The BILLECART SALMON house was founded by Nicolas-François Billecart and Élisabeth Salmon in Mareuil-sur-Ay in 1818. Always remaining family-owned and independent, even though in 2005 the Frey group — which owns Lagune in the Médoc (Bordeaux), Jaboulet in the Rhône, and Corton André in Burgundy — acquired 45% of the capital, the Billecart Salmon house continues to grow steadily, with its production now exceeding 2 million bottles per year.

Endowed with a fine vineyard on prestigious terroirs, Maison Billecart-Salmon perpetuates tradition by remaining faithful to its motto: « prioritise quality, aim for excellence », its independence allowing it to progress year after year, both qualitatively and quantitatively. In addition to the estate's own vineyard, most of the grapes used for vinification come from within a 20 km radius of Épernay, where Grand Crus of Pinot Noir, Chardonnay and Pinot Meunier coexist. Benefiting from modernised technical facilities in 2010 and 2018, the Champagnes Billecart Salmon are aged in the new cellar with 24 large barrels or in the cellar with 400 casks. Mathieu Roland-Billecart, of the 7^th generation, leads the house Billecart Salmon, supported by Antoine Roland-Billecart. Several hallmarks stand out when tasting the Billecart-Salmon range, such as the purity and youthfulness of the fruit, the mineral or saline tension, the finesse and caress of the mousse, as well as the aromatic length. Cold vinification likely explains this fruitiness that retains its freshness for a long time, highlighted by the aromatic precision derived from the separation of plots and/or origins through to the blending. The Champagne wines Billecart Salmon age in the 17th and 19th century cellars. Sealed with cork, the vintage champagnes are mostly riddled by hand. In the non-vintage Billecart Salmon cuvées, the high proportion of reserve wines brings maturity and enriches complexity. The cuvées enriched with wines vinified in wood gain depth and structure, without being dominated by a vanilla or toasted aromatic profile. Balance is the key word here. In the range, the rosé Champagne Billecart Salmon cuvée is composed of 40% Chardonnay, 30% Pinot Noir, 30% Meunier, and almost 10% red wine. It represents the flagship of the house Billecart Salmon and offers a raspberry and spiced nose, an ample palate with chalky freshness and a superb finish of spices and orange peel. It is a true stylistic benchmark. The Billecart Salmon "Blanc de blancs Brut Grand cru" cuvée offers very fine aromatic elegance, with white peach and citrus notes. The palate is taut, the fruit pure, the minerality chalky, and the length is superb. The Billecart Salmon Extra Brut Champagne (40% Meunier, 30% Pinot Noir, 30% Chardonnay, includes 30% reserve wines) is refined and floral. The mousse is very fine, the palate elegant, and the finish tonic, well-taut, with length on a lemony freshness. The vintage Champagne Billecart Salmon vintage 2008 80% Pinot Noir, 20% Chardonnay, in extra-brut exhales a complex aromatic of spiced and toasted notes, ripe yellow fruits and hazelnut. The palate is superbly elegant, structured, with magnificent rich and complex substance on ripe notes, and the finish is superbly long, with minerality. Finally, with its 60% Pinot Noir and 40% Chardonnay, the Nicolas François Billecart 2002 Champagne cuvée, entirely emblematic of the house Billecart Salmon, still offers a certain ageing potential. Its creamy character and body density make it a great gastronomic Champagne with a fine and persistent mousse. On the complex nose, ripe roasted white fruits, spiced and toasted notes. The flavour of this wine is extremely deep, the bubble very fine, and this Champagne is at once powerful and delicate, very long — in short, an authentic great wine for achieving the finest gastronomic pairings.
