History of Domaine Edmond Cornu et Fils

The history of Domaine Edmond Cornu et Fils begins in 1870, when the Cornu family settled in Ladoix-Serrigny, at the foot of the Corton hill. From 1875, they began cultivating their own vines. But it was truly in 1959, three years after taking over the family estate, that Edmond Cornu made the decisive choice that would build the property's reputation: abandoning sales to négociants in favour of estate bottling the entire harvest. A visionary, he then seized every opportunity to expand the vineyard, growing from 8.5 hectares in 1984 to over 16 hectares today, across 18 different appellations.

The estate is today managed by Pierre Cornu, his wife Edith and his cousin Emmanuel Boireau, with the counsel of Edmond, now retired but always present with his invaluable advice. In 2020, Lucie, the daughter of Edith and Pierre, having completed her oenology studies at the Lycée Viticole de Beaune and the Institut de la Vigne et du Vin in Bordeaux, along with enriching experiences in France (Champagne, the Rhône Valley, Provence) and abroad (New Zealand, South Africa, Oregon), joined the estate to prepare for the family succession. This patient transmission, founded on a love of the terroir and a constant pursuit of quality, places Edmond Cornu et Fils today among the most reliable names of the Côte de Beaune.

Terroirs and Vines of Domaine Edmond Cornu et Fils

The vineyard of Domaine Edmond Cornu extends over approximately 16.5 hectares, spread across the communes of Ladoix, Chorey-lès-Beaune, Savigny-lès-Beaune, Aloxe-Corton, Corgoloin and Meursault. Production is predominantly red, with 14 hectares of Pinot Noir, 1.5 hectares of Chardonnay (in Meursault, Chorey-lès-Beaune and Ladoix) and 0.75 hectares of Aligoté in Ladoix. The heart of the estate lies in Ladoix, at the geological boundary between the Côte de Beaune and the Côte de Nuits, on clay-limestone soils resting on dark brown marls, conducive to the expression of Pinots that are both fleshy and finely structured.

The estate began its environmental approach early, obtaining Raisonnée Agriculture certification in 2007, followed by an Environmental Certification in 2011 and HVE level 3 in 2019. Pierre Cornu and his team practise integrated viticulture based on balanced cover crop management, respect for the soil, flora and fauna. All harvests are done by hand, transported in small bins to the winery. This constant pursuit of quality, combined with weekly blind tastings with other winemakers to challenge themselves, explains the consistency and finesse of all the Cornu cuvées.

Winemaking at Domaine Edmond Cornu et Fils

In the cellar, Domaine Edmond Cornu follows traditional Burgundian winemaking methods, mastered through modern technical tools designed to preserve the typicity of each climat. The hand-harvested grapes are sorted at the winery, then partially destemmed according to the cuvée and the vintage. Fermentation lasts approximately 18 days in vats, with a gentle approach, avoiding excessive extraction, so as to favour finesse and elegance over power or tannic harshness. Pressing is done statically using a pneumatic press, allowing the juice to flow freely without any mechanical effect.

After pressing, the wines complete their fermentation in vats before being moved to oak barrels, where they are aged for 12 to 18 months depending on the vintage and the cuvée. The proportion of new oak is measured, so as never to mask the purity of the fruit and the signature of the terroir. The estate deliberately avoids all actions and practices that could impart harshness or overly firm tannins to the wines, such as oenological interventions during winemaking. The result: fine, elegant wines, accessible in their youth yet endowed for the most part with an excellent ageing potential.

The Cuvées of Domaine Edmond Cornu et Fils

Bourgogne Aligoté: from 50 ares of vines in Ladoix, this taut and vibrant white expresses notes of citrus, white flowers and a mineral backbone typical of Burgundy's emblematic grape variety.

Bourgogne Blanc (Chardonnay): A fresh and precise Chardonnay from plots in Chorey-lès-Beaune and Ladoix, marked by aromas of white fruits and citrus on an elegant palate.

Bourgogne (red): An entry-level Pinot Noir, vinified with the same rigour as the higher crus, generous and fruity, an accessible expression of the house style.

Meursault: A Meursault Chardonnay produced in very small quantities. A rich, ample wine, marked by notes of toasted hazelnut, yellow fruits and a buttery touch.

Côte de Nuits-Villages: Pinot Noir from Corgoloin, at the far south of the Côte de Nuits. A structured wine, marked by black fruits, spices and a mineral backbone typical of the Côte de Nuits.

Chorey-lès-Beaune Les Bons Ores: An accessible and charming red Village wine, with a light ruby colour, a frank and delicate expression of Burgundian Pinot Noir, perfect for discovering the Cornu style.

Savigny-lès-Beaune: A fruity and fresh red Village wine, characterised by cherry, raspberry and an elegant mineral backbone, on a supple and harmonious palate.

Ladoix: A red Village wine from a blend of plots at the foot of the slope in the centre and north of the appellation (notably Les Carrières and Les Champs Pussuet). A lively, generous and delicately tannic wine, a typical expression of this appellation on the border of the Côte de Nuits.

Ladoix Vieilles Vignes: from vines planted between 1926 and 1960 on clay-limestone soils and dark brown marls. Deep red colour, nose of wild fruits (blackberries, wild cherries), rich, round, ample palate with great finesse, harmonious and silky structure, capable of ageing for several years.

Ladoix Les Carrières: a Village lieu-dit with a pronounced character, a classic Ladoix wine, considered by Pierre Cornu to be an ideal companion to bœuf bourguignon.

Ladoix 1er Cru Bois Roussot: Premier Cru from a mid-slope plot, in the continuation and above the 1er Cru Les Moutottes d'Aloxe. Poor, chalky, white soils, yielding a taut Pinot with remarkable fresh fruitiness. Ruby colour, nose of morello cherry and orange zest, linear, elegant and long palate, lively finish.

Ladoix 1er Cru La Corvée: A highly regarded Premier Cru from Ladoix, with generous substance, dense flesh and velvety tannins. Black fruit, soft spices, a balancing touch of freshness, very fine persistence. The estate's star cuvée, to be savoured with a hare civet.

Aloxe-Corton: A red Village wine with firm substance, marked by black fruits and assertive power, with that slightly austere quality characteristic of great Aloxe-Corton, built for ageing.

Aloxe-Corton Vieille Vigne: a cuvée from old vines, marked by a ripe and precise fruit (candied cherry, wild strawberry) and a fleshy palate, a true delight with an elegant finish, promising a fine future in the cellar.

Aloxe-Corton 1er Cru: A multi-plot blended Premier Cru, combining power and elegance, with a sustained tannic structure and deep fruit.

Aloxe-Corton 1er Cru Les Moutottes: Thoroughbred Premier Cru, situated on the edge of Grand Cru. Dense and pulpy Pinot, notes of black fruits, toasted bread, peony, a palate built for ageing with great aromatic freshness. The estate's flagship cuvée.

Aloxe-Corton 1er Cru Les Valozières: Premier Cru situated mid-slope on a gentle incline, a direct neighbour of Les Moutottes. Warm notes of red fruits, fresh attack, round and powerful palate, tight tannins, lively finish. A wine for ageing, to be set aside in the cellar.

Corton Grand Cru Les Bressandes: the estate's only Grand Cru, covering 57 ares at the heart of the famous Corton hillside. A superb and highly expressive wine (vanilla, mocha, liquorice, blackcurrant, blackberry), ample, dense, powerful yet without harshness, with velvety tannins and a refined oakiness. A Fine Wine for very long ageing, the ultimate jewel of the Cornu house.
