History of Domaine Hudelot-Baillet

The history of Domaine Hudelot-Baillet begins in 1981, when Joël Hudelot, together with his wife Mme Baillet, takes over this Chambolle vineyard. From the early years, the estate's philosophy is clearly affirmed: to showcase the exceptional terroir of Chambolle-Musigny through typical, precise wines that respect their appellation.

In January 2004, Dominique Le Guen, son-in-law of the founders, joined the estate and gradually took over. He brought new momentum while preserving the soul and founding values of the domain. Under his attentive leadership, the agro-environmental approach became more structured, leading to the High Environmental Value (HVE) label, a guarantee of sincere commitment to biodiversity and sustainability. For over forty years, Domaine Hudelot-Baillet has been patiently writing its history in the vineyards, vintage after vintage, making quality and authenticity its only guiding principles.

Terroirs and Vineyards of Domaine Hudelot-Baillet

The vineyard of Domaine Hudelot-Baillet extends over 8.5 hectares, including 7.5 hectares planted in Pinot Noir and 1 hectare in Chardonnay. The parcels are distributed across several communes of the Hautes Côtes de Nuits, with a remarkable concentration on the territory of Chambolle-Musigny, one of the most renowned and coveted appellations of the Côte de Nuits.

Chambolle-Musigny owes its worldwide reputation to soil of rare singularity: light, calcareous and stony, it derives its origin partly from the combe Chambœuf. This particular geology gives the wines a structural lightness and aromatic delicacy that belong only to this terroir. People often speak here of wines made of "silk and lace", an expression that perfectly summarizes the graceful, feminine and refined character of Chambolle-Musigny wines. The village is located midway between Gevrey-Chambertin and Nuits-Saint-Georges, near the famous Clos Vougeot, in an exceptional wine-growing environment.

To maintain the microbiological richness of the soils, the estate practices methodical plowing that avoids any use of chemical herbicides. In order to protect the vines from insect pests without pesticides, Dominique Le Guen uses the sexual confusion technique, which consists of diffusing pheromones in the vine rows. Yields are deliberately controlled, and each vine receives attentive monitoring throughout the vegetative cycle, thus guaranteeing optimal grape maturity at harvest.

Vinifications of Domaine Hudelot-Baillet

The vinification philosophy at Domaine Hudelot-Baillet rests on a fundamental principle: to intervene as little as possible to let the terroir express itself freely. Each bunch is harvested by hand, and meticulous sorting is carried out both in the vineyard and in the cellar to keep only the healthiest and ripest berries.

The grapes are then completely destemmed before entering the vat. Cold pre-fermentation maceration is carried out to promote the extraction of aromas without brutalizing the matter. Fermentation takes place naturally, with gentle pumping over and rack-and-returns that allow measured extraction of tannins and anthocyanins. This non-interventionist approach preserves the purity of the fruit and aromatic freshness, two essential characteristics of Chambolle-Musigny wines.

Aging in oak barrels lasts between 12 and 18 months depending on the cuvées. The proportion of new wood is adapted to each appellation level: one-third of new barrels for Village wines, and approximately 50% for Premiers and Grands Crus. This reasoned choice allows the oak to bring complexity and structure without ever masking the fruity and floral expression characteristic of Chambolle Pinot Noir.

Cuvées of Domaine Hudelot-Baillet

Chambolle-Musigny Village: Made from Pinot Noir grown on the clay-limestone terroirs of the appellation, it offers a beautiful expression of fresh red fruits, enhanced by floral notes characteristic of Chambolle-Musigny. On the palate, the wine is supple, silky, with fine tannins and beautiful freshness on the finish. Aged one-third in new barrels, this cuvée seduces with its balance and accessibility. It pairs wonderfully with roasted poultry, aged cheeses or meats in sauce.

Chambolle-Musigny Vieilles Vignes: Among the estate's flagship cuvées, the Chambolle-Musigny Vieilles Vignes benefits from the richness and depth that only old vines can offer. The old vines draw from the deepest horizons of the limestone soil to extract an incomparable aromatic quintessence. The nose, intense and complex, reveals aromas of black cherry, plum and violet, enhanced by fine minerality. The palate is elegant, ample, with very fine tannins and a long fruity and spicy finish. This wine has good aging potential of five to twelve years.

Chambolle-Musigny 1er Cru Les Charmes: From a 0.63-hectare parcel with vines aged 25 to 70 years, the Premier Cru Les Charmes is, as its name suggests, a wine of charm and seduction. It is the most delicious and accessible in youth among the estate's Premiers Crus. It expresses beautiful aromatic generosity dominated by ripe red fruit, peony and nuances of black fruits. Its sap and richness make it a beguiling wine, perfect for tasting from its early years. Aged half in new barrels, half in one-year-old barrels, this Premier Cru reveals all the sweetness and sensuality of the finest terroirs of Chambolle-Musigny.

Chambolle-Musigny 1er Cru Les Cras: The Premier Cru Les Cras embodies a more mineral and structured expression of the Chambolle terroir. From a 0.37-hectare parcel planted with twenty-year-old vines, this wine stands out for its straightness and tension. The nose offers precise red fruit notes, underlined by beautiful mineral freshness evoking chalk and wet stone. On the palate, the matter is dense, the tannic structure tight but silky, with a long, saline finish. The Premier Cru Les Cras requires a few years in the cellar to fully blossom and reveal all its complexity.

Chambolle-Musigny 1er Cru Les Borniques: Adjacent to the famous climats Les Amoureuses and Musigny, the Premier Cru Les Borniques enjoys an exceptional geographical position on the Chambolle hillside. It was only from the 2017 vintage that Dominique Le Guen was able to vinify and bottle it separately, as the quantity produced was previously too small to justify a distinct cuvée. Aged equally in new barrels and one-year-old barrels, this Premier Cru expresses all the nobility of its origin: a complex bouquet blending black fruits, sweet spices and floral nuances, a taut, structured palate of great elegance. A confidential and highly sought-after cuvée by lovers of great Burgundies.

Bonnes-Mares Grand Cru: The absolute treasure of Domaine Hudelot-Baillet, the Bonnes-Mares Grand Cru represents the pinnacle of the Burgundian hierarchy. This Grand Cru, shared between the communes of Chambolle-Musigny and Morey-Saint-Denis, is recognized for its wines of rare power and complexity, while retaining the aristocratic finesse characteristic of the great terroirs of the Côte de Nuits. The estate's cuvée is carefully aged in oak barrels, with a significant proportion of new wood to support the richness of the matter. Aromas of candied black fruits, licorice, undergrowth and oriental spices compose a sumptuous nose. The palate is velvety, of remarkable depth, with melted tannins and exceptional aromatic persistence. An age-worthy wine, made to last decades.
