Beaujolais relies almost exclusively on Gamay Noir à Jus Blanc, the region's king grape, which expresses itself with remarkable singularity on the granitic soils of the north and the clay-limestone soils of the south. This thin-skinned grape yields supple, fruity, and low-tannin wines with an aromatic profile dominated by cherry, raspberry, and peony. Chardonnay is also present in a minority capacity, notably for the production of the rare white Beaujolais.

This is one of the most widespread misconceptions about this region! Beaujolais Nouveau, released every third Thursday of November, represents only a fraction of the region's production. Beaujolais actually encompasses a very diverse range of appellations: generic Beaujolais, Beaujolais Villages, and above all ten crus capable of ageing for several years, or even a decade for the most ambitious Moulin-à-Vent or Morgon. The region greatly deserves to be discovered beyond this image of a primeur wine.

Contrary to their reputation as wines to be drunk young, certain Beaujolais crus have a genuine aging potential. Moulin-à-Vent, whose manganese-rich soils lend the Gamay an unusual structure, can evolve favorably for eight to twelve years. Morgon, made from decomposed schist known as roche pourrie, develops over time evocative notes of cherry brandy and undergrowth. Juliénas and Chénas also show excellent longevity. For these cellar-worthy crus, a stable cellar between 12 and 14°C, away from light, is recommended.

Beaujolais Villages designates an intermediate appellation encompassing approximately 38 communes located mainly in the northern part of the region, offering wines with more structure than generic Beaujolais. The ten Beaujolais crus — Moulin-à-Vent, Morgon, Fleurie, Chiroubles, Brouilly, Côte de Brouilly, Régnié, Chénas, Juliénas and Saint-Amour — represent the qualitative pinnacle of the region. Each cru possesses its own distinct geological identity, which gives its wines a distinctive character and an ageing potential that is often far superior.

Beaujolais wines, thanks to their natural freshness and expressive fruitiness, lend themselves to a wide variety of food pairings. A young, light Beaujolais pairs ideally with Lyonnaise charcuterie, quenelles, or a Puy lentil salad. Fuller-bodied crus such as Morgon or Moulin-à-Vent pair beautifully with roast chicken, duck breast, or blue-veined cheeses. It is worth noting that certain crus, served slightly chilled at around 14–15°C, also complement fish in sauce wonderfully.

Beaujolais displays a remarkable geological diversity that directly shapes the style of its wines. The northern part of the region, around the crus, is dominated by granitic and schistose soils that give the Gamay grape minerality, tension, and a fine aromatic precision. Further south, clay-limestone terroirs produce rounder, more supple Beaujolais wines. Certain plots in Brouilly rest on a blue volcanic rock called cornil, which imparts a distinctly recognisable floral and spicy character to the wines. This mosaic of soils is one of the appellation's great, underappreciated treasures.
