History of Domaine Les Vignes du Paradis

The adventure of Les Vignes du Paradis begins in 2008, when Dominique Lucas, a winemaker of Burgundian origin trained in Pommard, decides to settle on the shores of Lake Geneva, in Ballaison, in Haute-Savoie. Captivated by the purity of the landscape and the unexploited potential of the Léman terroir, he founded his estate on a radical philosophy: to place quality above all else, even if it meant challenging conventions. From his very first years, he made the courageous decision to leave the AOP Crépy appellation, deemed too restrictive to fully express his vision of wine, and he now claims the IGP Vin des Allobroges designation.

For several years, Dominique Lucas split his time between Savoie and Burgundy, where he also operated a family estate in Pommard, on the Côte de Beaune. The vagaries of the climate led him to refocus his activity on the Chablais savoyard, to which he now devotes all his energy. His meticulous work, his refusal of any compromise and his relentless quest for authenticity quickly attracted the attention of the most prestigious wine guides, including the RVF and Bettane + Desseauve, which cite him among the unmissable talents of the region. Today, the estate has acquired a new cellar, a wine bar overlooking the vines, and an international reputation that extends well beyond the borders of Savoie.

Terroirs and Vines of Domaine Les Vignes du Paradis

The vineyard of Les Vignes du Paradis extends over nearly 7.5 hectares at the heart of the Bas-Chablais, on the hillsides overlooking Lake Geneva, around the historic appellations of Crépy, Marignan and Marin. The soils, of great geological diversity, combine limestone, yellow marls, granite, glacial moraines, clay and flint, lending the wines a striking minerality and a freshness typical of high-altitude terroirs. The semi-continental climate, tempered by the mass of water from the lake, provides ideal thermal ranges for slow and well-preserved ripening of the grapes.

The grape varieties reflect the pioneering spirit of Dominique Lucas. Alongside the historic Chasselas, the emblematic grape of the Léman, come Chardonnay, Savagnin, Chenin, Sauvignon, Pinot Gris, Altesse and Gamay — more than eight varieties cultivated across 27 distinct parcels. Viticulture is conducted in certified biodynamics, with horse-drawn ploughing on the old vines, treatments based on herbal infusions of medicinal plants harvested in the mountains, ground cover and sheep grazing after the harvest. Yields are deliberately low to guarantee optimal concentration and precision.

Vinifications of Domaine Les Vignes du Paradis

Vinification at Les Vignes du Paradis follows the planetary calendar and adheres to a golden rule: minimal intervention. The harvests are entirely manual, spread over nearly two and a half months, with up to five successive passes through each parcel to collect only perfectly ripe grapes. Rigorous sorting in the vineyard and in the cellar guarantees impeccable raw material. Pressing is gentle, natural fermentations take place at low temperature, and chaptalization is strictly banned.

The aging process stands out for its originality and diversity, with the combined use of oak barrels, concrete eggs, ovoid tanks, terracotta amphoras and even pyramidal tanks handcrafted by the winemaker, incorporating spring water from Thonon-les-Bains, local gravel and sand from Chamonix in order to magnify the terroir. Sulphur is added only in infinitesimal doses, and certain cuvées are even produced entirely without sulphites. This artisanal approach, both demanding and creative, gives birth to pure, vibrant wines of great digestibility, which express each parcel with remarkable fidelity.

The cuvées of Domaine Les Vignes du Paradis

Un P'tit Coin de Paradis is the flagship cuvée of the estate, crafted from Chasselas sourced from the lower portions of parcels on clay-limestone soils. Vinified biodynamically with minimal sulphuring, this accessible and indulgent white exudes an airy and floral bouquet, with a balanced palate blending richness and acidity. It is the perfect wine to discover the house style, and should be decanted before tasting to reveal its full depth.

Un Matin Face au Lac is the other great Chasselas cuvée of the estate, sourced from more exposed and deeper parcels. Denser and more mineral, it offers a taut and saline palate with remarkable length. Aged partly in oak and in concrete eggs, it reveals the full nobility of this often underestimated grape variety.

Quintessence is a lighter and more joyful Chasselas cuvée, fermented in tank and partially aged in 600-litre demi-muids. With only 11% alcohol, it seduces with its refreshing character, its lemony nose and its crystalline purity. A cuvée for immediate pleasure.

Comme une Évidence is an emblematic cuvée of the estate, a fully realized expression of Chasselas in biodynamic farming. Aged with patience, it develops a complex nose between white fruits, flowers and mineral notes, with an ample, round and persistent palate.

C de Marin is a single-parcel cuvée sourced from the Marin cru, in AOC Vin de Savoie. Crafted from Chasselas planted on gravelly and permeable soils, it offers a finer, more chiselled profile, marked by a lively minerality and the saline notes characteristic of this Léman terroir.

Diamant is the absolute jewel of the estate, an exceptional cuvée reserved for the greatest enthusiasts. Aged with extreme care and produced in confidential quantities, it concentrates all the expertise of Dominique Lucas in an expression of rare depth. A bottle of this cuvée even contains a real diamond, a tribute to the winemaker's quest for excellence.

IGP Allobroges Chardonnay is a vibrant and spirited cuvée, sourced from young Chardonnay vines hand-harvested and aged in concrete eggs to preserve dynamism and freshness. On the nose, lemon and fresh herbs dominate, followed by a taut, chiselled and mouth-watering palate, with a finish of beautiful length.

IGP Allobroges Savagnin shines a light on this Jura grape variety, here cultivated on the terroirs of the Léman. Vinified at 16 °C after manual harvesting in two passes, aged in amphora and concrete egg, it offers a complex nose of citrus, spices and fresh walnuts, with a taut, oxidative and very distinctive palate.

IGP Allobroges Chenin is a bold cuvée, a rare expression of this Loire grape variety planted in Savoie. Aged with finesse, it develops an aromatic profile ranging from quince and apple to white flowers and mineral notes, with a sharp acidity and magnificent length.

IGP Allobroges Sauvignon reveals a Sauvignon Blanc that is both pure and profound, vinified without artifice. The expressive nose plays on citrus, boxwood and exotic fruits, while the palate, fresh and mineral, marks a wine far removed from the more demonstrative standards of this grape variety.

Pinot Gris is a surprising cuvée, crafted from Pinot Gris vinified as a dry white. Aromatic and textured, this wine offers notes of pear, white flowers and soft spices, with an ample, indulgent and finely structured palate.

Altesse, vinified as IGP Vin des Allobroges, expresses the full nobility of this historic Savoyard grape variety. The delicate nose evokes honey, almond and fresh hazelnut, while the palate, ample and fresh, captivates with its balance and beautiful length.

Gamay is the emblematic red cuvée of the estate, sourced from a parcel acquired by Dominique Lucas to explore this grape variety in biodynamic farming. Hand-harvested and vinified with delicacy, this fruity and crunchy red offers a gulpable profile, built around red fruits, with a slight spicy touch and a fresh finish.
