The history of Domaine Sylvain Cathiard et Fils begins in the 1920s, when Alfred Cathiard, originally from Savoie, settled in Burgundy to work at the prestigious Domaines de la Romanée-Conti and Lamarche. A visionary, he acquired his first vine plots in the 1930s, laying the foundations of a family estate dedicated to producing exceptional wines. At the time, the grapes were sold to négociants, a common practice. In 1940, his son André joined the estate and marked a turning point by deciding to bottle the wines produced, notably with the purchase of the iconic Vosne-Romanée 1er Cru Aux Malconsorts plot in 1972.

In 1985, Sylvain Cathiard, son of André, took the reins and gave the estate a new impetus. In 1995, he officially took over the family vines, consolidating the estate under the name Sylvain Cathiard. Since 2006, his son Sébastien has brought a modern vision, influenced by his experiences in Chablis, Bordeaux, and New Zealand. The grapes, harvested by hand at optimal ripeness, are entirely destemmed after rigorous sorting on a sorting table. A cold maceration of 10 days precedes a natural fermentation with indigenous yeasts, without any addition of SO2. The wines are then aged in French oak barrels, primarily from the Rémond cooperage, with a carefully adjusted proportion of new wood: 25 to 50% for village appellations, 50 to 75% for Premiers Crus, and up to 100% for the Grand Cru Romanée-Saint-Vivant. Since Sébastien's arrival, the use of new wood has been progressively reduced to favor the expression of the terroir.

The aging, which lasts 18 months, takes place without fining or filtration, allowing the wines to retain their natural character. A light dose of SO2 is added after malolactic fermentation to stabilize the cuvées.
