Both a Myth and a Legend of Burgundy
A legendary figure of Burgundian viticulture, Henri Jayer greatly influenced many winemakers, particularly regarding the importance of work in the vineyards, including Emmanuel Rouget, his nephew. He opposed the intensive use of chemical substances in the vineyards and championed ploughing as a means of weed control. He was firmly committed to the development of winemaking techniques, convinced that low yields were the foundation for producing wines of outstanding quality. Henri Jayer was also renowned for his refusal to filter his wines and his consistent use of destemming. He came to prominence from 1978 by producing an exceptional wine from the vines of Cros Parantoux, a premier cru of Vosne Romanée reputed to be extremely difficult to cultivate. Now deceased, his wines are sought after at premium prices, not least because he produced fewer than 3,500 bottles per year. He is also known for his grand crus Echézeaux and Clos de Vougeot, as well as his premiers crus from Vosne Romanée Les Brûlées and Nuits Saint Georges Les Murgers.
