Domaine Pascal Cotat covers just 2.3 hectares, situated on the steep slopes of Chavignol, making it one of the smallest producers in the Sancerre appellation. Harvesting is done by hand using a winch-cart system adapted to the steepest gradients, and the wines are aged in demi-muids, without fining or filtration, guaranteeing wines of remarkable purity and authenticity.

The wines of Pascal Cotat estate are built for aging. Their aging potential is estimated at between 15 and 20 years, which is exceptional for a Sancerre. The expression, often restrained in youth — notes of almond, lemon, and hawthorn — explodes after a minimum of two or three years of cellaring. It is therefore recommended not to open them too early in order to fully enjoy their aromatic complexity.

Both estates share the same family origins. From 1947 until the early 1990s, the Cotat family, under the direction of brothers Francis and Paul, produced their wines in a shared cellar before bottling them under two distinct labels. Upon their retirement, the brothers passed their vineyards on to their respective sons: Pascal, son of Francis, and François, son of Paul. Today, the two cousins vinify completely independently, with slightly different styles, but the same passion for the great terroirs of Chavignol. 

Pascal Cotat estate offers two emblematic white Sancerre cuvées, "La Grande Côte" and "Les Monts Damnés", both crafted from Sauvignon Blanc. La Grande Côte, on predominantly clay-limestone soils, produces full-bodied and mineral wines, while Les Monts Damnés, south-facing on a hillside with an impressive gradient, offers wines with smokier notes and a pronounced acidity. Two distinct expressions of terroir, yet both considered among the finest white bottles of the Loire.

Pascal Cotat estate is not certified organic, but cultivates its vines according to principles close to organic farming: no pesticides are used on the vines, only indigenous yeasts are used during fermentation, and the lunar calendar guides racking operations. Rigorous soil work and particularly meticulous pruning yield grapes of exceptional quality. A philosophy aimed above all at faithfully revealing the character of the Chavignol terroir.

The wines of Pascal Cotat estate stand out for their aromas of candied citrus, exotic fruits, and a saline, chalky finish, making them ideal companions for a wide variety of dishes. They pair magnificently with noble fish (sole meunière, pike-perch with beurre blanc), seafood, or aged goat's cheeses — a classic pairing with Crottin de Chavignol, the emblematic cheese of the very village where these wines are born. Their mineral tension and freshness also make them excellent gastronomic wines.

The steep hillside of the Monts Damnés, with its vertiginous slope, is worked here with the help of a winch, and it is from this calcareous rock that the wine draws its minerality and all its personality. In a blind tasting, one can even find an obvious kinship with the wines of Chablis in Burgundy. The Domaine Pascal Cotat was one of the first to cultivate its vines in harmony with the terroir, so that each cuvée reflects the typicity of its plot. The Sancerre Grande Côte from Pascal Cotat is positioned on a predominantly clay-limestone soil, very rich in clay. Here, rich and mineral wines are produced, with aromas of citrus, boxwood, white flowers, and flint. Balance, depth, power, purity and length define the main characteristics of this great bottle. The saline finish adds a touch of character. The Sancerre Monts Damnés from Pascal Cotat comes from 35-year-old vines, south-facing, on a hillside with an impressive elevation change. It delivers smokier notes and is very much marked by a great vivacity. The harvest is done by hand and at very high maturity. The Domaine Pascal Cotat produces wines that require patience, lest you miss out on the main gustatory qualities that such great wines have to offer. It is advisable not to approach them before a minimum of 5 years, in order to allow the restrained flavours of their youth time to develop. Their ageing potential is 15 to 20 years. Naturally, as the production of Domaine Cotat Pascal is confidential, the whole world is clamouring for such wines, and they are difficult to obtain! Pascal Cotat is therefore a major reference of the Sancerre appellation, and it is advisable to seize the opportunity to purchase his cuvées, as over time, the bottles from the domaine provide a true insight into the very best of Sancerre wines.
