The TOP winemakers of Champagne Great Houses
Frequently Asked Questions

This is one of the most remarkable distinguishing features of the house: unlike the vast majority of Champagne houses that offer Non-Vintage Brut (NV) cuvées, Dom Pérignon makes the bold choice to vintage every Champagne. This means that every bottle is made exclusively from the grapes of a single year, selected for its exceptional character. Dom Pérignon even chooses not to declare a vintage if the result does not reach the expected level of excellence, a rare standard that profoundly sets this house apart in the world of Champagne.

Patience lies at the heart of Dom Pérignon's philosophy. The Vintage cuvées are aged on lees for at least eight years, and up to 25 years for the Plénitude 3 (P3) cuvées. This long ageing preserves the freshness of the fruit while allowing aromas of great complexity to develop. At Dom Pérignon, a wine reaches the peak of its complexity more than 30 years after its vintage year, an exceptional longevity that makes it one of the Champagnes best suited to cellaring.

The first Dom Pérignon cuvée was crafted from a 1921 wine and released from 1935 onwards. Its name pays tribute to Dom Pierre Pérignon, a Benedictine monk at the Abbey of Hautvillers near Épernay, who devoted his life to perfecting Champagne winemaking techniques. He notably contributed to the blending of grape varieties, the clarification of wine, and the use of the cork stopper. Today, the house is part of the LVMH group and continues to perpetuate this legacy of excellence with each new vintage.

Champagne Dom Pérignon is built on two emblematic grape varieties: Pinot Noir and Chardonnay, expertly blended to combine structure and aromatic freshness. The grapes come exclusively from Grand Cru-classified vineyards, as well as from the renowned Premier Cru of the Hautvillers abbey, spread across prestigious terroirs such as the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne. This exceptional terroir base, covering approximately 600 hectares, forms the foundation of the house's unique aromatic signature.

The Plénitudes (P1, P2, P3) are a concept unique to Dom Pérignon, developed to express the different stages of maturity of a single vintage over time. This concept aims to offer Champagnes that have reached particular stages of their maturation, in order to follow their evolution throughout their ageing process. Concretely, the same vintage is tasted at three distinct moments in its life, each time offering a different aromatic profile: livelier and more taut in P1, broader and deeper in P2, and of an almost meditative complexity in P3.

Since 1921, only 46 years have been vintaged, among which the most remarkable are 1921, 1928, 1947, 1959, 1961, 1970, 1982, 1990, 1996, 2002, 2008 and 2010. For a grand occasion, the 2008 vintage is particularly appreciated for its complexity and luminosity, while the 1982 remains an absolute reference, rated 96/100 by Robert Parker. For a contemporary gift, the 2012 and 2015 vintages offer a particularly appealing balance between aromatic richness and accessibility.

History of the Dom Pérignon House

The Dom Pérignon House takes its name from the famous Benedictine monk Pierre Pérignon, often regarded as the "spiritual father" of Champagne. Born in 1638, Dom Pierre Pérignon settled at the Abbey of Hautvillers, in the Champagne region, in 1668, where he set out to create the "best wine in the world". His innovative approach to blending grapes and his passion for winemaking left a lasting mark on the history of Champagne viticulture. Although he was not truly the inventor of sparkling Champagne, his contributions to the quality of wines produced in the region left an indelible impression.

According to legend, it was he who perfected the méthode champenoise by hermetically sealing bottles of white wine with beeswax, thereby triggering a second fermentation and giving rise to the effervescence so characteristic of Champagne. This myth was largely perpetuated by the Maison Moët & Chandon, which acquired the Abbey of Hautvillers in 1823 and which, in 1936, launched the first Dom Pérignon cuvée, from the 1921 vintage. Since then, fewer than 50 vintages have been produced, all marked by an unrivaled standard of quality.

Today, Dom Pérignon belongs to the prestigious luxury group LVMH, which continues to keep the legend alive while perpetuating the house's excellence and worldwide renown.

Terroirs and Vineyards of the Dom Pérignon House

The crafting of Dom Pérignon Champagnes is based on a rigorous selection of the finest growths from the Champagne region. The grapes come exclusively from vineyards classified as Grands Crus, as well as from the renowned Premier Cru of the Abbey of Hautvillers. With a total area of over 1,200 hectares, these vineyards are spread across prestigious terroirs such as the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne.

