The vineyard of Château des Tours extends over approximately 40 hectares in the southern Vaucluse, at the gateway to the Vacqueyras appellation. The Parisy vines draw their essence from the characteristic soils of the Rhône Valley, benefiting from an ideal Mediterranean climate for vine cultivation. This generous terroir, bathed in sunshine and swept by the mistral, endows the grapes with optimal ripeness while preserving a natural freshness that is indispensable to the production of great rosé wines.

The privileged geographical location of the estate, at the heart of one of the finest terroirs of the Rhône Valley, allows the Parisy to express a unique typicity. The grape varieties benefit from exceptional growing conditions, which are essential to the production of outstanding wines destined for the most discerning enthusiasts.

The Parisy is built on a subtle blend dominated by grenache, the king grape variety of the Rhône Valley, complemented by cinsault. This classic combination of southern rosés finds here a rare and elegant expression. The grenache contributes roundness, generosity and aromatic intensity with its characteristic notes of ripe red fruits. The cinsault, a grape variety renowned for its finesse and delicacy, lends the wine its freshness, its subtle floral aromas and that lightness so characteristic of the great gastronomic rosés.

This blend allows the Parisy to develop a complex aromatic palette in which crushed red fruits, delicate floral notes and refined spiced touches mingle harmoniously. The grape varieties, cultivated in keeping with Rhodanian viticultural traditions and an ecological approach to viticulture, fully express the richness of the Vaucluse terroir.

The winemaking of the Parisy is squarely in line with the philosophy of Emmanuel Reynaud, a winemaker renowned for his minimalist approach and his absolute respect for the fruit. Crafted using traditional methods inspired by the techniques that have made Rayas famous, this rosé benefits from meticulous attention at every stage of its creation.

The Parisy is vinified with indigenous yeasts in underground concrete tanks, allowing a temperature-controlled fermentation that preserves the freshness and aromatic intensity of the wine. True to his convictions, Emmanuel Reynaud favours minimal intervention, allowing the terroir and the grape varieties to express themselves freely. The Parisy is bottled without fining or filtration, a technique characteristic of all Reynaud productions, which allows the wine to retain its full authenticity and depth.

This artisanal approach to winemaking, inherited from the greatest estates of Burgundy and adapted to the specificities of the southern Rhône, lends the Parisy a unique personality within the world of rosé wines.
