Five grape varieties are vinified in the Jura, the local grape varieties: Savagnin, Trousseau, Poulsard, and others from the neighbouring region, Burgundy: Chardonnay, Pinot Noir. The yellow wines of the Jura have a remarkable typicity. Produced from Savagnin only, the wines are kept for at least six years in oak barrels without topping or racking. A veil of yeast is formed on the surface to isolate the air present in the barrel and prevent oxidation. It is these yeasts that give the yellow wine of the Jura that special aroma of nuts, dried fruits and spices. Once this aging is finished, after the traditional breakthrough, the yellow wine is put in clavelins, these atypical bottles of 62cl. If you are looking for long-aging wines, do not hesitate, the yellow wines of the Jura will cross the ages, like straw wines for your dessert wines.
