History of Domaine Jean-Marc Pillot

The Pillot family has grown vines in Chassagne-Montrachet for several generations, and the estate’s official name remains Domaine Jean Pillot et Fils. In 1985, Jean-Marc joined his father Jean to learn winemaking alongside him. Six years later, in 1991, he took over the estate with his sister Béatrice, supported by his wife Nadine and still guided by his father. He built a new cellar and gradually expanded the family vineyard.

In 2019, his son Antonin joined the estate to carry on its tradition and continue its development. Over the decades, Domaine Jean-Marc Pillot has earned a strong reputation among discerning wine lovers, who appreciate its broad range of Chassagne-Montrachet wines and their consistent quality.

Terroirs and Vines of Domaine Jean-Marc Pillot

The vineyard covers around fifteen hectares, mostly in Chassagne-Montrachet, with plots in Puligny-Montrachet, Meursault, Santenay, Saint-Romain and Remigny. The estate complements this range by buying grapes from trusted growers, particularly in the Côte Chalonnaise. Most vines are between 25 and 50 years old. Some plots are much older, such as Clos Saint-Jean and Clos Saint-Marc, where vines are approaching a century in age.

Jean-Marc Pillot tends his vines like a garden. The soils are worked throughout the year and receive organic amendments tailored to each plot. The vines are trained using either cordon de Royat or single Guyot. Pruning, bud removal, trellising, leaf removal and green harvesting limit yields, while all grapes are picked by hand to obtain fruit of exceptional quality.

Winemaking at Domaine Jean-Marc Pillot

In the cellar, the goal is to preserve the identity of each climat. Each plot is vinified separately. Aging in oak barrels uses a measured proportion of new wood—around a quarter for the village-level Chassagne-Montrachet—so that the barrel supports the wine without ever masking it.

The estate’s white wines strike a balance between a taut, mineral style and a fuller, more generous profile. They combine definition, complexity and freshness. The reds are a reminder that Chassagne-Montrachet was long a Pinot Noir village: they offer expressive fruit, fine structure and genuine aging potential.

Chassagne-Montrachet Blanc: this classic village wine combines elegance and power. Notes of orchard fruit and minerality are carried by lovely freshness.

Chassagne-Montrachet 1er Cru Les Baudines: this high-altitude premier cru produces a taut, crystalline white of great purity.

Chassagne-Montrachet 1er Cru Les Champs Gain: situated high on the slope, this premier cru produces a fresh, airy wine with notes of citrus and white flowers.

Chassagne-Montrachet 1er Cru Les Chenevottes: close to Puligny, this premier cru is round and charming, with lovely aromatic finesse.

Chassagne-Montrachet 1er Cru Les Macherelles Blanc: made from vines planted in the early 1950s, this intensely mineral white evokes lime zest and a saline touch.

Chassagne-Montrachet 1er Cru Les Vergers: this balanced, elegant premier cru combines rich fruit with mineral tension.

Chassagne-Montrachet 1er Cru Les Vergers “Clos Saint-Marc”: this enclosed plot of very old vines, approaching a century in age, produces a concentrated, deep and complex wine.

Chassagne-Montrachet 1er Cru Morgeot Blanc: this full-bodied, structured premier cru offers generous depth and fine aging potential.

Chassagne-Montrachet 1er Cru La Maltroie: neighboring the grands crus, this rich, flavorful premier cru shows remarkable persistence.

Chassagne-Montrachet 1er Cru Les Caillerets: this is one of the village’s greatest premiers crus. This distinctive, intense white combines finesse and depth.

Bourgogne Pinot Noir: this fruity, appealing red with supple tannins pairs well with a wide range of dishes.
