Rocalhan 2001 Hautes Terres de Comberousse ** The color is evolved. A nose of candied apricots, overripe apples with slightly oxidative notes. A lovely fruity palate with acidity but a hint of alcohol and bitterness.

Mas Mortiès Pic Saint loup 2001 ** Opaque color, slightly evolved, and a nose of cooked fruits. The palate is warm: an almost sweet and jammy finish and tannins still present.

Domaine de l'Aiguelière Cote Rousse 2001 ***(*) The color is of medium intensity and evolved. A floral, spicy nose with black fruits. The texture on the palate is very silky, milky, with aromas of sweet spices and tobacco. A very lovely wine.

Domaine D'Aupilhac 2001 **** Color of medium intensity, slightly cloudy and matte. The nose is very complex: animal, floral, sweet, wild berries... The palate offers beautiful complexity with controlled alcohol and a very long finish with notes of black fruits and graphite.

Domaine Canet Valette Saint Chinian Maghani 2001 ***(*) An opaque and slightly evolved color. A closed nose with some notes of chocolate and black fruits. The wine reveals beautiful freshness but is still reserved. Firm tannins and beautiful aromatic persistence.

Mas Jullien Etats d'Ames 2006 *** A color that has evolved little and a nose of black fruits and pepper. The palate is discreet, medium-bodied, but very fine and elegant as expected from this estate.

Domaine Gauby Muntada 2002*** The color is evolved with medium intensity. The nose is evolved and animal and evolves well with aeration (morello cherry, wild berries). The wine is very pleasant, the alcohol is not very present, and it gains in "body" with aeration to balance the tannins that are still present.

Daumas Gassac 1986 ***(*) Evolved color and low intensity. The nose is complex with smoky notes, wild berries and florals, cedar, mushrooms, undergrowth. On the palate, the wine has a fresh profile (acidity and tannins still firm) but balances out with aeration, even if it will always lack a bit of fruit to balance the dry tannins.
