This famous Aÿ house, founded in 1829, is still family-owned, and Joseph Bollinger's great-grandson gave way in 2008 to Jérôme Philipon. Bollinger is probably the embodiment of purist Champagne, vinified in small barrels. Bollinger has discreetly developed his own style towards greater accessibility, without losing his original requirement, producing superbly vinous and deep Champagnes of extreme finesse, real table wines.

The production of Champagne is ensured by a vineyard of more than 166 hectares of Grands and Premiers Crus, which covers 60% of the total production (while the reamining 40% is ensured by purchased grapes). This vineyard is mainly made up of Pinot Noir (102 Ha), then Chardonnay (39 Ha) and 25 Ha of Pinot Meunier. The extreme quality of the cuvées is probably due to the fact that some of the reserve wines fermented in small oak barrels are kept in magnums for 5 to 12 years and then incorporated into the blend of non-vintage Brut. This is rare enough to be emphasised, and we can qualify this method as a true marker of the famous Bollinger taste. The Bollinger house is at the highest level in all its cuvées, whether in the Brut Spécial Cuvée, the house's true signature, of a rare volume, with a creamy bubble, but of balanced style, between power and finesse. The Brut La Grande année 2007 vintage marks a dynamic profile supported by delicate citrus notes. BChampagne Bollinger brut Rosé is both vinous and elegant, crunchy and complex, supported by delicate floral and red fruit notes. As for the RD 2002 (recently disgorged), it offers an intense and tasty profile, of a rare persistence which confirms the whole race that a Grand Champagne can wear. Lovers of vinous, powerful and complex Champagne will appreciate the range from Bollinger, whose elegance marked by depth and finesse, will delight Champagne lovers based on a dominant base of Pinot Noir.
