Frequently Asked Questions

Provence rosé is the natural ally of Mediterranean cuisine. Its freshness and vivacity make it an ideal companion for starters based on grilled vegetables, Niçoise salads or antipasti. With grilled fish and seafood, it reveals its mineral and iodine notes. For a tapenade or a socca, opt for a dry and fruity rosé with aromas of white peach and flowers. White meats in light sauces and ratatouille also pair very well with the more structured cuvées. As a general rule, serve your Provence rosé between 10 and 12°C to fully appreciate all its aromas.

Bandol holds a unique place in the Provençal wine landscape, and for several reasons. This coastal appellation in the Var department benefits from an exceptional microclimate, bathed by the Mediterranean and sheltered from cold winds by an amphitheatre of hills. But it is above all Mourvèdre, the king grape of the appellation, that gives Bandol reds their unique character. With a regulatory minimum of 50% in the blend and a mandatory ageing of 18 months in oak foudres, these wines develop complex aromas of garrigue, leather, black olive and spices. Their tannic structure allows them to age serenely for ten to twenty years, reaching a depth and elegance rarely matched in Provence.

Bandol red wine is unquestionably one of the most serious age-worthy wines in the south of France. Due to its high proportion of Mourvèdre and its mandatory ageing of at least eighteen months in large oak casks, it requires a patience that few Provençal wines demand. In its youth, between one and four years after the harvest, the tannins can appear austere and the wine relatively closed. It generally begins to open up and reveal its complexity around five to seven years. For the great cuvées from exceptional vintages such as 2019 or 2016, the peak is often reached between ten and fifteen years. Certain bottles from renowned producers can be kept without difficulty for twenty to twenty-five years, developing tertiary aromas of rare elegance.

Provence rosé wines are crafted from a palette of grape varieties emblematic of the region. Grenache, Cinsault and Syrah often form the base of the blends, contributing roundness, finesse and structure respectively. Mourvèdre, deeply rooted in the Bandol appellation, adds complexity and aging potential. Tibouren, a grape variety almost exclusive to Provence, offers highly characteristic floral and iodine notes. It is this diversity of grape varieties, often carefully blended, that gives Provençal rosés their delicate aromatic profile and their beautiful lingering finish.

Serving temperature is a determining factor in fully appreciating a Provence rosé. Contrary to popular belief, serving it too cold masks its aromas and diminishes the tasting experience. The ideal range is between 10 and 12°C: cool enough to preserve its vivacity and refreshing quality in warm weather, yet temperate enough to allow its notes of red fruits, white flowers and garrigue to express themselves. To achieve this easily, take the bottle out of the refrigerator about fifteen minutes before serving, or place it in a bucket containing equal parts cold water and ice. 

Provence red wine, often overshadowed by the fame of its rosés, nonetheless proves to be a gastronomic companion of great versatility. Cuvées based on Grenache and Syrah pair wonderfully with herb-marinated grilled lamb, slow-cooked Provençal daube or pressed cheeses such as Banon. The more structured reds from Bandol or Les Baux-de-Provence, dominated by Mourvèdre, call for heartier dishes: game in sauce, duck with olives or a shoulder of lamb slow-roasted with garlic and rosemary. For lovers of world cuisine, these wines also pair very well with lamb tagines with mild spices or Mediterranean mezze, their sunny and spiced character creating a natural dialogue with the flavours of the Mediterranean basin.
