The history of Domaine Pierre-Yves Colin-Morey begins in 2001, when Pierre-Yves Colin, eldest son of the renowned winemaker Marc Colin, and Caroline Morey, daughter of Jean-Marc Morey, another pillar of Burgundian viticulture, joined forces to create a négociant business. Pierre-Yves, having honed his skills at the family estate Marc Colin from 1994 to 2005, decided to strike out on his own. In 2005, he took over 6 hectares of family vines in Saint-Aubin and Chassagne-Montrachet, marking the true launch of the estate. In parallel, Caroline Morey, who inherited 7 hectares of vines from her father in 2014, also developed her own production under her own name, while sharing the philosophy and cellar of her husband.
From its very beginnings, the estate established itself as a rising star of Burgundy, thanks to wines that combine intensity, finesse and a faithful expression of the terroirs. Today, Pierre-Yves Colin-Morey manages 13 hectares, including 5.35 hectares owned outright and 3 hectares leased, supplemented by grape purchases representing approximately one third of production. With their sons Mathis and Clément, now involved, the family perpetuates a winemaking tradition rooted in excellence, while innovating to meet modern challenges such as combating premature oxidation of the wines.
Domaine Pierre-Yves Colin-Morey owes its renown to its plots situated on exceptional terroirs of the Côte de Beaune. The estate's 13 hectares extend across the prestigious appellations of Chassagne-Montrachet, Saint-Aubin, Puligny-Montrachet, Meursault and Santenay. Among the jewels of the estate are emblematic plots such as Chassagne-Montrachet Les Caillerets (0.2 ha, planted in 1950), Les Chenevottes (0.4 ha, planted in 1960) and Saint-Aubin En Remilly (0.65 ha, planted in 1975). Some vines, dating back as far as 1900, lend the wines a unique intensity and complexity.
The estate adopts an environmentally respectful approach, with practices close to organic viticulture. The soils are cultivated or grassed over, particularly on the steepest plots, to preserve the health of the vineyards. Yields are controlled through rigorous green pruning, and dead vines are replaced by mass selection, guaranteeing the quality and longevity of the plants. Each vintage aims for a perfect balance between freshness and optimal ripeness, allowing the grapes to fully reveal the potential of their terroirs. This philosophy makes the wines of Domaine Pierre-Yves Colin-Morey incomparable ambassadors of Burgundy.
Winemaking at Pierre-Yves Colin-Morey is a model of precision and minimalism, designed to allow the purity of the terroirs to express itself. The white grapes, principally Chardonnay (92% of production), are whole-cluster pressed at a higher than average pressure (around 2 bars), without crushing, to extract juices of great finesse. Fermentations take place with indigenous yeasts in 350-litre barrels, of which 30% are new oak (50% for the Bâtard-Montrachet). The use of demi-muids, larger than traditional 228-litre barriques, limits the impact of the wood, thus preserving the freshness and energy of the wines.
Ageing, lasting 15 to 20 months depending on the cru, takes place without lees stirring, allowing prolonged contact with the lees to enrich the texture and complexity of the wines. The cellar, kept at low temperature, encourages a slow malolactic fermentation, completed 8 to 9 months after harvest. The wines are bottled without filtration, with large-diameter natural cork stoppers (55 x 25 mm) and sealed with wax for optimal protection against oxidation. This meticulous approach guarantees wines of exceptional purity, with vibrant minerality and a refreshing acidity.
