The History of Château Pavie

Although renowned worldwide today for its wines, Domaine de Château Pavie has very ancient origins. The vineyard slopes were originally devoted to growing peach trees until Late Antiquity. The name “Pavie” comes from the variety of peach once grown on this land. It was not until much later, at the end of the 19th century, that the estate began to acquire the winemaking reputation it enjoys today.

In 1873, wine merchant Ferdinand Bouffard began bringing together neighboring plots to create a single contiguous vineyard. Even so, each plot was managed independently until Bouffard’s death. Under his successor, Albert Porte, the name Château Pavie began to gain prominence. In 1943, the Valette family took over the estate and helped Château Pavie achieve Premier Grand Cru Classé B status in 1955. The modern history of Château Pavie truly began in 1998, however, when Gérard Perse purchased the estate. Under his leadership, the vineyard underwent a radical transformation. Gérard Perse made major investments and introduced rigorous management, enabling Château Pavie to rise through the ranks and become a Premier Grand Cru Classé A in 2012. This status symbolizes the estate’s excellence and international recognition.

Château Pavie’s 2000, 2010, 2009, 2005, and 2016 vintages received scores of 100/100 from Robert Parker. The 2017 and 2018 vintages follow closely at 99/100, while the 2015 vintage scored 98/100.

The Terroirs and Vines of Château Pavie

One of Château Pavie’s greatest strengths is the diversity of its terroirs. Located on the southeastern slopes of Saint-Émilion, the vineyard benefits from exceptional topography and exposure that favor high-quality viticulture. The estate covers 42 hectares divided among three distinct principal terroirs, each contributing to the richness and complexity of the wines produced.

The limestone plateau: This terroir rises to approximately 85 meters above the Dordogne. Its clay-limestone soils rest on asteria limestone. This white, nutrient-poor, well-drained soil provides ideal conditions for growing vines, particularly Merlot.

The slope: At an intermediate elevation of 55 meters, the soils consist mainly of fine clay-limestone earth over Fronsadais molasse. Here, the combination of clay-rich soil and full southern exposure encourages grape ripeness, particularly for Cabernet Franc and Cabernet Sauvignon.

The foot of the slope: At approximately 35 meters in elevation, this part of the estate has brown colluvial soils with river sands deeper down. This diversity allows Château Pavie to grow vines suited to each soil type, particularly late-ripening varieties such as Cabernet Sauvignon.

The vines, which average 43 years of age, are carefully tended. Pruning is meticulously controlled, with very low yields to concentrate the grapes’ aromas. The south-facing exposure and natural drainage of the slopes are decisive factors in grape quality, allowing optimal ripening even in the most challenging vintages.

Winemaking at Château Pavie

Winemaking at Château Pavie combines meticulous expertise with modern technology, adapted to each vintage to bring out the best in the grapes. It all begins with hand harvesting, during which every bunch is carefully selected. Rigorous sorting takes place first in the vineyard, then on a double sorting table at the winery.

Once sorted, the grapes are conveyed by belt to temperature-controlled wooden vats for cold pre-fermentation maceration, which generally lasts eight to nine days. This technique preserves the freshness of the aromas while preparing the grapes for fermentation. Malolactic fermentation then takes place in new barrels, softening the wines and adding roundness and complexity.

Aging takes place in French oak barrels for 18 to 32 months, depending on the vintage. The proportion of new oak used for the principal cuvées ranges from 70 to 100%. This careful attention to every stage of winemaking produces wines of great complexity, with rich aromas and silky tannins.

Château Pavie produces several signature cuvées, each expressing the unique character of its terroir.

Château Pavie

The estate’s principal wine, classified Premier Grand Cru Classé "A", comes from its oldest vines. It is composed primarily of Merlot (65%), with Cabernet Franc (25%) and Cabernet Sauvignon (10%). On the palate, it stands out for its power and intensity, with notes of ripe black fruit, truffle, and licorice. Made for aging, this wine gains complexity over time. It generally needs 15 to 20 years to express its full potential.

Arômes de Pavie

The estate’s second wine, which has borne this name since the 2005 vintage, comes from young vines less than 10 years old. Though less imposing than the first wine, Arômes de Pavie is nonetheless a wine of great quality. It is made with the same care but is intended to be more approachable in its youth, with fruity aromas and a softer texture.

Château Pavie Decesse 

Sourced from separate plots on the estate, this wine is also highly sought after for its depth and complexity. It expresses the mineral and chalky characteristics of Saint-Émilion’s limestone terroir particularly well.
