The modern history of Mas Daumas Gassac began in the 1970s in Aniane, even though the probable founding of the original Daumas Gassac vineyard by St Benoît d'Aniane is estimated to date back to 780 AD. In 1970, Aimé and Véronique Guibert purchased the Mas, and after planting several new plots, they produced their first vintage in 1978. Aimé Guibert, who can be considered one of the pioneers of great wines from the Languedoc, passed away recently, in 2016. He had managed to capture the attention of the media and critics by producing atypical wines in the Languedoc, sourced from a little-known and remote valley.

History of Mas de Daumas Gassac

The adventure of Mas de Daumas Gassac has its roots well before 1971, stretching back to the monks of the Abbey of Aniane in the 8th century, who were already cultivating the first vineyards under the guidance of Saint Benedict of Aniane, adviser to Charlemagne. It was in 1970 that Véronique Guibert, an ethnologist with a passion for Celtic myths, and Aimé Guibert, descended from a line of glove-makers from Millau, fell under the spell of an old abandoned farmhouse on the banks of the Gassac river. Guided by their friend, the geologist Henri Enjalbert, they discovered an exceptional soil comparable to the great Burgundy crus.

In 1972, they planted 17,000 non-clonal Cabernet-Sauvignon vines, sourced from mass selections at Bordeaux châteaux. An underground cellar was built on the remains of a Gallo-Roman mill, taking advantage of cold water springs for optimal winemaking. The first vintage, in 1978, was supervised remotely by the legendary oenologist Émile Peynaud, who saw in it the birth of a great Languedoc cru. Bottled as a "table wine", this red with 80% Cabernet-Sauvignon was an immediate success, inaugurating the en primeur sales system still in use today.

The 1980s marked recognition: Gault & Millau described it as the "Languedoc Château Lafite" in 1982, followed by praise from The Times. The 1990s saw the birth of the Moulin de Gassac wines to preserve the local terroir, while the 2000s passed the torch to the Guibert siblings following Aimé's death in 2016. Vertical tastings every ten years, such as the one covering 30 vintages in 2014, bear witness to their ageing potential. Today, exported to 61 countries, these wines perpetuate the saga of pioneers who revolutionised the IGP Saint-Guilhem-le-Désert, transforming the Languedoc into a land of great wines.

Terroirs and Vines of Mas de Daumas Gassac

At the heart of the Hérault, the terroir of Mas de Daumas Gassac is a hidden treasure: deep glacial screes, rich in mineral oxides (iron, copper, gold) and poor in humus, accumulated during the ice ages and comparable to the soils of the Burgundian Côte d'Or. Perfectly drained, these soils force the vine roots to plunge deep, encouraging rare aromas and natural concentration. Surrounded by 1,000 hectares of wild garrigue, thyme, rosemary, lavender and strawberry trees, the 50-hectare vineyard is planted in small one-hectare plots, true clearings set within the forest, preserving biodiversity and ecological balance.

A cold microclimate, at a climatic altitude of 500 metres, brings an exceptional thermal amplitude: cool nights at 10°C even in summer, influenced by the Larzac and Arboussas massifs, delaying ripeness and preserving acidity. The vines, cultivated without chemical fertilisers or pesticides — only a compost of Larzac sheep manure is used — benefit from intuitive organic farming, with modest yields of 35 hl/ha. The estate houses a unique ampelographic museum: more than 40 non-clonal grape varieties, mass-selected from historic estates such as Château Margaux or Domaine Huet. For the reds, Cabernet-Sauvignon dominates at 80%, complemented by Cabernet Franc, Malbec, Merlot, Tannat, Petit Verdot, Syrah, Pinot Noir and rare varieties. The whites blend Viognier, Chardonnay, Petit Manseng and Chenin, with Marsanne, Roussanne and other curiosities from the Rhône, the Loire or even Italy. This diversity, enriched by Mediterranean scents, produces complex wines where each wine purchase reveals the wild splendour of this stable biotope, protected by birds and natural insects.

Winemaking at Mas de Daumas Gassac

Winemaking at Mas de Daumas Gassac scrupulously respects traditional Bordeaux methods, adapted to this unique terroir, under the legacy of Émile Peynaud. Manual harvesting, staggered by maturity, ensures rigorous sorting in the vineyard and in the winery. In a vat room of 30 stainless steel tanks, dug beneath the cold springs of the Gallo-Roman mill, slow alcoholic fermentation (8-10 days at controlled temperature) extracts complex flavours without excess. A new pneumatic press, installed in 2016, optimises juice extraction while avoiding bitterness.

For the reds, after destemming, a maceration of three to four weeks, with pump-overs, precedes malolactic fermentation in tanks. The wine is then aged 12-15 months in 400 Burgundian barrels of Allier and Nièvre oak (10-20% new), racked every three months and fined with egg whites, before bottling without filtration. The whites undergo a cold skin maceration at 10°C for 5-7 days, followed by fermentation at 20-25°C in stainless steel, a diatomaceous earth filtration and a second one before bottling. The Rosé Frizant, a saignée of young Cabernet-Sauvignon, sparkles via the Charmat method under pressure. With no added sulphur in the reds and minimal in the whites, these practices, complemented by quads, horses and sheep to limit soil compaction, enhance freshness and elegance, making each cuvée faithful to its terroir for a wine purchase that combines tradition and purity.

The cuvées of Mas de Daumas Gassac

The cuvées of Mas de Daumas Gassac form an iconic range, where each wine expresses the diversity of the terroir and invites exploration.

The Mas de Daumas Gassac Rouge, a signature blend of 80% Cabernet-Sauvignon and 20% of ten rare grape varieties (Cabernet Franc, Malbec, Merlot, Tannat, Petit Verdot, Syrah, Pinot Noir...), offers a nose of ripe black fruits, spices, liquorice and truffle. On the palate, luscious fruitiness, elegant tannins and an energetic finish; young (3 years), it enchants with its fruity freshness, while after 15-20 years it reveals tertiary notes of undergrowth and dried roses. The Mas de Daumas Gassac Blanc, blending Viognier, Chardonnay, Petit Manseng and Chenin (90%) with eight secondary varieties such as Marsanne or Fiano, captivates with its rich aromatic palette: peach, apricot, brioche and honeyed notes after 3 years, evolving towards fine oxidative flavours reminiscent of an old Sauternes after 6 years. Unctuous texture and lively acidity for a rare balance.

The Mas de Daumas Gassac Rosé Frizant, sparkling with fine bubbles from a saignée of Cabernet-Sauvignon on white clay, is a marvel of indulgence: fresh and fruity, it quenches thirst with aromas of red fruits and an enchanting lightness, perfect for summer.

The Cuvée Émile Peynaud, a tribute to the master oenologist since 2001, is a pure Cabernet-Sauvignon from the 1972 vines: intense, structured, with a backbone of freshness and powerful tannins, it expresses the terroir in its purest form, ideal for ageing 20 years and beyond.

Le Vin de Laurence, a naturally sweet wine inspired by Tokay and Vin de Constance, is born from a plot selection: opulent, with notes of candied fruits and spices, it embodies a "modest masterpiece" of the winemaker, perfect for memorable sweet-savoury pairings.
