This celebrated house from Aÿ, founded in 1829, remains family-owned, and the great-grandson of Joseph Bollinger handed over the reins in 2008 to Jérôme Philipon. Bollinger is probably the embodiment of the purist's Champagne, vinified in small barrels. Bollinger has quietly evolved its style towards greater accessibility, without losing its original exacting standards, producing superbly vinous and deep Champagnes of extreme finesse — true table wines.

The house's Champagne wine production is supported by a vineyard of more than 166 hectares of Grands et Premiers Crus, covering 60% of total production (the remaining 40% being sourced through grape purchases). This vineyard is composed predominantly of Pinot Noir (102 ha), followed by Chardonnay (39 ha) and 25 ha of Pinot Meunier. The exceptional quality of the house's cuvées is likely due to the fact that a portion of the reserve wines fermented in small oak barrels is kept in magnums for 5 to 12 years, then incorporated into the assembly of the non-vintage brut.
This is rare enough to be noted, and this method can be described as a true hallmark of the famous Bollinger style. Bollinger is at the very highest level across all its cuvées, whether in the Brut Spécial Cuvée — the true signature of the house, of rare volume, with a creamy bubble yet a balanced style between power and finesse. The Brut La Grande Année cuvée 2007 displays a dynamic profile driven by delicate citrus notes. The Champagne Brut Rosé is at once vinous and elegant, crisp and complex, carried by delicate floral and red fruit notes. As for the RD 2002 (recently disgorged), it offers an intense and flavourful profile of rare persistence, confirming all the distinction that a Grand Champagne can carry.
