Just a stone's throw from Épernay, at the gateway to the Grande Vallée de la Marne, Domaine Antoine Bouvet embodies a new generation of Champagne winegrowers who combine family heritage, natural viticulture and an absolute commitment to quality. Established across five hectares of vines spread over three villages classified as Premier Cru — Mareuil-sur-Aÿ, Bisseuil and Avenay-Val-d'Or — this small family estate produces rare, vibrant Champagne wines of great aromatic precision. With production deliberately limited to a few hundred bottles per cuvée, the wines of Antoine Bouvet captivate the most discerning enthusiasts as well as the finest gastronomic tables.
The history of Domaine Antoine Bouvet begins in the 1970s with Guy Bouvet, his grandfather, founder of Champagne Guy Bouvet in Mareuil-sur-Aÿ. Guy Bouvet managed his estate largely on his own, with the majority of his 5 hectares sold to Bollinger, while cultivating a few plots spread across the villages of Mareuil-sur-Aÿ, Avenay-Val-d'Or and Bisseuil. Antoine's father chose a different professional path — accountancy — leaving the vines dormant for a generation.
Antoine nonetheless benefits from the extraordinary work accomplished by his grandfather on the plant material front: old massal selections form the wealth of his vines, their great age allowing them to reach deep into the chalky soils, while their genetic diversity brings an unparalleled complexity.
From a young age, Antoine nurtured a keen interest in the family activity. He learned from his grandfather the joy of careful work, respect for the land and the rigour of cellar work, so essential for crafting great Champagnes. After training at the Viticampus in Avize, he took over his grandfather's vines in 2011 and officially assumed leadership of the estate in 2013. Today, his brother Maxime has joined him to support this wonderful family venture. The tribute paid to Guy Bouvet is visible right down to the bottle labels — a moving way of perpetuating the transmission between generations.
Antoine Bouvet's vineyard draws all its strength from an exceptional geographical positioning. All the vines are located across the three Premier Crus of Bisseuil, Mareuil-sur-Aÿ and Avenay-Val-d'Or, in the Grande Vallée de la Marne. These three villages, nestled at the eastern end of the Marne Valley at the heart of the Montagne de Reims, benefit from deep chalky soils and an ideal exposure that endow the wines with a distinctive minerality, a natural freshness and a tension characteristic of great terroir Champagnes.
The defining characteristic of the vineyard lies in its vines grown from massal selections. When the winegrower wished to replant a plot, rather than purchasing a plant from a specialist, he took a cutting from one of his own vines. This technique preserves a high quality of production to obtain an exceptional raw material. These vines, averaging around forty years of age — some dating back to 1964 — drive their roots deep into the chalky rock, drawing on rare nutrients that translate directly into the complexity and depth of the wines.
Half of the vineyard is cultivated following biodynamic methods: soil work with grassing and ploughing, and a complete abandonment of chemical herbicides. Since 2016, the entire vineyard has been managed under 100% biodynamics. This bold choice reflects the philosophy of a committed winegrower: to preserve soil life, respect natural balances, and allow the Premier Cru terroir to express itself without chemical intervention.
Both in the cellar and in the vineyard, Antoine Bouvet practises the art of considered minimalism. His winemaking philosophy rests on a simple yet demanding principle: to intervene as little as possible, allowing the raw material — of irreproachable quality — to speak for itself.
Fermentations are carried out using indigenous yeasts naturally present on the berries, and sulphur is used in minimal quantities. This approach, which stands in radical opposition to the standardised practices of the large Champagne industry, produces wines of remarkable authenticity and vibrancy. Sulphite levels are kept close to the detection limit, sometimes as low as 17 mg/L, well below the permitted thresholds.
The wines are aged in barrels — exclusively used, neutral oak casks that impart no parasitic wood character but allow for slow, controlled micro-oxygenation, a source of complexity and texture. This light oxidative touch, truly the estate's signature, adds complexity to the aromas without ever masking the purity of the fruit or the chalky minerality.
