Located in the heart of Touraine, in the prestigious Montlouis-sur-Loire appellation, Domaine François Chidaine embodies the excellence of Loire viticulture. This family estate, passionately run by François and Manuéla Chidaine, spans 37 hectares, divided between Montlouis, Vouvray and the Touraine appellation. A pioneer of biodynamics since 1999, the estate produces wines of remarkable finesse, driven by chenin blanc and a philosophy of respect for nature.
The history of Domaine François Chidaine begins in 1989, when François, from a family of winegrowers in Montlouis-sur-Loire, decided to forge his own path. From the start, he committed to respectful viticulture, influenced by emblematic figures such as Didier Dagueneau and Nady Foucault. In 1992, he adopted organic farming, certified by Ecocert, before moving to biodynamics in 1999, under the guidance of François Bouchet, with Biodyvin certification. This bold choice, at a time when these practices were marginal, positioned the estate as a pioneer in the region.
In 1999, François inherited the family vines, bringing the estate to 17 hectares. The following year, his wife Manuéla joined the adventure and opened La Cave Insolite, an emblematic tasting cellar on the banks of the Loire. In 2002, the acquisition of the prestigious Clos Baudoin in Vouvray marked a major milestone, followed by the purchase of parcels in Chissay in 2006, under the Touraine appellation. In 2010, the couple embarked on an international adventure in Murcia, Spain, where they produce wines from local grape varieties, proving their ability to transcend borders while remaining true to their philosophy.
Today, with their children Alice and Pierre, the estate continues to develop, combining tradition and innovation. François, president of the Montlouis appellation, has largely contributed to restoring this region's prestige, making the estate a key player in Loire wines.
Domaine François Chidaine flourishes on exceptional terroirs, between the tuffeau hillsides of Montlouis-sur-Loire and the varied soils of Vouvray and the Cher Valley. The estate's 37 hectares are divided into about fifty parcels, including 22 hectares in Montlouis, 10 in Vouvray and 7 under the Touraine appellation. Chenin blanc, the region's king grape variety, dominates on 32 hectares, complemented by varieties such as sauvignon, pinot noir, grolleau, cabernet franc, côt and pineau d'Aunis.
The soils, composed of flint clays and clay-limestone, rest on a subsoil of tuffeau, a white chalk typical of Touraine. This unique geology gives the wines elegant minerality and aromatic complexity. In Montlouis, the parcels, mainly located in Husseau, benefit from a temperate microclimate, influenced by the Loire and the Cher. In Vouvray, the ideally oriented vines root deeply into the tuffeau, capturing freshness and finesse. In the Cher Valley, the clay-limestone soils and flint clays highlight more diverse grape varieties, producing fruity and airy wines.
Managed biodynamically, the vineyard promotes biodiversity through practices such as natural grassing, planting legumes and melliferous plants, and eco-grazing with Sologne sheep. These methods, combined with regenerative no-till agriculture, strengthen soil health and carbon sequestration, allowing the vines to fully express their terroir.
Vinification at Domaine François Chidaine is an art that aims to reveal the essence of terroirs with minimal intervention. The harvests, exclusively manual, are carried out in successive selections to choose only the highest quality grapes. The clusters are transported in crates to preserve their integrity until pressing, performed slowly in a Willmes-type pneumatic press, ensuring gentle and precise extraction.
Alcoholic fermentation relies on indigenous yeasts, in 600 to 620-liter demi-muids, and can last up to six months. Malolactic fermentation is not sought, thus preserving the freshness and tension of the wines. Aging, carried out on full lees in demi-muids, lasts 6 to 8 months, giving the cuvées a silky texture and increased complexity. For sparkling wines, such as Brut Nature, bottle fermentation in cellar and aging on laths for at least 12 months guarantee finesse and elegance.
The rigorous hygiene of the winery and the use of gravity for juice transfers demonstrate the estate's exacting standards. Each parcel is vinified separately, capturing the specific nuances of each terroir. This expertise, combined with a biodynamic philosophy, produces wines of incomparable purity and precision, a true reflection of Loire Valley chenin blanc.
