Domaine Ramonet is based in Chassagne-Montrachet, in the heart of Burgundy’s Côte de Beaune. Its vineyard covers 17 hectares across the villages of Chassagne-Montrachet, Saint-Aubin, Bouzeron and Pernand-Vergelesses, encompassing no fewer than 24 different appellations. Three generations of family stewardship underpin the estate’s philosophy, combining respect for tradition with a commitment to quality in every vintage.

Domaine Ramonet produces 70% white wines and 30% red Burgundies. The whites, sourced primarily from Chardonnay, are the estate's signature and concentrate the essence of its worldwide reputation. The reds, crafted from Pinot Noir, remain less well known but are no less outstanding in quality: they are refined and silky, and represent an excellent value for money.

Domaine Ramonet is one of the best-endowed owners of premier crus in Chassagne-Montrachet. It owns 7 Chassagne-Montrachet Premiers Crus, in addition to its plots in grand crus such as Montrachet, Bâtard-Montrachet and Chevalier-Montrachet, as well as vines in Puligny-Montrachet and Saint-Aubin. This exceptional parcel wealth allows the domaine de to offer a unique palette of terroirs, with each cuvée expressing with precision the nuances of its birthplace on the Côte de Beaune. 

Domaine Ramonet is among the few owners with parcels in several Côte de Beaune grands crus. Its vineyards include exceptional sites: Montrachet (0.2 ha), Bâtard-Montrachet (0.6 ha), Bienvenues-Bâtard-Montrachet (0.4 ha), and Chevalier-Montrachet (0.1 ha). These cuvées, made from old Chardonnay vines, are widely regarded as benchmarks by lovers of great white Burgundy wines.

Winemaking at Domaine Ramonet combines tradition and precision. For white wines made from Chardonnay, fermentation begins in stainless steel tanks before continuing in oak barrels, where the wines are aged on lees for 12 to 18 months. The proportion of new wood varies according to the appellation's ranking: more modest for village wines, it increases progressively for premier and grand crus, reflecting the hierarchy of terroirs and the pursuit of a perfect balance between mineral freshness and aromatic depth.

Service is a decisive step in fully appreciating the wines of Domaine Ramonet. The domaine's white wines are ideally served at around 11°C, in beautiful white Burgundy glasses. In their youth, an energetic decanting of about thirty minutes will allow them to develop their full aromatic potential. For older premier crus, the serving temperature can be raised slightly, to around 12-13°C, in order to let the complexity and depth accumulated over the years of ageing express themselves.

History of Domaine Jean-Claude Ramonet

It all begins in the late 1920s, when Pierre Ramonet arrives in Burgundy with next to nothing. He first buys grapes from local growers before being able to acquire, in 1934, his very first parcel in the premier cru Les Ruchottes in Chassagne-Montrachet. This wine very quickly attracts the attention of Raymond Baudoin, co-founder of the Revue du Vin de France, and of American importer Frank Schoonmaker, who introduces Ramonet wines to the United States as early as the 1930s. The estate grows patiently: several premier and grand crus in the 1950s, then the crowning jewel in 1978 with 0.26 hectares of the celebrated Montrachet, purchased outright. A vine exchange with Domaine Chartron brings, twenty years later, the Chevalier-Montrachet, while Saint-Aubin Le Charmois and new parcels in premier cru Chassagne join the portfolio in the early 1990s, followed by Bouzeron in 2011 and the Clos des Caillerets, formerly owned by Vincent Girardin, in 2014.

The third generation, shaped by the brothers Jean-Claude and Noël Ramonet, takes the helm in 1984 and elevates the estate to the status of a world reference. Roles are then clearly divided: Jean-Claude oversees winemaking, ageing and commercialisation, while Noël devotes himself entirely to work in the vineyard. From the mid-2010s, this organisation is formalised. The structure becomes the SCEA Jean-Claude Ramonet, and the labels henceforth bear the name of Jean-Claude, which explains the coexistence on the market of bottles signed Domaine Ramonet and others signed Jean-Claude Ramonet, without the quality or the provenance of the grapes being affected. Subsequently, a clearer separation is agreed upon by mutual consent between the two brothers: Noël chooses to continue cultivating his own parcels and then to deliver his harvest to Jean-Claude, who vinifies, ages and markets it as a négociant, in addition to his own cuvées. More recently still, Noël Ramonet has launched his own label, Noël Ramonet et Fils, with wines now produced separately, while Jean-Claude continues at the head of the historic estate, supported by his daughters Anne-France and Clarisse. This family evolution, common in Burgundy where successions often lead to the splitting of estates, explains the proliferation of labels bearing the Ramonet name, each corresponding to a distinct branch and project.

Terroirs and Vines of Domaine Jean-Claude Ramonet

The vineyard is concentrated primarily around Chassagne-Montrachet, a village situated at the southern end of the Côte de Beaune, whose clay-limestone soils rich in white marl and scree give the Chardonnay its breadth and minerality. The family holds eight premier crus there, among them Les Ruchottes, the birthplace of the estate, Les Caillerets, Les Vergers, Les Chaumées, Morgeot and La Boudriotte, as well as the Clos des Caillerets. The Montrachet hill, straddling Chassagne and Puligny, is home to the four grands crus of the house, whose surfaces are minuscule: approximately 0.26 hectares in Montrachet, 0.45 to 0.6 hectares in Bâtard-Montrachet, 0.4 to 0.56 hectares in Bienvenues-Bâtard-Montrachet, and barely 0.1 hectares in Chevalier-Montrachet.

