This emblematic cuvée, crafted at Château des Tours in the Vaucluse, perfectly embodies the winemaker's philosophy: pure, refined and authentic wines that sublimate the Rhodanian terroir. Classified as Vin de France, the Parisy benefits from a blending freedom that allows Emmanuel Reynaud to fully express his expertise. This gastronomic rosé, the fruit of meticulous winemaking, reveals the full singularity of the Reynaud approach: respect for the fruit, gentle vinification and an unceasing quest for balance.
The vineyard of Château des Tours extends over approximately 40 hectares in southern Vaucluse, at the gateway to the Vacqueyras appellation. The vines of the Parisy draw their essence from the characteristic soils of the Rhône Valley, benefiting from an ideal Mediterranean climate for vine cultivation. This generous terroir, bathed in sunshine and swept by the mistral, grants the grapes optimal ripeness while preserving a natural freshness essential to the production of great rosé wines.
The privileged geographical location of the estate, at the heart of one of the finest terroirs in the Rhône Valley, allows the Parisy to express a unique typicity. The grape varieties benefit from exceptional growing conditions, essential to the production of outstanding wines destined for the most discerning enthusiasts.
The Parisy is built on a subtle blend dominated by grenache, the king grape variety of the Rhône Valley, complemented by cinsault. This classic combination found in southern rosés achieves a rare and elegant expression here. The grenache brings roundness, generosity and aromatic intensity with its characteristic notes of ripe red fruits. The cinsault, a grape variety renowned for its finesse and delicacy, lends the wine its freshness, its subtle floral aromas and that lightness so characteristic of great gastronomic rosés.
This blend allows the Parisy to develop a complex aromatic palette where crushed red fruits, delicate floral notes and refined spiced touches harmoniously intertwine. The grape varieties, cultivated in keeping with Rhodanian viticultural traditions and ecological viticulture, fully express the richness of the Vaucluse terroir.
The winemaking of the Parisy follows directly in the tradition of Emmanuel Reynaud's philosophy, a winemaker renowned for his minimalist approach and his absolute respect for the fruit. Crafted according to traditional methods inspired by the techniques that made Rayas famous, this rosé benefits from meticulous attention at every stage of its creation.
The winemaking is carried out using indigenous yeasts in underground concrete vats, allowing for a temperature-controlled fermentation that preserves the freshness and aromatic intensity of the wine. True to his convictions, Emmanuel Reynaud favours minimal intervention, allowing the terroir and the grape varieties to express themselves freely. The Parisy is bottled without fining or filtration, a technique characteristic of all Reynaud productions, which allows the wine to retain its full authenticity and depth.
