The TOP winemakers of Beaujolais

A disciple of Jules Chauvet (a pioneer of natural wines), Yvon Metras worked alongside Marcel Lapierre and discovered through him natural winemaking (indigenous yeasts, little or no sulphur) as well as chemical-free viticulture. By immediately adopting a sound farming method based on ploughing, severe pruning and achieving low yields, harvests are carried out exclusively by hand at optimal ripeness. The bunches are then vinified whole (with stems) to bring structure, acidity and the racy notes that characterise the Yvon Metras estate. Semi-carbonic maceration in the traditional manner, so as to extract just the fruit and colour needed from the grapes, accompanied by fermentation with natural yeasts and very little (or no) sulphur to preserve the authenticity and purity of the Gamay grape variety. The Yvon Metras estate boasts magnificent terroirs such as "Grille midi" and "La Madone", as well as pre-phylloxera Gamay vines planted in 1898, from which it produces an exceptionally rare and highly sought-after cuvée among enthusiasts worldwide: the famous "Ultime" cuvée, a mythical Beaujolais cuvée that has helped establish its international reputation. This exceptional cuvée is in reality very rare, as it is only produced during exceptional harvests; it comes from the very old pre-phylloxera vines of the Yvon Metras estate, which have been subject to meticulous care and organic and biodynamic farming on sandy, silty and granite soils. Its natural vinification makes it a particularly sought-after wine for its red fruit aromas, fruity palate and great length. It is best to keep this bottle for 5 to 7 years, so that the tannins can soften and the aromas evolve towards greater complexity. With the Beaujolais cuvée "Madame Placard", the Yvon Metras estate offers a superb Gamay on silty sands, with fresh aromas and a delightful palate that make it a perfect aperitif wine. However, its seriousness and structured body allow it to stand up to more substantial dishes or a little cellaring. The Beaujolais cuvée "2ème mise" is made from the youngest vines in the Cercillon plot. The same method applies: manual harvest, whole-bunch vinification and semi-carbonic maceration in concrete vats, then in barrels. It is best to decant the wine well before tasting, which allows the aromas of fruit and the genuine pleasure of this cuvée to open up and be fully enjoyed; it can be kept for 2 or 3 years. Ultimately, one cannot help but be won over by the wines of the Yvon Métras estate, for it is a true institution in the Beaujolais. Yvon Métras produces authentic, very fruity and deep wines, but as demand far exceeds the volume produced, it is particularly difficult to obtain any.
