Based in Saint-Euphraise-et-Clairizet, on the northern slopes of the Montagne de Reims, Champagne Sylvie Moreau has been cultivating an exceptional terroir at the gateway to the Vallée de l'Ardre since 1962. This three-hectare family estate, taken over in 1991 by Sylvie Moreau, the third generation of winegrowers, combines tradition and modernity in the service of atypical and indulgent cuvées. Committed for twenty-five years to sustainable viticulture, HVE certified, and then to organic farming since 2023, the estate explores the richness of the three Champagne grape varieties — Meunier, Pinot Noir and Chardonnay — on soils blending clay, limestone and alluvial earth. The philosophy is clear: limit interventions, use sulphites sparingly, age wines at length, and reveal the terroir with patience and subtlety.
The history of Champagne Sylvie Moreau begins in 1962 when André and Micheline Moreau began replanting the slopes of Saint-Euphraise, a small village located on the northern hillside of the Montagne de Reims, a stone's throw from the city of coronations and the Vallée de l'Ardre. Pioneers, they helped breathe new life into this long-forgotten terroir and in 1973 signed their very first Champagnes under the family name. Decade after decade, the vineyard developed at the pace of encounters, harvests and seasons, shaping the identity of an estate resolutely dedicated to quality.
In 1991, Sylvie Moreau took the reins of the estate and gave her name to the label that today bears her signature. Under her leadership, the estate gradually expanded to reach three hectares, obtained High Environmental Value certification, then embarked on a conversion to organic farming completed in 2023. A passionate winemaker, Sylvie has steered the house style towards more distinctive Champagnes, partly vinified in barrels for the special cuvées, aged for extended periods and with low dosage. The winemaker's husband, president of the Courmas cooperative, supports the project by providing a precise winemaking facility where each cuvée is crafted separately, plot by plot.
The vineyard of Champagne Sylvie Moreau extends over three hectares spread across several complementary terroirs in the Montagne de Reims, the Vallée de l'Ardre and the Vallée de la Marne. The plots rest on clay soils on the Reims side, which lend finesse and roundness to the wines, on limestone soils in the Vallée de l'Ardre, a source of characteristic mineral freshness, and on the deeper soils of the Vallée de la Marne, which offer aromatic richness and varietal expression.
The three Champagne grape varieties take centre stage, with a prominent role given to Meunier, the emblematic variety of the northern slopes of the Montagne de Reims, complemented by Pinot Noir, which brings structure and power, and Chardonnay, the guarantor of finesse and elegance. The estate cultivates a notably steep Chardonnay plot in Trélou-sur-Marne, on deep silty soil, ideal for a single-variety cuvée. Managed for a quarter of a century using reasoned viticulture, certified HVE and then converted to organic farming since 2023, the vineyard benefits from daily attention, manual harvesting and a constant pursuit of balance between the vine, the soil and its environment.
In the cellar, the winemaking philosophy of Champagne Sylvie Moreau favours patience, non-intervention and subtlety. The harvests, exclusively manual, are pressed in traditional presses before the juices are transferred to the modern stainless steel vat room or to oak barrels for the special cuvées. Each plot is vinified separately in order to preserve the identity of each lieu-dit and to offer the blends a broad and nuanced aromatic palette.
Rackings are kept to a minimum, sulphiting is maintained at the lowest possible level, and the wines rest on lees for extended periods to gain in complexity. Certain cuvées incorporate a significant proportion of reserve wines drawn from a solera (perpetual reserve), a rare approach in Champagne that brings depth and aromatic continuity to the blends. Following the traditional méthode champenoise second fermentation, the bottles age in the cellar for several years — sometimes up to five to seven years for the most exclusive cuvées — before an especially measured dosage that allows the character of the terroir to express itself fully.
Racines: the signature cuvée and calling card of the estate, Racines is a blend of the three Champagne grape varieties (Meunier 50%, Chardonnay 30%, Pinot Noir 20%) incorporating a significant proportion of wines drawn from a solera, the true aromatic memory of the estate. The brioche and roasted nose gives way to a fresh and mentholated palate, underscored by subtle citrus notes, offering a Champagne that is indulgent, complex and deeply expressive of its origins.
Carré Or: a blended cuvée aged at length in the cellar, the Carré Or reveals a lightly amber robe and a full, rounded and persistent palate. A patient evolution of the Brut Tradition style, this gastronomic Champagne elegantly accompanies festive meals, fish in sauce and fine poultry, displaying great length and remarkable harmony.
Blanc de Noirs Extra Brut: a parcel-specific and exclusive cuvée, this Blanc de Noirs blends 80% Pinot Noir and 20% Meunier from the terroirs of the Montagne de Reims and the Vallée de l'Ardre. Pressing in a traditional 4,000 kg press, cold settling, fermentation in a temperature-controlled stainless steel tank, no filtration or fining, dosage at 2.8 g/l, produced in only 987 bottles. A light copper robe with fine bubbles, a nose of cherry, ripe raspberry, compote and dark fruits lifted by gentle spices — this is the pure expression of a great vintage.
Émeraude: a signature blend of 50% Pinot Noir and 50% Chardonnay from a single harvest year, the Émeraude combines the power and character of Pinot Noir with the finesse and freshness of Chardonnay. Delicate bubbles, powerful aromas, lightness on the palate — this is the ideal Champagne to share with friends, over generous and convivial food pairings.
Extra Brut: the undosed expression of the Émeraude, this rare cuvée benefits from extended cellar ageing of five to seven years before disgorgement with no addition of any liqueur. The powerful nose, complexity, fine structure and mineral purity make it a Champagne for connoisseurs, to be served with iodine-rich dishes or noble fish.
Chardonnay Mono-Cépage: a Blanc de Blancs from a very steep plot in Trélou-sur-Marne, on deep silty soil. Benefiting from ideal exposure, this 100% Chardonnay offers a superb balance, with aromas of white flowers, citrus and pastry, underpinned by a fine mineral tension, in the finest tradition of Champagne Chardonnay wines from the Vallée de la Marne.
Brut Rosé: a blended rosé Champagne crafted from selectively sorted grapes at harvest and a house red Champagne wine. A luminous salmon hue, a delicate nose of red fruits (strawberry, raspberry, redcurrant), a fine, lingering and fresh palate — this festive rosé brilliantly accompanies indulgent aperitifs, red fruit desserts and celebratory dining occasions.
Demi-Sec: a Champagne for desserts, crafted from the blend of the Racines cuvée (Pinot Meunier 30%, Pinot Noir 18%, Chardonnay 12%) but distinguished by a more generous dosage of liqueur. Fleshy, well-structured, indulgent and fruity, it beautifully complements fruit-based desserts, pastries and aged cheeses, in a convivial and warm expression of the house style.