The secret of Dom Pérignon Champagnes lies in the perfect mastery of grape blending. Pinot noir and chardonnay, two iconic grape varieties of Champagne, are combined to create a perfect balance between structure and freshness, aromatic complexity and finesse. The varied terroirs lend unique characteristics to the wines, with mineral and saline nuances, and aromas of ripe fruits that evolve over time.

This rigorous approach enables the Dom Pérignon House to produce Champagnes of great complexity, capable of aging gracefully for decades.

Winemaking at the Dom Pérignon House

The winemaking process at Dom Pérignon is a meticulous one, emphasizing respect for the terroir and the typicity of each vintage. Unlike other Champagne houses, Dom Pérignon produces only vintage Champagnes, meaning they come from a single harvest year. Each vintage thus tells a unique story, that of the viticultural year from which it originates.

Fermentation in stainless steel tanks preserves the freshness and purity of the aromas. Once bottled, the cuvée undergoes a long aging process on lees, of at least eight years for Vintage cuvées, and up to 25 years for Plénitude 3 (P3) cuvées. This slow and delicate process allows the wine to develop complex aromas while retaining great freshness.

The Chef de Caves, Vincent Chaperon, who succeeded Richard Geoffroy in 2019, ensures that this tradition of excellence is upheld. He does not hesitate to forgo declaring a vintage if the quality of the harvest does not meet the standards required by the House. Only the finest grapes are selected to produce exceptional Champagnes, imbued with lightness, richness, and elegance.

The Cuvées of the Dom Pérignon House

The Dom Pérignon House offers several iconic cuvées, each representing the expression of a unique vintage and an incomparable expertise:

Dom Pérignon Vintage: The classic cuvée from Dom Pérignon, crafted from the finest grapes of the year. This Champagne embodies the timeless style of the house, with floral notes, ripe fruits, and a distinctive minerality. It is released to market approximately nine years after the harvest.

Dom Pérignon Rosé Vintage: First created in 1959, this cuvée combines the elegance of chardonnay with the power of pinot noir. This rosé Champagne is distinguished by its depth and complexity, offering aromas of red fruits and a silky texture.

Dom Pérignon Plénitude 2 (P2): This cuvée is the result of extended aging of 12 to 15 years in the cellar. It reveals an additional dimension of richness and intensity, with brioche and toasted aromas, and a vibrant freshness.

Dom Pérignon Plénitude 3 (P3): The pinnacle of the aging art at Dom Pérignon, this rare cuvée is offered after approximately 25 years of maturation. P3 Champagnes offer unparalleled depth, with complex aromas and a dense structure, while retaining a remarkable vivacity.

The vintages of Dom Pérignon are synonymous with excellence and rarity. Since the first cuvée of 1921, each year of production is carefully selected based on the quality of the harvest. Among the most remarkable vintages to discover, one can find:

Dom Pérignon 1961: An anthology vintage, tasted by John F. Kennedy and Charles de Gaulle during an official dinner in 1961.

Dom Pérignon 2002: Renowned for its richness and balance, this vintage is considered one of the finest of recent decades.

Dom Pérignon 2008: A vintage of great freshness and intensity, embodying the quintessence of the Dom Pérignon style.

Dom Pérignon Rosé 2009: This rosé Champagne captivates with its complexity and exceptional mouthfeel.

Other notable vintages include 1975, 1982, 1995, 1996, 2000, 2004, and more recently 2012 and 2013.

Champagne enthusiasts can also explore other prestigious houses in the region, such as Ruinart, Krug, Veuve Clicquot, Salon, Moet & Chandon, and Taittinger, who share the excellence of Champagne and offer unique experiences.

The Dom Pérignon House embodies the essence of luxury Champagne, combining tradition, innovation, and excellence. Each cuvée is a work of art, the result of unrivaled expertise and a constant pursuit of perfection. Whether to celebrate a special moment or to enrich a wine cellar, Dom Pérignon Champagnes offer a unique sensory experience that spans decades while retaining their freshness and elegance.
