Jean François Ganevat, affectionately nicknamed "Fanfan" by those close to him, is a Jura winemaker established at the Combe de Rotalier since 1998. Before taking over the family estate, he forged his experience as a cellar master in Burgundy, notably at Jean-Marc Morey in Chassagne-Montrachet. Returning to his native Jura, he gradually built a worldwide reputation through a radically artisanal approach: strict single-plot selections, rare grape varieties, biodynamics and winemaking without additives. In 2018, the Revue des Vins de France named him winemaker of the year, definitively cementing his status as an icon of natural wine.

Yes, the Domaine Jean François Ganevat is entirely converted to biodynamics, Demeter certified since 2006. In practice, this means a complete absence of synthetic products, light ploughing carried out by horse, constant manual care and the application of biodynamic preparations in the vineyards, including horsetail, nettle, dandelion and silica infusions. The harvest is done by hand, and the winemaking follows the same principles: indigenous yeasts, no added sulphur for the vast majority of the cuvées, and ageing in old barrels. The wines of Domaine Jean François Ganevat shine particularly brightly in vintages that brought out the best of the Jura terroirs: 2020, 2018, 2016, 2011, 2010, and 2005 are regularly cited among the standout years to seek out. The 2011 vintage has even become legendary: the Chalasses Vieilles Vignes de 1902 cuvée was named wine of the year in 2014 by the Bettane & Desseauve guide. The Chardonnay and Savagnin whites have remarkable aging potential, while the Trousseau-based reds are appreciated relatively young for their freshness and finesse.

Domaine Jean François Ganevat is distinguished by an exceptional diversity of grape varieties. Jean-François works with the great Jurassian varieties such as savagnin, chardonnay, poulsard (or ploussard), and trousseau, to which pinot noir is added. But what makes the domaine truly unique is the cultivation of ancient and forgotten varieties of the Jura, such as enfariné noir, petit bécland, and scévillard. With no fewer than 25 different grape varieties across 13 hectares, Ganevat is one of the rare winemakers in the world to preserve such a living ampelographic heritage.

Domaine Jean François Ganevat produces between 35 and 50 different cuvées depending on the vintage, making it one of the Jura’s most prolific estates in terms of the diversity of its single-plot wines. Each cuvée comes from a specific plot, reflecting the winemaker’s philosophy: one soil, one grape variety, one cuvée. Among the most emblematic are Grandes Teppes Vieilles Vignes, the white Chalasses Marnes Bleues and Vignes de Mon Père. Jean François Ganevat also produces négociant wines with his sister Anne under the Anne et Jean-François Ganevat label, bringing total production to around 40,000 bottles a year.

History of Domaine Ganevat

Domaine Ganevat, located in the hamlet of La Combe in Rotalier, is a family estate whose history stretches back several centuries. Jean-François Ganevat is the 14th generation to cultivate this land, inheriting expertise passed down since 1650. The estate’s reputation truly took off in 1998, however, when Jean-François returned to the Jura to take over the family property after working as cellar master at the prestigious Domaine Jean-Marc Morey in Burgundy.

Drawing on his experience in Burgundy, Jean-François Ganevat transformed the estate by taking a more rigorous approach to vinifying individual parcels and adopting biodynamic principles in 2006. He also developed a passion for the Jura’s forgotten heritage grape varieties, reintroducing old varieties to his vineyards. Alongside his sister Anne, he launched a négociant business to meet growing demand for his wines while maintaining exceptionally high quality standards.

Today, Domaine Ganevat is known not only for its Jura wines but also for the distinctive wines from its négociant business, which offer wine lovers a varied experience of French terroirs.

Terroirs and vineyards of Domaine Ganevat

Domaine Ganevat’s vineyards cover 13 hectares across the steep slopes of the Jura. The area is a patchwork of soils, from blue marl and schist to clay-limestone. Each parcel has its own terroir, giving the estate’s wines a distinct character and exceptional depth.

A third of the estate’s vines are over 50 years old, and some century-old vines are planted with rare, forgotten grape varieties such as Enfariné Noir, Petit Bécland, and Scévillard. Alongside emblematic Jura varieties such as Chardonnay and Savagnin, Jean-François Ganevat also grows historic Jura varieties including Poulsard and Trousseau.

Biodynamics, practiced since 2006, is central to the work in the vineyards. Jean-François and his team strive to preserve the soil’s natural balance using plant-based preparations such as horsetail, nettle, and dandelion, while keeping copper and sulfur use to a minimum. This respect for terroir and meticulous attention to biodiversity allow the vines to produce grapes of incomparable quality, essential to making the estate’s great wines.

Winemaking at Domaine Ganevat

In the winery, Jean-François Ganevat follows a non-interventionist winemaking philosophy inspired by the methods of Jules Chauvet, a pioneer of natural wine. All the estate’s wines are vinified without additives, using native yeasts, and most cuvées are made with no added sulfur or only a minimal amount (just 1 g per liter for some cuvées). The reds, in particular, are vinified without any sulfur—a practice Jean-François has mastered with rare precision, ensuring the purity and longevity of his wines.

The reds undergo whole-cluster fermentation, adding aromatic complexity, while aging is long and carefully managed. The whites are aged for at least two years—and up to 11 years for certain cuvées, such as Les Vignes de mon Père—developing exceptional depth while retaining a vibrant freshness.

Jean-François Ganevat also experiments with various aging vessels, including demi-muids, terracotta jars, and Burgundy barrels, to tailor each cuvée precisely to its terroir. This meticulous approach brings out the nuances of each parcel and produces wines that are both vibrant and elegant.
