A legendary figure in Burgundy viticulture, Henri Jayer greatly influenced numerous winemakers, particularly regarding the importance of work in the vineyards, such as Emmanuel Rouget, his nephew. He opposed the intensive use of chemical substances in the vineyards and advocated for plowing to combat weeds. He was firmly committed to developing vinification techniques, convinced that low yields were the foundation for obtaining high-quality wines. Henri Jayer was also famous for his refusal to filter his wines and his constant use of destemming. He became known from 1978 onwards by producing an exceptional wine from the vines of Cros Parantoux, a premier cru of Vosne-Romanée reputed to be very difficult to cultivate. Now deceased, his wines are highly sought after, particularly because he marketed fewer than 3,500 bottles per year. He is also known for his grand crus Echézeaux and Clos de Vougeot, as well as his premiers crus from Vosne-Romanée Les Brûlées and Nuits-Saint-Georges Les Murgers.
