History of Domaine Guillaume Gilles

Raised in Lyon, the City of Lights, Guillaume Gilles could have embraced an urban life, but the irresistible call of the land drew him back to his Ardèche roots. In 2002, at barely twenty years old, he took over the 0.5 hectares of family vines inherited from his grandfather on the terroir of Les Peyrouses in Cornas, continuing a lineage of passionate winegrowers. Trained by iconic masters of the Northern Rhône — first under Robert Michel, a pioneer of Cornas and creator of the legendary cuvée La Geynale, then at Jean-Louis Chave, the absolute reference for Hermitage — Guillaume Gilles honed his expertise between 2002 and 2006. Upon his mentor's retirement, he inherited the precious Chaillot plot and settled permanently in 2007, transforming this legacy into an independent 5-hectare estate. Today, this humble and visionary winegrower, regarded as a rising star, perpetuates Rhône traditions while subtly innovating, producing wines that captivate discerning palates around the world.

Terroirs and Vines of Domaine Guillaume Gilles

Domaine Guillaume Gilles extends over 5 hectares of exceptional terroir, principally in Cornas but also in Saint-Péray and Bozas, at the edge of the Ardèche plateau. In Cornas, the beating heart of the estate, century-old vines defy steep slopes of 10 to 20%, fully south-facing and overlooking the majestic Rhône valley. The granitic soils, sometimes decomposed into "gore", clayey, sandy or enriched with blond loess and limestone, confer a unique identity, with altitudes ranging from 200 to 450 metres. Emblematic plots such as Chaillot (planted in the 1970s–80s with massal selections), Les Rieux (on quartz granite above 400 m) or Les Peyrouses (syrah vines dating from 1870) illustrate this diversity. Guillaume Gilles tends his vines by hand: pruning, shoot-thinning, trellising and harvesting manually, with light ploughing by tracked vehicle or hand hoe to preserve biodiversity. Certified organic since 2020, without excessive chemical inputs, this reasoned viticulture ensures healthy and balanced grapes, limiting yields to around 35 hl/ha for optimal concentration in every wine.

Winemaking at Domaine Guillaume Gilles

At Domaine Guillaume Gilles, winemaking is a minimalist art, guided by respect for the fruit and the terroir, reflecting the legacy of his mentors. The grapes, harvested at perfect ripeness and meticulously sorted, are vinified in micro-plots to honour the nuances of each soil. The syrhas ferment as whole clusters in concrete tanks, with indigenous yeasts only, through long macerations of 3 to 4 weeks, punctuated by gentle pigeage and pump-overs, without artificial heating or cooling. The gamays follow a Beaujolais semi-carbonic approach. The ageing, patiently carried out over 15 to 18 months in used oak barrels and 400–600 litre demi-muids inherited from Robert Michel, refines the texture without overpowering the natural aromas. Finally, the wines are bottled without fining or filtration, with a micro-dose of SO2 (around 50 mg/l) for absolute purity. This natural winemaking, interventionist to the absolute minimum, produces structured, fresh and deep wines, ready to evolve gracefully in the cellar.

The Cuvées of Domaine Guillaume Gilles

Domaine Guillaume Gilles offers a confidential range of cuvées, each a faithful reflection of its Rhône terroir. 

VDF "Les Peyrouses" Blanc: From a small plot at Les Peyrouses, this rare white blends roussanne, marsanne and viognier from massal selection. Floral and fruity nose (peach, stone fruits, spring flowers), lush and lively palate, finishing with elegant mineral bitterness. Ideal to pair with seafood.

VDF "Combeaux Massardière" Gamay (or "Les Massardières"): From 40-year-old vines on granitic sand at 600 m altitude in the Doux valley near Bozas, this structured gamay offers spiced notes, crunchy red fruits and a hint of flint. Semi-carbonic fermentation in whole clusters for a lively, mineral freshness — as rare as a Rhône gamay.

VDF "Les Peyrouses" Rouge (or Côtes du Rhône "Les Peyrouses"): A treasure from century-old syrah vines (planted as early as 1870) on sandy-clay soils scattered with river-rolled pebbles from the Rhône. Vinification identical to the Cornas: silky, enveloping texture, with aromas of black fruits and spices. A powerful and accessible "mini-Cornas".

Saint-Péray: A prestigious white blending 67% marsanne and 33% roussanne, from high-altitude plots near Les Rieux. Fermented in steel then aged 6 months in wood, it captivates with its lush-yet-fresh balance: honey, almond nougat, ripe apricot and saline minerality. Limited production, for lovers of complex Rhône whites.

Cornas "Nouvelle R" Les Rieux: Syrah from vines planted in 2012 on deep quartz granite at 400–450 m altitude. Generous sunshine for moderate ripeness, a fine and elegant wine with silky tannins, marked by aromatic purity: violets, spiced red fruits and lively minerality. Shorter maceration for a freshness that contrasts with the classic Cornas.

Cornas Les Chaillots: The flagship cuvée, a micro-plot assemblage of Chaillot (Terrasses on pure granite, Grands Murs on loess-granite, Combe on clay-granite; 40–50-year-old vines from massal selections). Whole clusters, 30-day cuvaison, ageing in demi-muids: striking depth, lush texture, notes of black fruits, liquorice and iron, with a wild and harmonious complexity.
