Frequently Asked Questions

domaine Edmond Vatan is one of the most discreet and sought-after wine estates in the Sancerre appellation. Based in the village of Chavignol in the Cher department, it produces only around 4,000 bottles a year, a tiny quantity that explains how difficult its wines are to obtain. This extreme rarity, combined with a firmly artisanal philosophy and a refusal to engage in commercial promotion, gives the estate an almost mythical aura among lovers of fine white wines.

Clos La Néore is a single-hectare family monopole nestled in the heart of the Monts Damnés, the most emblematic hillside of Chavignol, facing due south. This ideal positioning encourages a slow and gradual ripening of the grapes. The Vatan family has cultivated this site for thirteen generations, a rare continuity that speaks to the estate's deep attachment to this singular place.

Edmond Vatan, born in 1929, reigned for more than sixty years over the estate before illness forced him to slow down in 2007. His daughter Anne, a brilliant archaeologist trained at the École du Louvre, took over the winemaking in 2008. Edmond passed away in January 2022, leaving behind a legacy of cult wines that Anne continues to produce today on her own. This family transmission, marked by rigour and passion, is at the heart of the estate's identity.

Domaine Edmond Vatan focuses on a single cuvée: Sancerre Clos La Néore, an exceptionally rare white wine made from 100% Sauvignon Blanc. It stands out for its vibrant minerality, freshness and aromatic depth. The Kimmeridgian marl and Jurassic limestone soils where the vines grow lend it a saline, mineral character that emerges and intensifies with age.

The philosophy of Domaine Edmond Vatan is based on minimal human intervention. Fermentation is carried out with indigenous yeasts in large neutral wood foudres of 600 litres, at least a century old, after which the wine is aged in these same vessels before being bottled without filtration or fining, in May, when the barometric pressure is deemed optimal. This instinctive and non-interventionist approach allows the terroir to express itself with complete sincerity.

The wines of Domaine Edmond Vatan are highly sought after by enthusiasts for their immense aging potential. In the way they develop with age, they have more in common with the great Chablis wines of Domaine Raveneau or Domaine Dauvissat than with most Sancerres. To enjoy them fully, keep them at a stable temperature between 10 and 13 °C, away from light and vibrations, and give them several years in the cellar before opening.

History of Domaine Edmond Vatan

The history of Domaine Edmond Vatan is a family story spanning centuries, deeply rooted in the vineyards of Sancerre. As early as the 16th century, property deeds recorded vines and a cellar in Chavignol belonging to a branch of the family from the neighboring village of Bué. In the 18th century, the Vatan family acquired the emblematic La Néore plots within the Monts Damnés, cementing their presence on this exceptional terroir.

At the beginning of the 20th century, Robert Vatan, founder of the modern estate, settled in Chavignol and learned from his uncle Louis Léon Maréchal, a master of traditional methods. He passed this legacy on to his son Edmond, born in 1929, who joined the estate in 1947. Tireless, Edmond tended five hectares of vines for more than 60 years, influenced by legendary figures such as Paul and Francis Cotat and Henri Jayer. A humble, forward-thinking farmer, he replanted Clos La Néore in 1970 using massal selection, limiting yields to bring out the best in the grapes.

In 2007, illness forced Edmond to slow down; his daughter Anne, an accomplished archaeologist trained at the École du Louvre who holds a doctorate, took charge of winemaking in 2008. Passionate about history and terroir, she had expressed a desire to return to the family vines as early as the 1990s. With her husband Nady Foucault, an icon of Clos Rougeard, at her side, Anne carries on her father’s legacy with unwavering fidelity, making the estate a global beacon for Sancerre. Edmond passed away in January 2022, leaving a legacy of cult wines. Today, Anne runs this jewel on her own.

Terroirs and Vines of Domaine Edmond Vatan

Domaine Edmond Vatan draws its magic from an exceptional terroir: Clos La Néore, a one-hectare family monopole nestled in the heart of the Monts Damnés, Chavignol’s most emblematic hillside. This steep, south-facing site halfway up the slope enjoys ideal sun exposure, encouraging the grapes to ripen slowly and fully. Its soils of Kimmeridgian marl and Jurassic limestone, rich in fossilized shells, give the wines a vibrant saline minerality, reminiscent of great Chablis in their earthy backbone.

The Sauvignon Blanc vines, aged 40 to 50 years, are pruned severely to keep yields exceptionally low, at around 35 to 40 hectoliters per hectare—half the local average. Practicing organic viticulture without synthetic inputs or official certification, Anne Vatan harvests late, after her neighbors, to pick fruit at optimal ripeness: juicy flesh, flavorful skins and seeds. This approach respects the natural cycle and draws on ancestral methods, allowing the century-old vines to take full advantage of the limestone beneath them and produce grapes concentrated with green, fruity and spicy aromas.

Winemaking at Domaine Edmond Vatan

Winemaking at Domaine Edmond Vatan is a minimalist art, faithful to a tradition unchanged for generations, in which human intervention gives way to terroir. It begins with gentle pressing to preserve the integrity of the fruit. Spontaneous fermentation with native yeasts takes place in enamel-lined tanks or old, neutral, century-old 600-liter oak barrels, without temperature control. Edmond relied on his nose, judging the aromas to adjust natural aeration.

Aging continues until late the following spring, with just two rackings to gently clarify the wine on its fine lees, encouraging aromatic complexity and a silky texture. Neither fining nor filtration alters its purity; sulfur is used sparingly, limited to burning a sulfur wick in the empty barrels after bottling. Bottling takes place in May under optimal barometric pressure, in keeping with lunar and seasonal rhythms. Since 2018, the cuvées have been released only in magnums, an ideal format for aging. This instinctive philosophy, inherited from Edmond and upheld by Anne, produces wines of astonishing vitality, where mineral freshness dances with generous fruit.

The cuvée of Domaine Edmond Vatan

Domaine Edmond Vatan focuses on a single iconic cuvée: Sancerre Clos La Néore, an exceptionally rare white wine made entirely from Sauvignon Blanc and produced only in magnums since 2018. Sourced exclusively from the estate’s Clos La Néore monopole plot, this wine reaches extraordinary heights of balance between richness and finesse, density and mineral vibrancy. Its complex nose offers ripe white fruit, zesty citrus (lemon, mandarin), herbal notes (eucalyptus, mint, verbena) and spice (ginger, star anise), against a stony, saline and floral backdrop. On the palate, it is crystalline and airy, shaped by refined acidity and lingering flavors of peach, lychee, sea salt and green tea, with a chalky salinity that keeps the mouth watering.

The vintages reveal distinct profiles while remaining true to the Néore identity: the 2016 offers remarkable complexity, vibrant green energy and earthy intensity, and is built to age for 10 to 20 years; the 2017, still young, has notes of cut grass and wet stone and promises to develop nuanced tropical flavors; the 2019 impresses with its expansive concentration; and the 2021 excels in its long saline finish and subtle freshness. All have phenomenal longevity—a 1996 still tastes defiantly youthful! With only 4,000 magnums produced each year, these cuvées are collectors’ wines for connoisseurs, ideal with seafood, goat cheese or Asian dishes.

To own a Clos La Néore is to own a piece of Sancerre’s soul—a wine that graces the finest tables and the most coveted cellars.
