Domaine du Mas Jullien, founded in 1985 by Olivier Jullien and Jean-Philippe Granier, is located in the village of Jonquières, within the Côteaux du Languedoc and Terrasses du Larzac appellations. Its vineyards cover 20 hectares, including 4 hectares of white varieties (Carignan Blanc, Chenin, Clairette, Grenache, Viognier and Petit Manseng). Domaine Mas Jullien was long seen as a pioneer and a byword for excellence in a Languedoc primarily focused on quantity. Alongside a few other star winemakers, such as Gauby, Daumas Gassac and Grange des Pères, Olivier Jullien helped the Languedoc produce high-quality, premium wines—something still quite rare in the region in the 1980s.

The history of Domaine Mas Jullien

The Mas Jullien story began in 1985, when Olivier Jullien, just 20 years old, dared to challenge the conventions of a Languedoc in crisis. Shaped by the winegrowers’ protests of the 1970s against relentless production-driven practices and all-powerful cooperatives, the young viticulture student converted family outbuildings into a winery and made his first vintage. With the help of his friend Jean-Baptiste Granier, he bought and leased abandoned plots, sowing the seeds of a revolution in quality. This pioneer even inspired his father to leave the cooperative and found Mas Cal Demoura in 1993. Thirty years later, Olivier continues to explore, buying and selling land to refine his terroir and shifting from grenache and syrah toward carignan, mourvèdre, and cinsault, varieties better suited to balanced wines. An iconic winegrower awarded three stars in La Revue du Vin de France’s Guide Vert and five stars by Bettane + Desseauve, he embodies the commitment to quality that brought Languedoc wines to international attention, proving that the region can rival France’s grands crus.

The terroirs and vines of Domaine Mas Jullien

The vines of Mas Jullien thrive on the rocky terraces of the Larzac plateau, at the foot of Mont Baudille, at elevations of up to 900 meters—among the highest in the Languedoc. This distinctive microclimate, shaped by sea winds and mountain coolness, offers exceptional geological diversity: clay-limestone soils rich in stones that support intense microbial activity, silica and sandstone that lend minerality, and schist and marl that provide structure. The 18 hectares are divided into small, separate plots, encouraging deep roots to withstand recurring drought. Farmed using an intuitive biodynamic approach, with natural ground cover, compost, and hedgerows to boost biodiversity, the vines—35 years old on average—produce low yields of around 30 hl/ha. Key grape varieties include carignan for its freshness and character, mourvèdre for its structure, syrah for its spicy aromas, and cinsault for its finesse; for the whites, chenin and carignan blanc bring acidity, while viognier and clairette add aromatic richness. This varied terroir, saved from uprooting by Olivier’s determination, gives the wines a chalky vibrancy and poised elegance.

Winemaking at Domaine Mas Jullien

Winemaking at Mas Jullien is an art of balance, guided by a minimalist, respectful philosophy. Drawing on decades of experimentation—from whole-cluster fermentation in 1985 to forgoing sulfur in 1989—Olivier Jullien favors native yeasts and attentive aging to preserve the identity of each plot. For the whites, gentle crushing, direct pressing, and overnight settling are followed by separate fermentation by grape variety and terroir in 600-liter demi-muids, without malolactic fermentation except for the carignan blanc. Blending takes place after fermentation, yielding saline freshness and a silky texture. For the reds, meticulous destemming and rigorous sorting precede three weeks of fermentation in 40-hectoliter vats, with manual punch-downs and temperature control to prevent overheating. Malolactic fermentation then takes place in vat or barrel. An initial year of aging in demi-muids is followed by two years in large oak casks for subtle integration of the tannins. The rosé, a structured saignée, ferments in stainless steel before a spell in Stockinger oak casks. Free of chemical inputs, this intuitive biodynamic approach, including homeopathic treatments, brings out the purity of the fruit and the minerality, making each Mas Jullien cuvée a model of terroir-focused winemaking.

The cuvées of Domaine Mas Jullien

Mas Jullien excels with a small range of cuvées, each revealing a facet of the Terrasses du Larzac terroir.

Pays d’Hérault Blanc: A blend dominated by carignan blanc (70%) and chenin (30%), with clairette, roussanne, and grenache blanc. An unfolding nose of white flowers and citrus zest, a rich, saline palate, and a vibrant finish. Aged for nearly two years, it promises to stand the test of time with its silky texture, nuanced range of flavors, and pure, sea-spray character.

Languedoc Rosé: A saignée rosé made predominantly from cinsault, with carignan and mourvèdre in proportions that vary by vintage. Fermented in stainless steel with native yeasts, then aged in large oak casks of different types. Structured and untamed, it offers deep, earthy complexity and notes of spice and red fruit. Perfect with summer grilling, it is a rare rosé that expresses its terroir.

Carlan, Terrasses du Larzac: Grenache (50%), carignan (25%), cinsault (15%), and syrah (10%) grown on schist, sandstone, and iron-rich soils at an elevation of 240 meters. Century-old vines, though most are 75 years old. A woodsy nose of undergrowth and a distant campfire; a fruit-driven palate of dark berries, chocolate, blackcurrant, and violet, with hints of tapenade and hedgerow in the background. More approachable than its counterparts, it combines softness and freshness in a red that is both easy-drinking and deep.

Lous Rougeos, Terrasses du Larzac: Carignan (50%), syrah (40%), and grenache (10%) grown on limestone scree at an elevation of 400–450 meters, on a west-facing site above Saint-Privat. Aged for 12 months in fine-grained oak casks. Crystal-clear acidity and airy freshness, with carignan’s vivid, peppery minerality on the finish. A poised, fine, lively red that defies clichés of the hot South with its northern elegance.

Around Jonquières in the Terrasses du Larzac: Mourvèdre (40%), carignan (40%), and syrah (20%) from old vines on poor limestone soils. Aged for two years in demi-muids and large oak casks. Refined power, firm yet supple tannins, and notes of garrigue, ripe fruit, and spice. Complex and harmonious, with a distinctive chalky character, it promises to age for 10–15 years.

Among the lesser-known gems, Etats d’Ames and La Brune carry forward the elegance of the reds, while Cartagène, an orange-tinged rosé fortified wine made entirely from cinsault, delights as an aperitif or with dessert thanks to its exotic sweetness.
