Domaine de Montcalmès was founded in 1998 by Frédéric Pourtalié and his father Jean-Marie, who decided to leave cooperative viticulture to create their own cellar and produce superior quality wines. The name of the estate comes from Occitan and literally means "limestone hill". Frédéric Pourtalié honed his expertise alongside great references in the Languedoc before giving a distinctive identity to this family estate, today recognized as one of the essential addresses in the region.

Yes, the Domaine de Montcalmès has long been committed to environmentally responsible viticulture. After beginning its conversion to organic farming in 2012, the Domaine de Montcalmès obtained its organic certification as early as the 2015 vintage. The vineyard is cultivated with very low yields of 20 to 25 hectoliters per hectare, thanks to short vine pruning, soil tilling, and green harvesting.

The domaine offers its two great wines every year: the Terrasses du Larzac rouge and the Languedoc blanc. Depending on the vintages, Frédéric Pourtalié also produces exclusive cuvées such as the Geai, the Grenache cuvée, or even a white made from chardonnay. For a special occasion, the Terrasses du Larzac rouge stands out as the flagship of the domaine: a deep and complex wine, powerful and structured, with a remarkable ageing potential.

The red Terrasses du Larzac cuvée from the Domaine de Montcalmès is made from a blend of syrah, mourvèdre and grenache, sourced from vines averaging around thirty years old, with controlled yields of around 25 hl/ha. Each grape variety is vinified separately with indigenous yeasts, with a maceration of approximately 30 days, followed by 24 months of aging in oak barrels and a final blending two months before bottling, carried out without filtration.

The Domaine de Montcalmès covers 22 hectares spread across the communes of Puéchabon, Aniane, Saint-Jean-de-Fos and Saint-Saturnin-de-Lucian, about thirty kilometres north-west of Montpellier. These plots offer a great diversity of soils: lacustrine limestone at Puéchabon, rounded pebbles at Aniane, limestone scree at Saint-Saturnin and clay-limestone at Saint-Jean-de-Fos. It is this mosaic of terroirs that Frédéric Pourtalié vinifies plot by plot before the final blend.

The red wines from domaine de Montcalmès are designed to age. Specialists recommend waiting several years before tasting them, as they are still young when they leave the cellar. For an optimal tasting experience, serve the Terrasses du Larzac between 16 and 18 °C and plan a decanting of at least one hour to allow the wine to open up fully. In the cellar, store it away from light and temperature variations, lying on its side, to enjoy its full aromatic complexity over the years.

History of Domaine de Montcalmès

Founded in 1998 by Frédéric Pourtalié and his father Jean-Marie, the Domaine de Montcalmès takes its name from an abandoned hamlet located on a plateau overlooking the Hérault valley. Originally, the 30-hectare family estate was dedicated to cooperative viticulture. However, driven by the desire to stand out and produce wines of superior quality, Frédéric and his father decided to create their own winery. Frédéric Pourtalié honed his expertise by working alongside renowned winemakers such as Laurent Vaillé (Domaine de la Grange des Pères), Olivier Jullien (Mas Jullien) and Alain Graillot (Crozes-Hermitage).

The first red wine vinification dates back to 1999, with a modest production of 5,000 bottles. In 2004, the first white wine cuvée was produced. Since then, production has continued to grow, now reaching approximately 50,000 bottles per year. In 2003, Muriel Fabre, Frédéric's sister, joined the estate, further strengthening the family management of the property.

A major milestone in the history of the estate occurred in 2012 with the conversion to organic farming. From the 2015 vintage onwards, the entire production of Domaine de Montcalmès obtained organic certification, marking an evolution in the estate's philosophy, always committed to environmental protection and respect for the terroir.

Terroirs and Vines of domaine de Montcalmès

The vineyard of domaine de Montcalmès spans 22 hectares spread across the communes of Puéchabon, Aniane, Saint-Jean-de-Fos and Saint-Saturnin-de-Lucian, all located at the heart of the Terrasses du Larzac appellation. This distinctive terroir, bathed in the freshness of the Mediterranean climate, is characterized by its geological diversity.

In Puéchabon, the Syrah and Grenache vines are planted on a north-facing limestone plateau, benefiting from an exposure that tempers the intensity of the southern sun, thus preserving the freshness and acidity of the grapes. In Aniane, Mourvèdre is cultivated on terrain composed of rounded pebbles, similar to those found in Châteauneuf-du-Pape. These pebbles store the heat of the day and release it at night, promoting optimal ripening of the grapes, particularly Mourvèdre, renowned for its adaptation to hot and dry climates.

The estate's vines, with an average age of 30 years for the reds and 20 years for the whites, are cultivated in a traditional manner. Pruning is kept short to limit production and encourage the concentration of aromas. Soil work, carried out through regular ploughing, and manual green harvesting ensure a low yield of between 20 and 25 hectoliters per hectare. This rigorous approach to vineyard management contributes to the production of rich, balanced and expressive wines.

Vinifications at domaine de Montcalmès

Vinification at domaine de Montcalmès is a meticulous process, based on the separation of grape varieties and the use of traditional methods. The grapes are harvested by hand, then destemmed and crushed before being conveyed by gravity into the vats, a system that best preserves the integrity of the fruit.

The red grape varieties (Syrah, Grenache and Mourvèdre) are vinified separately. Fermentation is carried out using indigenous yeasts, thereby best reflecting the characteristics of the terroir. Maceration lasts approximately 30 days, allowing a slow and progressive extraction of tannins and aromas.

The aging of the red wines takes place in one- or two-wine oak barrels for 24 months, a practice that brings complexity and depth to the cuvées. The blending of the different grape varieties only takes place at the end of this period, a few months before bottling. Bottling occurs during the waning moon, in accordance with a favorable lunar calendar, and the wines are not filtered, in order to preserve their full purity and aromatic richness.

For the white wines, composed of Roussanne and Marsanne, fermentation and aging take place in barrels and demi-muids over a similar period of 24 months. This process gives the wines an elegant structure, while preserving a beautiful freshness and great length on the palate.

The Cuvées of Domaine de Montcalmès

Domaine de Montcalmès offers a limited but particularly refined range, consisting of high-quality red and white wines:

AOC Terrasses du Larzac, Red

This is the estate's flagship cuvée, made from a blend of 60% Syrah, 20% Mourvèdre and 20% Grenache. The vines, averaging 30 years of age, yield 25 hectoliters per hectare. The nose is marked by complex aromas of dark fruits, liquorice and spices, while the palate reveals silky tannins and great depth. This wine is ideal for cellaring and develops an even richer aromatic palette over time.

AOC Languedoc, White

This cuvée is composed of equal parts Roussanne and Marsanne, sourced from 20-year-old vines located on a clay-limestone hillside in Puéchabon. The yield is limited to 20 hectoliters per hectare. The wine is distinguished by its aromas of white flowers and candied lemon, with a beautiful freshness on the palate, balanced by a silky texture. It is aged in oak barrels and demi-muids for 24 months, which gives it great complexity and a lingering finish.
