The South West vineyard encompasses more than twenty appellations spread across four major zones. These include the middle Garonne with appellations such as Buzet, Fronton, and Côtes-du-Marmandais, the Bergerac and Duras area with around ten appellations including Bergerac and Monbazillac, as well as the foothills of the Massif Central with Cahors, Gaillac, and Marcillac. In addition to these zones, the Pyrenean foothills are home to characterful appellations such as Madiran, Jurançon, and Irouléguy. This mosaic of origins makes the South West one of the richest and most varied wine regions in France.

Red wines from the South West offer a wide spectrum of styles depending on the appellation. A Cahors based on malbec, powerful and structured, will ideally accompany a duck confit or a cassoulet. A Fronton, made from négrette, softer and fruitier, will be perfect with grilled meats or charcuterie. Madiran, made primarily from tannat, stands out for its bold and concentrated character, and is best served with slow-cooked red meats or Pyrenean sheep's cheese. For a lighter table, a Gaillac rouge or a Bergerac will pair well with everyday dishes.

The aging potential of wines from the South West is often underestimated. A Madiran made from tannat can easily improve over ten to fifteen years, its powerful tannins rounding out over time to reveal notes of leather, spices, and candied black fruits. The malbec from Cahors produces powerful red wines with aromas of black fruits, which can evolve towards truffle with aging. On the white wine side, a well-crafted Jurançon moelleux can be kept for ten years or more. Lovers of aged wines will find true hidden gems in the South West to patiently cellar.

The South West stands out for its palette of indigenous grape varieties found nowhere else in France. The region lists 300 grape varieties, including 120 indigenous varieties, such as négrette, duras, mauzac, and loin-de-l'œil, which contribute to the incomparable typicity of local wines. On the red side, tannat reigns in Madiran, while malbec (also known as côt or auxerrois) is the lord of Cahors. For whites, gros manseng and petit manseng bring to the wines of Jurançon their celebrated aromas of exotic fruits and honey.

The South West produces sweet and dessert white wines of remarkable quality, often unjustly overlooked. The region produces very fine dessert wines, some of which have nothing to envy from the productions of the Sauternais, notably in the Jurançon appellation, with aromas of vanilla, honey and candied fruits. Pacherenc du Vic-Bilh and Monbazillac also offer sweet wines of beautiful aromatic complexity. These exceptional bottles, produced from late harvests or passerillage, pair wonderfully with foie gras, the region's great gastronomic speciality.

The South West is the oldest wine region in France, long overshadowed by its Bordeaux neighbour. Yet its richness is immense: varied terroirs, original grape varieties and passionate winemakers offer wines with an excellent quality-to-price ratio. Many wines from the South West share similar grape varieties with Bordeaux, such as Cabernet Franc, Merlot and Malbec, with a comparable winemaking style and quality, but often at more accessible prices.
