Domaine Dujac was founded in 1968 by Jacques Seysses, who was not originally from Burgundy but became a winemaker by vocation. Passionate about wine from childhood thanks to his father, a great gourmet, he decided at the age of 25 to leave the business world. He trained under Gérard Potel at Domaine de la Pousse d'Or in Volnay, before purchasing the Domaine Graillet in Morey-Saint-Denis. The name "Dujac" is simply a contraction of "du Jacques", an affectionate nod to the founder. Today, it is the second generation — Jeremy, Alec and Diana Seysses — who carry on this family legacy with the same exacting standards.

The Dujac estate has been certified in organic farming since 2011 and has been managed according to biodynamic principles since 2003. In practice, this translates into manual ploughing of the soils, the absence of herbicides, and the occasional use of organic compost to nourish microbial life. The estate considers that wine is made first and foremost in the vineyard: the winemaker's intervention in the cellar must remain as discreet as possible to let the terroir speak.

The most celebrated crus of Domaine Dujac are unquestionably the Clos de la Roche and the Clos Saint-Denis. The former yields fruity, mineral and spicy wines underpinned by powerful tannins, while the latter tends towards fruity and floral notes with silky tannins. The estate also produces renowned grand crus such as Bonnes-Mares, Charmes-Chambertin, Chambertin, Échezeaux and Romanée-Saint-Vivant, with a cellaring potential of 20 years and beyond.

Located in Morey-Saint-Denis, Domaine Dujac owns a heritage of vines across the most prestigious appellations of the Côte de Nuits and the Côte de Beaune: Chambolle-Musigny, Vosne-Romanée, Gevrey-Chambertin, Clos de la Roche, Charmes-Chambertin, Échezeaux, as well as Puligny-Montrachet. This wide range of appellations, spread across nearly 17.5 hectares, reflects the domaine's ambition to express the exceptional diversity of Burgundian terroirs.

The wines of Domaine Dujac are characterized by a vinification with whole bunches, approximately 90% unstemmed, which gives them structure, great aromatic complexity and much delicacy after a long ageing. The wines are aged in barrels for 14 to 18 months, and the domaine's philosophy favours suppleness over power. This minimalist, non-interventionist approach is a strong stylistic signature that has distinguished Dujac wines since their very first cuvée.

With a philosophy centred on respect for nature and minimalist winemaking, the wines of the Dujac estate captivate lovers of great Burgundies with their elegance, complexity and exceptional ageing potential. To enjoy them to the fullest, it is advisable to store them in a cellar at a constant temperature of around 12 °C, away from light and vibrations. The grand crus can thus evolve serenely for two decades or more, progressively revealing the full breadth of their aromatic palette.

History of Domaine Dujac

Founded by Jacques Seysses in 1968, Domaine Dujac was born from a visceral passion for wine, inherited from his father, a gastronome and lover of great crus. After working in the family Belin biscuit company, Jacques, then aged 25, decided to follow his calling as a winemaker. He honed his expertise alongside Gérard Potel at Domaine de la Pousse d'Or in Volnay, before acquiring the Domaine Marcel Graillet in Morey-Saint-Denis, which he renamed Dujac — a nod to his first name. In 1973, he was joined by his wife Rosalind, who became a key figure in the estate.

Over the decades, the estate grew from 5 hectares to 17.5 hectares, thanks to strategic acquisitions in prestigious appellations such as Gevrey-Chambertin, Vosne-Romanée and Puligny-Montrachet. Since 1998, the second generation — comprising Jeremy, Diana and Alec Seysses — has carried on the family heritage with the same commitment to quality. In 2011, the estate obtained organic farming certification, marking its dedication to sustainable and environmentally responsible viticulture. Today, Domaine Dujac is recognised as one of the jewels of Burgundy, producing wines sought after the world over.

Terroirs and Vineyards of Domaine Dujac

Domaine Dujac cultivates a mosaic of exceptional terroirs, located primarily in the Côte de Nuits, with forays into the Côte de Beaune since 2014. Its vines, spread across renowned appellations such as Morey-Saint-Denis, Chambolle-Musigny, Vosne-Romanée and Gevrey-Chambertin, benefit from varied soils, ranging from compact limestone to fossil-rich marl. These terroirs lend the wines a diversity of expression, combining structure, finesse and aromatic complexity.

The estate places paramount importance on vineyard work, firmly believing that wine is made first and foremost in the vines. The soils are ploughed by horse-drawn plough, without herbicides, and occasionally enriched with organic compost to stimulate microbial life. The vines, pruned using the Cordon de Royat or Guyot-Poussard method, have been farmed organically since 2008, with biodynamic practices integrated since 2003. This approach preserves the natural ecosystem and extracts the very best from the grapes, even in challenging vintages. With a dedicated team — averaging one person per two hectares — the estate ensures meticulous care for every plot.

Winemaking at Domaine Dujac

Winemaking at Domaine Dujac is founded on a non-interventionist philosophy, aiming to allow the terroir and the vintage to express themselves fully. The grapes, often vinified as whole clusters, are fermented with indigenous yeasts to preserve the authenticity of the aromas. The maceration, lasting approximately two weeks, includes gentle pigeage and soft pump-overs for a delicate extraction of tannins, favouring balance and suppleness.

After a gentle pressing, the wines are aged in oak barrels for 14 to 18 months, with a proportion of new wood tailored to each cuvée (up to 100% for the grand crus). The barrels, carefully selected and air-dried for two years, play a key role in refining the tannins, while preserving the freshness and elegance of the wines. This artisanal approach, inherited from Jacques Seysses and refined by the new generation, makes the cuvées of Domaine Dujac benchmarks for finesse and complexity.
