanilla, and a saline touch reminiscent of sea spray.
On the palate: A creamy and taut attack, where chalky minerality engages with a lively acidity, leading to a long and persistent finish marked by soft spices and a hint of roasted hazelnut.
Serve at 10°C in a Champagne flute or a white wine glass to reveal its full depth.
