Domaine Boulay does not use any chemical inputs, pesticides or herbicides. Here, grass cover is practiced, which stabilizes and promotes soil life and stabilizes them when they are very steep like the Clos de Beaujeu (slope of over 60%). The Sancerre Tradition from Domaine Gérard Boulay is a perfect entry-level wine, with powerful fruitiness, balance and minerality. The Gerard Boulay Sancerre Monts Damnés cuvée is one of the most renowned in Sancerre (on the Chavignol side). The estate produces an iodized wine with great minerality and generous fruitiness (the 40-year-old vineyard parcel, covering 1 hectare, faces due south and sits on Kimmeridgian marl subsoil similar to those found in Chablis, in Burgundy). Vinification takes place in aged barrels, with one year of aging on lees and a period in vats to rebalance the wine. We recommend enjoying it between 5 and 10 years. The Sancerre Clos de Beaujeu from Gérard Boulay, also from a one-hectare parcel in the Cul de Beaujeu area, displays a dizzying slope of nearly 60% in places. The vines are 50 years old, and the subsoil, rich in fossilized oyster shells, benefits from superb east/southeast exposure. The Clos de Beaujeu Gerard Boulay is very ample and of great purity, with substantial body, notes of white and exotic fruits, and a spicy finish. Its aging potential is at least 10 years, making it an excellent table companion. Since 2010, Domaine Boulay has also produced a cuvée called Sancerre La Côte, from a small parcel located on the famous Grande Côte de Chavignol, an exceptional terroir with very shallow clay-limestone soil, expressing wonderfully the mineral finesse of the terroir, but also a deep solar character. The final white wine cuvée from Domaine Boulay, the Sancerre Comtesse, is particularly sought after by lovers of great Sancerre. It is located at the bottom of the famous Monts Damnés parcel, on terroir with thicker clay and 70-year-old low-yielding vines. The wine displays pure and expressive fruit, great richness, while maintaining tension and minerality. A wine to keep for 20 years. In red wine, the Oriane cuvée from Gérard Boulay comes from a parcel planted on the Coteau des Cheneaux, and pays homage to the style of Henri Jayer, as it comes from a long-infused pinot noir, aged in 50% new barrels. In the 2015 vintage, very sunny, Oriane is highly generous, superbly concentrated, with aromatics of black cherry, blackberry, pepper and licorice. Ample, mineral and silky, it is recommended for pinot noir enthusiasts. Note that Domaine Boulay has had a new cellar for several years with ultra-modern facilities that allow it to gain even more aromatic precision across all its cuvées. The wines from Domaine Gerard Boulay are generous and accessible when young, but their true dimension lies in their ability to improve with cellar aging for 10 to 20 years. One only needs to taste the 1997 vintage to understand that the excellence of such wines may take a few years to reveal itself. Domaine Boulay ranks at the top of its appellation and is recommended without any hesitation.