The estate also extends into Puligny-Montrachet, with the premier cru Champs Canet and the lieu-dit Les Enseignères, as well as Saint-Aubin, where the premier crus Les Charmois and En Remilly offer taut Chardonnays with a remarkable quality-to-price ratio. Further south, Bouzeron contributes the golden Aligoté, and Pernand-Vergelesses the red climat Les Belles Filles. The viticultural philosophy rests on three pillars: old vines, severely controlled yields and respect for the terroir. The estate practices sustainable farming, tills its soils and excludes from its cuvées any grapes from vines younger than eighteen years, which guarantees consistent natural concentration and aromatic depth. All harvesting is done by hand.

Winemaking at Domaine Jean-Claude Ramonet

Winemaking is carried out in a resolutely traditional manner, without recipes or artifice. Fermentations are initiated solely by the indigenous yeasts present on the grapes, without inoculation or correction. The whites are pressed slowly and then barrelled into French oak casks, where they ferment and continue their ageing on the lees. Bâtonnage remains measured, the objective being to preserve tension and mineral definition rather than to seek richness.

Ageing lasts from twelve to eighteen months depending on the appellation, with a proportion of new oak graduated with precision: approximately 20 to 30% for village appellations, 30 to 50% for premier crus, and up to 70% for grands crus, whose structure easily absorbs this input. The reds benefit from strict sorting, gentle extractions and a more discreet oak ageing, in a style that favours the finesse of the tannin grain. The result is immediately recognisable: whites of great freshness, lively, ample and endowed with very fine length, capable of ageing over several decades, and reds that are dense, powerful and concentrated, yet always elegant.

The Cuvées of Domaine Jean-Claude Ramonet

The Bourgogne Chardonnay opens the range with a white wine sourced from the estate's vines around Chassagne, crafted with the same rigour as the higher crus: fresh citrus, white flowers, tension and an already highly distinguished chalky finish. The Bourgogne Aligoté, from old vines, surprises with its density and salinity. The Bouzeron, an appellation exclusively dedicated to golden Aligoté in the Côte Chalonnaise, acquired by the estate in 2011, is even more profound, with a remarkable mineral backbone and length.

The Chassagne-Montrachet Blanc village expresses the full generosity of the terroir, with ripe white fruits, hazelnut and finely integrated oak, offering an ample palate and a vibrant acidity. The Puligny-Montrachet Les Enseignères, a lieu-dit situated at the foot of the Montrachet, offers floral finesse and crystalline purity, and the Puligny-Montrachet 1er Cru Champs Canet adds density, complexity and a very high-level mineral length.

The Chassagne-Montrachet 1er Cru Les Ruchottes is the flagship wine of the house, sourced from the parcel acquired by Pierre Ramonet in 1934. Mineral and mentholated, it unfolds a powerful palate, a silky texture and exceptional length, with a cellaring potential of twenty years and more. The Chassagne-Montrachet 1er Cru Les Caillerets is perfectly balanced, with a dense body and aromas of candied citrus. The Chassagne-Montrachet 1er Cru Clos des Caillerets, a monopole acquired in 2014, pushes concentration further, in a register of rare elegance with a very persistent finish.

The Chassagne-Montrachet 1er Cru Les Vergers seduces with its freshness and volume, on citrus, with notes of caramel and dried fruits that emerge with age. The Chassagne-Montrachet 1er Cru Les Chaumées plays a more delicate tune, marked by fine minerality and a silky texture. The Chassagne-Montrachet 1er Cru Morgeot Blanc, also released under the name Abbaye de Morgeot, reveals itself as structured and rich, with ripe fruits, a freshness that balances the whole and a cellaring potential of ten to fifteen years. The Chassagne-Montrachet 1er Cru La Boudriotte Blanc combines power and persistence in an ample style tailored for fine gastronomy.

The grands crus represent the absolute pinnacle of the collection. The Bienvenues-Bâtard-Montrachet Grand Cru offers a finer, more floral reading of the terroir, with a vibrant salinity and a chalky finish. The Bâtard-Montrachet Grand Cru impresses with its restrained power, its aromas of candied white fruits, hazelnut butter and flint, and an opulent body supported by a refined acidity. The Chevalier-Montrachet Grand Cru, planted higher up on the slope and produced in only a few hundred bottles, stands out for its striking verticality and mineral purity. The Montrachet Grand Cru, acquired in 1978, remains the most mythical white wine in the world: of extraordinary complexity, it combines density, brilliance and an interminable persistence, with an ageing potential that exceeds thirty years.

On the red side, the Bourgogne Rouge offers an accessible and balanced Pinot Noir, with fresh fruit and a refreshing acidity. The Chassagne-Montrachet Rouge village is fruity and supple, for immediate pleasure. The Pernand-Vergelesses Les Belles Filles brings a delicate note, with raspberry and a spiced finish. The Chassagne-Montrachet 1er Cru Clos Saint-Jean gains in structure, with dark fruits, liquorice and firm tannins. The Chassagne-Montrachet 1er Cru Morgeot Rouge displays more body and depth. Finally, the Chassagne-Montrachet 1er Cru Clos de la Boudriotte represents the red pinnacle of the house, a family favourite since Pierre Ramonet: dense, powerful and concentrated, it unfolds a bouquet of black cherry, spices and undergrowth, a refined tannic structure and a length that develops superbly after a decade in the cellar.
