The Mas Jullien estate, founded in 1985 by Olivier Jullien and Jean-Philippe Granier, is located in the village of Jonquières, within the Côteaux du Languedoc and Terrasses du Larzac appellations. Its vineyard covers 20 ha, of which 4 ha are planted with white varieties (carignan blanc, chenin, clairette, grenache, viognier, and petit manseng). The Mas Jullien estate long served as a pioneer and a byword for excellence in a Languedoc primarily oriented towards quantity. Olivier Jullien, alongside a handful of other star winemakers (such as Gauby, Daumas Gassac, Grange des Pères), helped the Languedoc produce wines of exceptional quality positioned at the top end of the market, which was quite rare in the region during the 1980s.

History of the Mas Jullien estate

The adventure of Mas Jullien began in 1985, when Olivier Jullien, just 20 years old, dared to challenge the conventions of a Languedoc in crisis. Marked by the vignerons' uprisings of the 1970s, faced with runaway productivism and all-powerful cooperatives, the young viticulture student converted family outbuildings into a cellar and produced his first vintage. Aided by his friend Jean-Baptiste Granier, he bought and leased abandoned plots, sowing the seeds of a qualitative revolution. This pioneer even inspired his father to leave the cooperative and found Mas Cal Demoura in 1993. Thirty years later, Olivier continues to explore, buy and sell land to refine his terroir, moving from grenache and syrah to carignan, mourvèdre and cinsault, better suited to balanced wines. A legendary winemaker, acclaimed with 3 stars in the Guide Vert of La Revue du Vin de France and 5 stars at Bettane + Desseauve, he embodies the oasis of quality that has propelled Languedoc wines onto the international stage, proving that this region can rival the grand crus of France.

Terroirs and Vines of the Mas Jullien estate

The vines of Mas Jullien thrive on the rocky terraces of the Larzac plateau, at the foot of Mont Baudille, at altitudes of up to 900 metres, among the highest in the Languedoc. This unique microclimate, influenced by sea breezes and mountain freshness, offers exceptional geological diversity: clay-limestone soils rich in pebbles for intense microbial activity, silica and sandstone for minerality, schist and marl for structure. The 18 hectares are fragmented into "island" plots, encouraging deep rooting to withstand recurrent drought. Cultivated using intuitive biodynamics, with natural ground cover, compost and hedgerows to boost biodiversity, the vines — averaging 35 years old — yield low outputs (around 30 hl/ha). Star grape varieties: carignan for its freshness and breed, mourvèdre for its structure, syrah for its spicy aromas, cinsault for its finesse; in white, chenin and white carignan for acidity, viognier and clairette for aromatic richness. This varied terroir, saved from uprooting by Olivier's tenacity, gives the wines a chalky vibrancy and a vertical elegance.

Winemaking at the Mas Jullien estate

Winemaking at Mas Jullien is an art of balance, guided by a minimalist and respectful philosophy. Olivier Jullien, drawing on decades of experimentation — from whole-bunch fermentation in 1985 to the absence of sulphur in 1989 — favours indigenous yeasts and attentive ageing to preserve the identity of each plot. For the whites: gentle crushing, direct pressing and nocturnal settling, followed by separate fermentation by grape variety and terroir in 600 L demi-muids, without malolactic conversion except for the white carignan. Blending takes place post-fermentation, for a saline freshness and a silky patina. The reds: meticulous destemming, strict sorting, fermentation in 40 hl vats with manual punching down and temperature control to avoid overheating, over three weeks, then malolactic fermentation in vat or barrel. Initial ageing of one year in demi-muids, followed by two years in large barrels for subtle tannin integration. The rosé, a structured saignée, ferments in stainless steel before a passage through Stockinger large barrels. Without chemical inputs, this intuitive biodynamic approach — homeopathy included — exalts the purity of the fruit and the minerality, making each cuvée of Mas Jullien a model of terroir-driven winemaking.

The cuvées of the Mas Jullien estate

Mas Jullien excels with a limited range, each wine revealing a different facet of the Terrasses du Larzac terroir.

Pays d'Hérault White: A blend dominated by white carignan (70%) and chenin (30%), complemented by clairette, roussanne and grenache blanc. A progressive nose of white flowers and zesty citrus, a rich and saline palate, with a vibrant length. Aged for nearly two years, it defies time with a silky texture and a nuanced palette, with a refined and iodine-tinged profile.

Languedoc Rosé: Saignée of predominantly cinsault, carignan and mourvèdre (proportions vary by vintage). Fermentation in stainless steel with native yeasts, followed by ageing in mixed large barrels. Structured and wild, it offers a deep earthy complexity, notes of spices and red fruits, perfect to accompany summer grills — a rare terroir rosé.

Carlan, Terrasses du Larzac: Grenache (50%), carignan (25%), cinsault (15%), syrah (10%), on schist, sandstone and ferruginous soils at 240 m altitude. Predominantly century-old vines (75 years on average). A woody nose of undergrowth and distant campfire, a fruity palate of black berries, chocolate, blackcurrant and violet, with tapenade and hedgerow in the background. More approachable than its siblings, it combines softness and freshness for a smooth yet deep red.

Lous Rougeos, Terrasses du Larzac: Carignan (50%), syrah (40%), grenache (10%), on limestone scree at 400–450 m altitude, west-facing above Saint-Privat. Aged 12 months in fine large barrels. Crystalline acidity and airy freshness, explosive and peppery carignan minerality on the finish. A vertical, refined and zesty red that shatters the clichés of the warm South in favour of a Nordic elegance.

Around Jonquières, Terrasses du Larzac: Mourvèdre (40%), carignan (40%), syrah (20%), from old vines on poor limestone soils. Aged two years in demi-muids and large barrels. Refined power, tenacious yet supple tannins, notes of garrigue, ripe fruits and spices. Complex and harmonious, it promises a cellaring potential of 10–15 years, with a chalky breed.
