The Clos Saint Hilaire Brut 2005, Champagne Blanc de Noirs by Billecart-Salmon, comes from a chalky clos in Mareuil-sur-Aÿ. This Pinot Noir, aged 14 years on lees, reveals aromas of biscuits and truffle, a silky texture and a chalky finish. Dosed at 1 g/l, it pairs ideally with lobster.
An independent family house since 1818, Billecart-Salmon cultivates excellence and discretion on the slopes of Mareuil-sur-Aÿ, in Champagne.

Tasting notes for Billecart-Salmon Le Clos Saint Hilaire Brut 2005
To the eye – An intense, dense and luminous golden yellow robe, crossed by a stream of fine and persistent bubbles, heralding a silky texture and generous body.
On the nose – First fresh aromas of white flowers and golden biscuits, then deeper notes of white truffle, roasted mango and dried fruits, lifted by a saline touch and a hint of gentle spices.
On the palate – A broad and velvety attack, where mineral tension and lively acidity support flavors of candied citrus and pear in syrup, leading to a long, chalky finish of remarkable purity.
Serve between 12 and 14 °C in a Champagne flute or a white wine glass to reveal its full complexity.
