Located in Chavignol, in
the Loire Valley, it consists of 4 mythical hectares of Sauvignon. The vines, with an average age of 25 to 30 years, are planted on limestone and clay-limestone soil. The estate, consisting of parcels in Sancerre Grande Côte and Sancerre Monts Damnés as well as some vines in Sancerre Culs de Beaujeu, favors a parcel-based approach and vinifies each of them separately.
Just like his father who made the estate's reputation (from 1987 to 1998), François harvests his very ripe grapes to produce his great dry white wines for aging. In warm years, he will even sometimes produce semi-dry cuvées named "Paul" in homage to his father.
The estate aims to be as non-interventionist as possible both in viticulture and vinification: in addition to "patient" harvests done by hand, there is also the absence of yeasting, new wood, and filtration in the cellar. Two rackings take place and bottling is done early before summer. The result? Wines of extreme finesse, delicate and well-structured with great aging potential. 20 years of waiting may sometimes be necessary to discover the full potential of these exceptional Sancerres… To be tasted!