The wines spend approximately eight months in oak barrels, before aging on the lees for around 36 months, which endows them with depth, fine bubbles and length on the palate. Disgorgement is carried out by hand, with very low dosage — or none at all for the Brut Nature cuvées. Production is deliberately very limited, at a maximum of 1,000 bottles per cuvée, sometimes far fewer, making these rare and highly sought-after wines on the grower Champagne market.
Les Monts de la Vallée, Blanc de Noirs
The estate's flagship cuvée, Les Monts de la Vallée is a Blanc de Noirs Champagne of great elegance, crafted from 100% Pinot Noir, with vines located at the far eastern end of the Marne Valley, on the terroirs of Bisseuil, Mareuil-sur-Aÿ and Avenay-Val-d'Or, all classified as Premier Cru, with an average vine age of 40 years. Vinified for 8 months in oak barrels, then aged for approximately 36 months on the lees, with no final dosage, this Champagne reveals a lightly tinted colour that heralds the richness of pure Pinot Noir. On the nose, aromas of fresh red fruits — wild strawberry, cherry — complemented by floral nuances and a delicate chalky minerality. On the palate, the balance between freshness and structure is remarkable, with a long, taut and saline finish.
Saignée de Bisseuil, Rosé
The Saignée de Bisseuil cuvée is a rosé de saignée Champagne in Brut Nature, 100% Pinot Noir, sourced from the Les Pautes plot planted in 1964 on the Bisseuil terroir. These sixty-year-old vines, among the oldest in the estate, produce a wine of exceptional concentration and depth. The cuvée is entirely undosed, with 1 g/L of residual sugar, and total sulphites hover near the detection limit. The deep pink robe with coral highlights heralds an expressive nose of raspberry, strawberry and flowers, underpinned by a light buttery and creamy touch. On the palate, the gourmand and almost flattering character of the rosé combines with the vinosity of the Pinot Noir, while a remarkable tension and freshness prevent any heaviness, making this wine furiously gastronomic.
Bisseuil, Pinot Noir & Chardonnay Blend
From the Premier Cru village of Bisseuil, this Champagne expresses great precision and chalky elegance. Its freshness, fine bubbles and aromatic purity make it an ideal cuvée at the table. This equal-parts blend of Chardonnay and Pinot Noir incorporates a portion of reserve wine that brings early complexity and beautiful layering, giving the wine a sense of fulfilment from the moment of disgorgement. Floral nose, a straight palate, chalky minerality, long and saline finish: a vibrant wine, ideal for gastronomy.
Les Coutures, Chardonnay & Meunier
The Champagne Les Coutures is an Extra Brut made from a blend of Chardonnay and Meunier. These grape varieties come from a single plot containing the estate's finest vines, planted in 1957. This exceptional vintage of vines endows the cuvée with a deep minerality and an uncommon fineness of bubble. Les Coutures stands out for its great aromatic finesse, with notes of citrus, white flowers and a chalky minerality characteristic of the soils of the Marne Valley.
Mareuil-sur-Aÿ, Blanc de Noirs
Pure Pinot Noir from three different plots: Sur le Mont, Grateuil and Faubourg d'Enfer, in the commune of Mareuil-sur-Aÿ, classified as Premier Cru. A true Brut Nature, with no dosage. Vinified and aged under wood, this Blanc de Noirs is distinguished by its elegant structure, fine tension and notes of ripe fruit, candied citrus and flint. A wine of character, precise and generous. It is the quintessence of Champenois Pinot Noir: powerful yet always guided by a refined freshness and a deep calcareous minerality. To be paired with roasted poultry, fine game or pressed-paste cheeses.
Les Monts de la Vallée Rosé
The rosé expression of the estate's emblematic cuvée, this Champagne combines the generosity of Pinot Noir with the vivacity of Chardonnay. This blend showcases the terroirs of Bisseuil, Mareuil-sur-Aÿ and Avenay-Val-d'Or, all classified as Premier Cru. The saignée portion of Pinot Noir in the blend brings colour, fine tannic structure and vibrant red fruitiness. A pleasurable Champagne, silky and elegant, with a fruity flavour, equally delightful as an aperitif or paired with light, iodine-accented cuisine.
