The Lamy family has been cultivating vines in Saint Aubin in Burgundy since 1640. Founded in 1973, Domaine Hubert Lamy initially offered regional appellation wines. The estate then experienced rapid development from the 1990s onwards, driven by Olivier Lamy, who revitalized the Saint Aubin appellation through the acquisition of new vineyards and the creation of single-parcel cuvées. Today, Domaine Hubert Lamy covers 18.5 hectares, of which 80% is white with the Chardonnay grape variety and 20% is red with Pinot Noir, spread across the appellations of Saint Aubin, Puligny Montrachet, Chassagne Montrachet, Santenay and also Criots Batard Montrachet Grand Cru.

Domaine Hubert Lamy is based in Saint-Aubin, a village on the Côte de Beaune in Burgundy. Its 18.5-hectare vineyard spans four prestigious appellations: Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. This privileged geographical position, at the heart of the Côte de Beaune, allows the estate to offer a range of remarkable diversity, from village wines to premier crus, right up to the grand cru Criots-Bâtard-Montrachet.

The white wines of Domaine Hubert Lamy are unanimously recognized for their aging potential. Their intensity, purity of expression, and internal energy give them a formidable capacity to evolve over time, placing them at the pinnacle of what the Côte de Beaune can offer. The Premiers Crus of Saint-Aubin can easily be kept for between 8 and 15 years, while the Haute Densité cuvées and the grand cru Criots-Bâtard-Montrachet can be kept for over 20 years in good cellar conditions, away from light, at a stable temperature between 12 and 14 °C.

The characteristic minerality of Domaine Hubert Lamy's white wines is directly explained by the nature of the soils. On the plots located at the foot of the hillside, the limestone is older, decomposed and complex, with a Kimmeridgian subsoil into which the roots descend deeply, lending the wines a beautiful minerality. Each cuvée from Domaine Hubert Lamy superbly reflects the expression of these limestone terroirs according to the grape varieties. This mineral imprint is one of the most recognizable stylistic signatures of the estate.

Domaine Hubert Lamy offers around twenty cuvées exclusively on the Côte de Beaune. Among the most acclaimed are the Saint-Aubin Premier Cru En Remilly, the Puligny-Montrachet Les Tremblots and the Chassagne-Montrachet Premier Cru Les Macherelles. The estate covers six appellations in total, including the grand cru Criots-Bâtard-Montrachet, the pinnacle of the range. Certain plots are also vinified as a Haute Densité version, reflecting an approach to precision pushed to its utmost.

The vines of the Hubert Lamy estate are cultivated using organic farming (uncertified) and planted at high density to better concentrate the grapes. The various parcels are vinified separately using indigenous yeasts, in 600-litre barrels with very little new wood. The ageing, long and conducted on full lees then on fine lees in cool and humid cellars, preserves the wine's internal energy and contributes to its extraordinary ageing potential.

Inspired by ancient practices, Olivier Lamy began experimenting with high-density plantings in the early 2000s, first implanting 28,000 and then 30,000 vines per hectare in the upper part of his Saint-Aubin 1er Cru Derrière Chez Edouard vineyard. This exceptional density, combined with short and late pruning, naturally limits yields and promotes perfect ripeness at harvest. The result: wines of remarkable concentration and complexity, which Burgundy enthusiasts eagerly seek out each year due to extremely limited volumes.

History of Domaine Hubert Lamy

The history of Domaine Hubert Lamy is that of a family deeply rooted in Burgundian viticulture since 1640. It was in 1973 that Hubert Lamy, having worked alongside his father Jean, founded his own estate with 8 hectares of vines, principally in regional appellations. Visionary and bold, Hubert laid the foundations of an estate that would develop strongly in the 1990s, with the acquisition and lease of new plots in prestigious terroirs such as Saint-Aubin, Chassagne-Montrachet and Puligny-Montrachet. In 1995, his son Olivier joined the adventure, bringing fresh energy thanks to his studies in viticulture and winemaking, as well as his international experience. Together, father and son found a perfect balance between tradition and modernity, restructuring the vineyard and replanting certain Pinot Noir plots with Chardonnay to better express the potential of the limestone soils.

In 2005, Karine, Olivier's wife, joined the estate to manage the administrative and commercial aspects, strengthening its presence on the international stage. Today, Domaine Hubert Lamy extends over 18.5 hectares and produces approximately 100,000 bottles per year, exported to 33 countries. Despite Hubert's passing in 2022, his legacy lives on under Olivier's direction, who continues to shine a light on the Saint-Aubin appellation — often overlooked but rich in potential — as a compelling alternative to the great names of the Côte de Beaune.

Terroirs and Vines of Domaine Hubert Lamy

Domaine Hubert Lamy benefits from an exceptional terroir, nestled in the southern part of the Côte d'Or, in Saint-Aubin. Its 18.5 hectares of vines extend over clay-limestone soils, predominantly limestone, light and stony, with a depth varying from 10 to 30 cm. These soils, combined with south or south-east exposures, offer ideal conditions for Chardonnay (80% of plantings) and Pinot Noir (20%). The terroirs are divided into three main families: the supple white marls of the upper slopes, ideal for mineral wines such as those from Derrière Chez Edouard; the harder, sunnier limestones of the intermediate plots such as Clos de la Chatenière; and the decomposed limestones, sometimes Kimmeridgian, of the lower zones, conferring a complex minerality to cuvées such as Les Frionnes or Criots-Bâtard-Montrachet.

Olivier Lamy practises reasoned viticulture, close to organic principles, without official certification. No chemical fertilisers have been used for over 15 years, and treatments favour products approved for organic farming. Budding removal and green harvesting limit yields to concentrate the grapes, while Guyot Poussard pruning and open trellising optimise bunch quality. A notable innovation is the experimentation with high-density plantings (up to 30,000 vines per hectare) on certain plots such as Derrière Chez Edouard, encouraging root competition that intensifies terroir expression. The harvests, carried out by hand in small crates by a team of around 40 people, guarantee healthy and ripe grapes ready to reveal the full richness of the Burgundian terroirs.

Vinifications at Domaine Hubert Lamy

The winemaking philosophy of Domaine Hubert Lamy is based on precision and respect for the terroir. Each plot is vinified separately to preserve its unique identity, an approach that reflects Olivier Lamy's attention to detail. For the white wines, the Chardonnay grapes are crushed and then slowly pressed in a pneumatic press. The juices, lightly settled to limit the use of sulphur, ferment with indigenous yeasts in barrels of 350 to 600 litres, aged 3 to 15 years, with very little new wood. This mastery of oak preserves the freshness and minerality of the wines. Fermentation, extended over 90 days thanks to cool cellars, develops complex aromas. After ageing 12 to 18 months on lees, the wines spend an additional 6 months in tank to gain in accessibility, before bottling after approximately 24 months.

For the red wines, made from Pinot Noir, the grapes are rigorously sorted and destemmed 100% or partially (50 to 100% whole cluster depending on the vintage). A 15-day maceration, with measured punch-downs and pump-overs, precedes fermentation with indigenous yeasts. Ageing, carried out in barrels aged 1 to 10 years, also lasts 12 to 18 months, followed by 6 months in tank. The minimal use of sulphur and attention to detail — such as the experimentation with DIAM technical corks — guarantee pure and balanced wines, both lively and suitable for ageing.
