The Jura stands out for its rare grape varieties, found almost nowhere else in France. For white wines, Savagnin reigns supreme: it is the grape behind the famous Vin Jaune. Chardonnay, locally known as "Melon d'Arbois", produces whites of beautiful mineral freshness. On the red side, Poulsard (or Ploussard) offers lightly coloured wines with silky tannins, while Trousseau brings structure and fruity character. Pinot Noir completes this palette, with expressions that are often more supple than those of neighbouring Burgundy.

The Jura is today one of the most dynamic French wine regions when it comes to reasoned and natural viticulture. Many estates have opted for conversion to organic or biodynamic farming, won over by the philosophy of a terroir that must absolutely be preserved. Pioneer winemakers such as Overnoy, Ganevat and Tissot have greatly contributed to making the Jura an international reference for natural wine enthusiasts. This trend is also explained by the family structure of the estates, often small in size, which facilitates meticulous work in the vineyard. Jurassian natural wines are generally recognisable by their slightly hazy texture, their vivacity and their extraordinary aromatic expressiveness.

This distinction is fundamental to understanding the stylistic diversity of white wines from the Jura. A topped-up wine (ouillé) is regularly replenished in the barrel to avoid any contact with air: it thus develops fruity and fresh aromas, similar to a Burgundian Chardonnay. Conversely, a wine aged under a veil (sous voile), or non-topped-up, deliberately leaves a space between the wine and the barrel bung. This void encourages the formation of a veil of Saccharomyces cerevisiae yeasts, which gives the wine its characteristic oxidative aromas: fresh walnut, almond, spices. It is this ancestral technique, unique to the Jura, that is at the origin of Vin Jaune and that makes this vineyard world-renowned for its originality.

Vin Jaune is without doubt the most singular wine in France. Produced exclusively from the Savagnin grape variety in the Château-Chalon appellation or under the AOC Côtes du Jura, it ages for a minimum of six years and three months in unsealed oak barrels. During this extended ageing period, a veil of yeast forms on the surface of the wine, protecting it from oxidation while imparting unique aromas of walnut, curry, and dried fruits. It is bottled in a distinctive flask called the clavelin of 62 cl, which represents what remains of 1 litre of wine after evaporation due to the long ageing process.

The Jura vineyard encompasses several official appellations with very distinct profiles. The AOC Arbois, the oldest French appellation recognised in 1936, produces reds, whites and rosés around the region's wine capital. The AOC Château-Chalon is reserved exclusively for Vin Jaune and enjoys a reputation for excellence. The AOC Côtes du Jura covers the entire vineyard with a great diversity of styles. The AOC L'Étoile focuses on whites and straw wines. Finally, the Crémant du Jura offers fine bubbles crafted using the traditional method, often based on Chardonnay and Pinot Noir.

Jura wines pair with an almost natural affinity to the local products of the Franche-Comté terroir. Vin Jaune stands out as the ideal companion for chicken with morels and cream, as well as blue-veined cheeses such as Bleu de Gex. Aged Comté, the region's emblematic cheese, pairs wonderfully with an ouillé Savagnin or a Chardonnay aged under a veil. Vin de Paille, with its candied and honeyed notes, elevates desserts featuring yellow fruits, foie gras, or a platter of mild cheeses. Reds based on Poulsard, meanwhile, delicately complement Jura charcuterie and white meats.
