Traditional Method and Champagne Styles

Crafted from the main grape varieties Chardonnay, Pinot Noir, and Pinot Meunier, Champagne can sometimes be White of Whites (a white wine made solely from white grapes, for example 100% Chardonnay, resulting in an elegant and mineral Champagne), or White of Blacks (a white wine made solely from black grapes, for example 100% Pinot Noir, resulting in a fruitier, fuller-bodied, and more vinous Champagne). 

Champagne is crafted using a technique called the Traditional Method (or Méthode Champenoise), which involves producing a still base wine followed by a second fermentation in the bottle with the addition of a liqueur de tirage, creating Champagne's characteristic natural bubbles. The bottles then undergo an aging process on the lees, contributing to the complexity and richness of the aromas. Finally, after disgorgement, adding a dosage liqueur allows, among other things, adjusting the sweetness level of the Champagne, ranging from brut (dry) to doux (sweet) champagnes. Here is the classification of Champagne labeling terms from least sweet to sweetest in grams of sugar per liter. 

Non-dosé or Brut Nature: No added dosage. 

Extra Brut: Even drier than Brut, less than 3g/L.

Brut: with a minimal amount of residual sugar, between 4g/L and 12g/L

Extra Dry: Very slightly sweet. Between 12 and 17g/L

Sec: Slightly sweet. Between 17 and 32g/L

Demi-Sec: Sweet. Between 32 and 50g/L

Doux: Very sweet, and rarely produced nowadays. Over 50g/L

If the Champagne is a vintage champagne, the production method is even stricter.

Aging: These champagnes often have superior aging potential due to the exceptional quality of the harvest. They can evolve complexly over time, developing deeper aromas and a richer texture.

Chardonnay Grape: Chardonnay is the only grape variety used to produce White of Whites Champagne. This white grape brings delicate white fruit aromas, crisp acidity, and aromatic finesse.

Fresh and Mineral Style: White of Whites are often appreciated for their fresh, mineral style. Specific terroirs, such as the Côte des Whites, are renowned for producing wines that highlight the purity of Chardonnay.
