To fully enjoy a bottle of Château Mouton Rothschild, a few precautions are in order. This fine wine from Pauillac is best served between 17 and 18°C, in a large Bordeaux glass that allows the aromas to fully develop. Decanting is strongly recommended: allow a minimum of 2 to 3 hours for a young vintage, or even longer for vintages such as 1996 or 2000, which still display a beautiful tannic structure. If you are opening an older vintage, such as 1970 or 1975, handle the bottle with care so as not to disturb the sediment, and decant gently. This wine pairs beautifully with marbled red meats, game birds, and aged cheeses.
