Domaine Saint Sylvestre, Languedoc Roussillon: from the Terrasses du Larzac to the summit
At the end of 2010, Vincent Guizard decided to leave Montcalmès estate to create his own domaine in Puéchabon: Saint Sylvestre, in the Terrasses du Larzac appellation.

Until now in partnership with Frédéric Pourtalier, the 8 hectares of vines that Vincent owned were made available to the domaine de Montcalmès. From the 2011 vintage onward, the domaine de Saint Sylvestre thus began producing its own wines. Building on experience already gained at Mas Jullien, he very quickly met with great success. The Saint Sylvestre terroir spreads across 3 plots in the middle of the woods, forming a mosaic of soils ranging from limestone to red clays and sands. The range of grape varieties cultivated is as follows: Syrah / Grenache / Mourvèdre for Languedoc rouge and Chardonnay / Marsanne / Roussanne and Viognier for the 2 Languedoc blancs. The altitude of over 320 m creates a very significant temperature contrast between the coolness of the nights and the heat of the day. In the vineyard, work is done by hand, with severe pruning and green harvesting, in particular to limit yields to around 20 hl/ha, and in the cellar, the wines are aged for 24 months in oak, to be perfectly refined. In red, the Cuvée Saint Sylvestre rouge is a blend of syrah (70%), grenache (20%) and mourvèdre (10%), sourced from slopes of rounded galets, with a south-east exposure. Explosive, the nose reveals powerful aromas of blackcurrant and wild blackberry, on a gentle menthol freshness, with notes of garrigue and spices. Straight and powerful, the palate is very well balanced, with a silky texture and fine, elegant tannins. The white Cuvée Coup de calcaire de Saint Sylvestre comes from an interesting blend of 90% chardonnay, 5% marsanne and 5% roussanne. Since the vines spread over lacustrine limestone soils, the name was a natural choice. Ageing takes place in Burgundian barrels for 1 year, and the nose is very intense and perfumed, with very fresh white fruits (pear, white peach) and infusion aromas accompanied by well-marked iodine notes. The palate, with a frank attack and beautiful, ample substance, delivers formidable energy. The balance of the wine is perfect, concluding on a taut and very mineral finish. Finally, the Saint Sylvestre blanc comes from a blend in the style of northern Rhône wines: 45% marsanne, 45% roussanne and 10% viognier. The complexity of the nose is astonishing and precise on white fruits such as quince and peach, with floral and infusion notes. A subtle oakiness adds yet more complexity to the whole. The palate is very full-bodied with an unctuous, tight texture and a marked acidity that supports the fruit's richness. The finish is marked by fine bitterness and a delicate toasted flavour. It can be enjoyed in its early years or left to reveal evolved notes over time. In summary, St Sylvestre is a young estate that is already generating a great deal of attention and is earning its place alongside the greatest names of the Languedoc.
