History of Domaine Guillaume Gilles

Raised in Lyon, the City of Lights, Guillaume Gilles could have embraced city life, but the irresistible pull of the land drew him back to his Ardèche roots. In 2002, while still in his early twenties, he took over the 0.5 hectares of family vines inherited from his grandfather in the Les Peyrouses terroir of Cornas, continuing a line of passionate winegrowers. He trained with leading figures of the northern Rhône, first under Robert Michel, a Cornas pioneer and creator of the legendary La Geynale cuvée, then with Jean-Louis Chave, a benchmark producer in Hermitage, honing his skills between 2002 and 2006. When his mentor retired, Gilles inherited the prized Chaillot plot and established himself permanently in 2007, turning that legacy into an independent 5-hectare estate. Today, this humble, forward-looking winemaker, considered a rising star, carries on Rhône traditions while subtly innovating, producing wines that captivate discerning palates worldwide.

Terroirs and Vineyards of Domaine Guillaume Gilles

Domaine Guillaume Gilles spans 5 hectares of exceptional terroir, mainly in Cornas but also in Saint-Péray and Bozas, at the edge of the Ardèche plateau. In Cornas, the heart of the estate, century-old vines cling to steep, 10–20% slopes facing due south above the majestic Rhône Valley. The granitic soils, sometimes weathered into "gore", can be clayey, sandy or enriched with pale loess and limestone, giving each site a distinctive identity at elevations ranging from 200 to 450 meters. Notable plots such as Chaillot (planted in the 1970s and 1980s using massal selections), Les Rieux (on quartz-bearing granite at over 400 m) and Les Peyrouses (Syrah vines dating from 1870) illustrate this diversity. Guillaume Gilles tends his vines by hand, pruning, removing shoots, tying up vines and harvesting manually, with light cultivation using a small tracked tractor or hoe to preserve biodiversity. Certified organic since 2020, this measured approach to viticulture, avoiding excessive chemical inputs, produces healthy, balanced grapes while limiting yields to around 35 hL/ha for optimal concentration in every wine.

Winemaking at Domaine Guillaume Gilles

At Domaine Guillaume Gilles, winemaking is a minimalist art guided by respect for the fruit and terroir, reflecting the legacy of his mentors. The grapes are picked at perfect ripeness, rigorously sorted and vinified by small plot to honor the nuances of each soil. The Syrah ferments as whole clusters in concrete tanks with native yeasts only, undergoing long macerations of 3 to 4 weeks with gentle punch-downs and pump-overs, without artificial heating or cooling. The Gamay follows a Beaujolais-style semi-carbonic approach. Patient aging for 15 to 18 months in used oak barrels and 400–600-liter demi-muids inherited from Robert Michel refines the texture without overwhelming the natural aromas. Finally, the wines are bottled without fining or filtration, with a tiny dose of SO2 (around 50 mg/L) for exceptional purity. This natural, minimally interventionist approach produces structured, fresh and profound wines ready to age gracefully in the cellar.

The Cuvées of Domaine Guillaume Gilles

Domaine Guillaume Gilles offers a small range of cuvées, each faithfully reflecting its Rhône terroir. 

VDF "Les Peyrouses" White: From a small plot in Les Peyrouses, this rare white is a blend of massal-selection Roussanne, Marsanne and Viognier. A floral, fruity nose (peach, stone fruit, spring flowers) leads to a rich yet lively palate with an elegant mineral bitterness on the finish. Ideal with seafood.

VDF "Combeaux Massardière" Gamay (or "Les Massardières"): From 40-year-old vines on granitic sand at an elevation of 600 m in the Doux Valley near Bozas, this structured Gamay offers spice, crisp red fruit and a hint of flint. Whole-cluster semi-carbonic fermentation brings lively, mineral freshness to this rare Rhône Gamay.

VDF "Les Peyrouses" Red (or Côtes du Rhône "Les Peyrouses"): A treasure from century-old Syrah vines (planted as early as 1870) on sandy-clay soils strewn with pebbles rounded by the Rhône. Made in the same way as the Cornas wines, it has a silky, enveloping texture and aromas of dark fruit and spice. A powerful, approachable "mini-Cornas".

Saint-Péray: A prestigious white blending 67% Marsanne and 33% Roussanne from high-lying plots near Les Rieux. Fermented in steel and then aged for 6 months in wood, it charms with its balance of richness and freshness: honey, almond nougat, ripe apricot and saline minerality. Limited production, for lovers of complex Rhône whites.

Cornas "Nouvelle R" Les Rieux: Syrah from vines planted in 2012 on deep, quartz-bearing granite at an elevation of 400–450 m. Abundant sunshine brings moderate ripeness, yielding a fine, elegant wine with silky tannins and pure aromas of violets, spiced red fruit and lively minerality. A shorter maceration gives it a freshness that contrasts with classic Cornas wines.

Cornas Les Chaillots: The flagship cuvée, a blend of small plots in Chaillot (Terrasses on pure granite, Grands Murs on loess and granite, and Combe on clay and granite; 40–50-year-old vines from massal selections). Whole clusters, 30 days of maceration and aging in demi-muids bring striking depth, a rich texture and notes of dark fruit, licorice and iron, with wild yet harmonious complexity. A fine wine built to age, rivaling the masters of Cornas.
