From the very beginning, Cédric Bouchard adopted a radical philosophy: single-vineyard, single-varietal (pinot noir, chardonnay or pinot blanc), single-vintage champagnes with no dosage. He uses no oak, does not filter his wines, does not fine them, does not practice chaptalization, and adds no dosage. Only indigenous yeasts are used, and a second fermentation that is long, slow, and carried out at low temperature produces finer bubbles, enhancing the vinosity and precision of the wines. The result is champagnes of rare purity and terroir identity, light-years away from classic blends.
