The Substance cuvée is undoubtedly the most emblematic of the estate. Produced exclusively from Chardonnay sourced from two small plots in the Grand Cru of Avize, it is made according to a solera system: each year, a portion of the wines is drawn off and replaced by the following vintage, creating a blend that concentrates all vintages since 1986 within a single cuvée. This process, unique in Champagne, which smooths out annual variations in favour of a pure expression of the terroir, has built the estate's worldwide reputation since the 1980s.
